Hniezdne
Hniezdne was established in the 12thcentury as a Polish settlement in thenorthern Spiš region near the Poprad Riverand under the peaks of the High Tatras. Thefirst written record of the town dates backto 1286. Hniezdne's location on animportant road and river trade routecontributed to the wealth of its population.As a result, this small settlement developedinto a town of such importance and historythat it ranks among the likes of the nearbyroyal free town of Stará Ľubovňa.
One of the important milestones in thetown’s history occurred in 1412 whenHungarian King Sigismund of Luxemburgelevated it into a royal free town. In thesame year, Hniezdne along with 15 othertowns in the Spiš region were pledged tothe Polish king. The residents of Hniezdnedid not manage to maintain town statusafter 1412. Only under the rule of PolishKing Sigismund II Augustus did it finallyregain this status. The most importantdocuments during his rule to the benefit ofHniezdne dates to 1566. This namedHniezdne once again a full royal free town.The Spiš pledge endured a full 360 yearsand, as a result, the town was culturally andeconomically tied to the kingdoms on bothsides of the Carpathian Mountains. Alcoholproduction in Hniezdne has a long traditionas tapping rights were included in royaltown rights. Hniezdne was the smallestroyal free town in Royal Hungary.
Beginnings of Whisky
Local settlers grew grain in the harsh andinfertile lands of northern Spiš with loveand care. A portion of their production wasset aside for the production of spirits usingthe old traditional method. This was one ofthe first technical processes we decided toadd to our production techniques. Theproduction process is very similar to thatused to produce a spirit known locally as“gorzalka”, which was distilled locally in thefirst half of the 18th century by local“gorzelnica” masters (a general name forspirits made from wheat and other grains).The technology of making gorzalka isextremely similar to the production ofclassic whisky. Parallels extend to thepreparation of the grain, the mash,distillation and aging in oak barriers, clearlydemonstrating its similarities with whisky.
Nestville Distillery
The oldest preserved distillery in the areawas found beneath Lublow Castle in theroyal free town of Stará Ľubovňa, only 5 kmfrom Hniezdno and It dates back to theperiod before 1746. The rareness andunique construction of the stone still ranksit among the oldest evidence of the historyof distilling in Slovakia and across CentralEurope.
More than 110 owners ofcopper pots for distilling spirits wereregistered in the 19th century in StaráĽubovňa alone. This speaks to the greatinterest and enthusiasm the population hadfor knowing, developing and refining craftdistilling for future generations.
Nestville Distillery was created as a directresult of this rich history. This is more thana moral right; its an obligation to preserveand improve upon more than 450 years ofold distilling tradition. Nestville Distillery islocated in the heart of Europe, directlyunder the peaks of the High Tatras. Thecompany’s name Nestville Distillery is acombination of the words NEST and VILLE,with NEST being the literal translation ofthe word hniezdo serving as the root of thetown’s name Hniezdne and VILLE the oldEnglish abbreviation for VILLAGE, whichfully applies to Hniezdne.
Whisky and water
The importance of water is confirmed by the steps taken by numerous distilleries that havepurchased the land around their water sources to protect them from contamination. Water andwhere it comes from has a major impact on the taste of whisky.
One of the most important motives for starting the production of Nestville whiskywas the high quality and crystal clear water available, analysis of which confirmed a mineralcomposition exceptionally suited to whisky production. Geological research determined thewater we use flows through Quaternary sediments of the Zuberecky and Bielepotocky strata.
The water follows a meandering route from the Belianske Tatras range to theĽubovnianska Basin, during which the water is enriched by unique minerals and filtered throughrock dating back to the Paleogene and Quaternary periods.
This compositionally unique water (rich in Ca, Mg and Fe) gives our whisky adistinctive taste and originality. Mellowing with oak barrels and smoking the malt can change itsflavour profile but the water itself is specific in that its composition gives whisky its unique tasteand a permanence which cannot be changed.
Whisky and grain
Ingredients are the foundation in addition to high quality water. Specific varieties of grain areselected, in particular those with the highest starch content levels, which are a major benefit inthe fermentation process. Barley is among the best grains and it grows in the harsh naturalenvironment beneath the peaks of the High Tatras under the careful watch of our experts whooversee every detail of the production process. Its primary advantage is that it grows in lessfertile and nitrogen-poor soil making it the best crop for malt production. While barley containsless nitrogen, this results in higher future sugar content needed to produce alcohol. Other grainsincluding barley, barley malt and corn are used to produce grain whiskey distillate.
Whisky and malting
Malting is the technological process used to convert barley into malt, which is a basic ingredientin whisky production. We produce malt using an old-world, manual method that was typical inthe second half of the 19th century. The barley is first cleaned and then soaked in water for afew (2-3) days, spread on the concrete surface (threshing floor) and allowed to germinate in amoist and dark environment (5-8 days). This process creates enzymes needed to break down thestarch into simple fermentable sugars. During this period, the barley is aerated and turnedmanually in order to avoid scorching.This prepared grain batch is then dried for 24-48 hours in a hot air kiln which very gently andslowly removes excess water. The production of malt for whisky production includes theaddition of hardwood smoke during the kiln drying process to give the whisky its characteristic,smooth and smoky aroma.
Whisky and barrel aging
Our whisky is the first Slovak whisky. The whisky is then barrelled in high quality new Americanwhite oak barrels; this wood is exceptionally high quality and is generally used to age manywhisky’s from around the world. American oak is well known for its sweet and toastedcharacter. Generally 4 levels of charred barrels are used, and we use those in the third level ofchar, known as medium plus or M+ for short which are complexly aromatic. The whisky is agedfor at least three years. It is sampled on a regular basis to ensure the aging process is conductedto perfection under expert supervision. Production batches are selected after three years.Whisky cannot be bottled earlier. It is important to emphasise that the whisky fully ages inbarrels and is never bottle-aged. Approximately 2 to 5% of the whisky evaporates a year duringaging. This share is poetically termed the Angel’s share and it depends the temperature andhumidity in the aging room where the barrels are stored and on the wood used to make thebarrels.
We currently have several thousand barrels in our cellars filled with whisky distillate with 65% to 67% alcohol content carefully crafted from malt and grain. Whisky undergoes its greatest transformation in the barrel during the aging process, which is why this entire process takes place under the watchful eyes of experts.
Nestville Whisky
Nestville whisky is very smooth, even silky , with a sweet note of corn, a golden brown colour
with hints of caramel from the charred surface of the barrels in which it is aged. Nestville whisky
features a vanilla finish with undertones of malt and grain. It is produced using a special
continuous distillation process guaranteeing a high level of purity and quality.
