Assessment Methods Professional Cookery Level 1 & 2 Entry Requirements L A T 16 Level 1: 4 D - G at GCSE or BTEC Passes Level 2: Should have achieved a Level 1 and have aspirations to pursue a career within the professional cookery industry. Future courses & possible careers Careers in the professional cookery industry such as Hospitality, Chef, Waiting staff, Hotel, school and education. Further education in professional cookery courses. City and Guilds Diploma 7100-81/82 - Levels 1 and 2 Department: Technology and Enterprise Contact: Mr P Plummer | Email: paul.plummer@longfieldacademy.org Students are assessed on an on-going basis through practical demonstration, observation, online multiple choice tests and coursework assignments. Level 1 & 2 The Professional Cookery course is very practical in nature and will take students through a large number of units designed to provide them with high quality cooking skills. Units include Meat and poultry cookery, Fruit and vegetable cookery, Fish cookery and Dessert and Pastry work. This is a full-time, two-year course which will provide students with first-rate training in Professional Cookery and the hospitality sector. Students will be taught in Longfield Academy’s state-of-the-art professional kitchen and will prepare food to be served in the Academy’s own Bistro, called ‘The Telescope’. It will prepare students to pursue a career in high-quality hospitality establishments, such as reputed restaurants in London and beyond. Training includes elements such as menu design, front of house, and a wide range of cooking skills and experiences.
