SUMMARY

Green asparagus is delicious, healthful, and easy to prepare. These qualities make

asparagus increasingly popular, and over the past five years, sales of this vegetable

have seen double digit annual growth. Asparagus was originally grown in Europe

over two thousand years ago. Today Peru is the largest exporter of fresh asparagus,

where we produce year round in ideal growing conditions in several regions of our

country.

Asparagus is a perennial plant whose initial harvest takes place approximately a year

and a half after the seeds are sown in the fields. Green asparagus is allowed to grow

naturally into the light. The asparagus shoots are harvested by hand as they appear

above the ground. The fields can be harvested for up to twelve years with regular

periods of dormancy.
