Welcome to the 2012 Restaurant & Bar Show – back for the second year and we are very excited to bring you a bigger and better event. We hope you enjoy the inter-national competitions, seminars and masterclasses, including one by a very special guest – Monica Galetti from Le Gavroche Restaurant in London. This is New Zealand’s ultimate hospitality trade event.

As well as the NZ Culinary Fare, this year we have three international competitions at the show: The Bar Masters sponsored by MONIN – back for the second year, the NZ Latte Art Championship sponsored by Meadow Fresh and for the first time, the finals of the Stella Artois Draught Masters.

Along with Monica Galetti, other presenters include Michael Meredith, Dave Porter, Dr Mike Boland from the Riddet Institute and many more. The all new Bar Business seminars will feature topics from ‘Front of House Magic’ to ‘Building a Profitable Cock-tail List’.

We hope you make the most of being able to meet face to face with some of New Zealand’s leading industry suppliers, networking is a big part of the show experience. You will find a full list of exhibitors with contact details in this guide.

Of course the R&B Show is proud to run alongside the NZ Culinary Fare. Chefs, baristas, front of house staff, sommeliers and students will be busy for three days as they compete in over 60 culinary competitions. The event is a showcase for the out-standing talents of the hospitality industry as supporters cheer on the 1000 entrants – a great opportunity to watch the best in action. The outlook for restaurants is cautiously optimistic according to our recent Hospitality Report (conducted with AUT). However, the quivering global economy and Christchurch’s earthquakes have had a big effect. Add to this that consumers are spending less on dining out and restaurant numbers grew by more than 1.6% to 14,455 and it is clear that we have a highly competitive environment. This may encourage a cautious diner to eat out more – exciting news for the customer and us.

Our research suggests that customers want engagement. This is a good time to utilise social media, check out the ‘singletons’, get networking, engage your customers in an experience (either personally or virtually) and keep the customers you already have. Research shows it costs 5-10 times as much money to find new customers than it takes to keep your existing ones.

A large market segment is now keenly aware of environmental issues and is ready to support proactive businesses engaging them. Therefore now is the time to commit to sustainable practice; create these points of difference and then communicate them to your most important asset… your customer; it will build loyalty and business.

The R&B Show is the perfect place to research, explore innovation and make lasting connections. Be sure to also visit and observe the great culinary competitions happening in Hall 2 at the NZ Culinary Fare. MONICA GALETTI – Learn from Michel Roux Jr’s right hand lady in this very special Telecom Masterclass. Monica has worked for Michel and Le Gavroche for over 10 years. Born in Samoa but raised in NZ, Monica completed her Chefs training in Wellington before heading to the UK and joining the team at Le Gavroche where she worked her way up from Commis Chef to Senior Sous Chef. Monica will be presenting ‘Food at Le Gavroche’ a live cooking demonstration where you will learn the secrets of the Michelin starred fine dining establishment. MIChAEL MEREDITh – Michael was also born in Samoa but grew up in NZ. He was awarded a scholarship at the The Culinary Institute of America and has also worked at top restaurants in Manhattan. On returning to NZ he was the founding Chef of The Grove and in 2005 won the Lewisham Award for Outstanding Chef. Now Chef and proprietor of acclaimed Auckland restaurant Meredith’s, Michael has recently returned from ‘The MAD Food Camp’ in Copenhagen so expect to hear ideas behind the theme ‘Keeping it Real’. Sunday 12.30pm – Free entry.

DAVE PORTER – Harmony Food’s ‘Meat Genius’ will be showcasing 100% NZ Pork in a butchery Masterclass using fresh sustainable cuts and demonstrating cooking techniques. Dave is working with 100% NZ Pork to design and develop new pork cuts to seed the pork products of the future. Sunday & Monday 3.30pm – Free entry.

OLIVER DRAYTON – Learn pastry techniques from this expert Pastry Chef. British-born Oliver has been a pastry chef at a number of world-renowned Michelin-star restaurants and hotels in London and most recently was Head Pastry Chef at Bracu restaurant. With a passion for chocolate, he placed second overall in the UK nationals of the World Chocolate Masters competition in 2008 and won the Chocolatiers Choice award. Sunday & Monday 2pm – Free entry.

DR MIkE BOLAND – Hear from the Principal Scientist & executive Officer from Riddet Institute on ‘Dining and digestion: why the digestive process is an important aspect of the dining experience and what to do about it’. Mike has particular interests in food enzymes and proteins, personalised nutrition and trends and the future direction of the food industry. He has over 15 years experience in the dairy industry and has published over 100 research papers and 6 patents as well as numerous reviews and book chapters. He was co-editor of elsevier’s recently published volume “Milk Proteins: from expression to Food”. Monday 12.30pm – Free entry.

The competition is the New Zealand qualifier for the World Latte Art Championship and first prize includes an all expenses paid trip to Korea to compete. The competition will highlight artistic expression in a competition platform that challenges the barista in an on-demand performance. Stella Artois Draught MastersThe Stella Artois Draught Masters Final will take place at the Show following the regional heats which have taken place all around the country. Watch the masters at work in the 9-step pouring ritual. Visitors are also welcome to have a go and learn the techniques from the professionals. Special Guest Judge: All the way from Missouri, George F. Reisch is a fifth generation brewmaster by trade. A Past President of the Master Brewers Association of the Americas (MBAA), he is now a tasting judge at the World Beer Cup, Brewing Industry International Awards, and the Great American Beer Festival. This man knows his beer. Visitor Beer Pouring: Sunday 1.30-5pm & Monday 1.30-5pm (in between heats)Competition final: Monday 1.30-5pmPrize: NZ Draught Master will fly to Montreal Canada to compete on the world stage.
