PREPARED BY ASTRYD deMICHELE www.wholebodymindfitness.com [email protected] Jakarta, INDONESIA RAW CASHEW NUT SOFT CHEESE (Raw, Vegan, Gluten-free, Sugar-free) INGREDIENTS 2 cups raw cashew nuts, soak for 2 – 4 hrs ¼ cup water 2 Tbsp nutritional yeast flakes 2 Tbsp pine nuts ¼ cup freshly squeezed lemon juice 3 large cloves fresh garlic 1 tsp granulated garlic 1 - 2 tsp chili powder or to taste Sea salt to taste Put soaked and rinsed cashew nuts into blender (preferably a high speed model, like the Vitamix™). Add all the ingredients and blend at high speed until the consistency is creamy and thick. If too thick, add a little more water. Put into glass container with sealable lid and refrigerate. The refrigeration thickens it up slightly more so it has a nice smooth, spreadable texture. Keeps well for several days and develops flavor. Enjoy! I experimented with items from two recipes to create this one. The base was from http://healthyblenderrecipes.com/recipes/raw_vegan_cashew_cheese, and from there I added/deleted ingredients to suit my own palate. I also used ideas from a fabulous Raw Foods Preparation Course, Basic Certification that I did with Vivian at Balanced Living Café in Singapore. Hope you enjoy this one as much as I do This is a yummy ‘cheese’ spread – the only disadvantage is that once you start eating it you may not be able to stop! It is THAT delicious. I make mine spicy – but you can always decrease or omit the chili pepper if you prefer. A great party dish and super simple to make!
