We would like to specify thatall our ratings are based on subjective evaluations, and therefore lay no claim to being absolutetruths.

Foreword

In the last few years, tourism in Rome has been very much on the increa-se, and a growing number of the people who visit the city are attractedboth by its artistic treasures and by its wine and cuisine traditions.

Actually, Rome is not particularly famous for the quality of its restaurants,and besides, tourists often find themselves all eating in the same restau-rants that cater specifically to them: restaurants that have very little in com-mon with the more authentic places where Romans eat out.

That is why we decided to draw up a critical guidebook of the Capital'srestaurants and pizzerie, to offer you a list of addresses that are normallyfrequented by the people who live in Rome. It is the word critical that I wouldlike to explain, as we feel it is the key to this little book. We decided wewould be an independent voice outside of the larger chorus (our publishinghouse is called "The Black Sheep"…) and that we would write for our rea-ders. To do this, we felt the only way would be to avoid all possible formsof conflict of interest with the world of restaurateurs. Indeed, you will not findany restaurant or pizzeria advertisements here, and we also avoid consul-ting with any Chefs who we could find ourselves appraising in the future. Asa result, we feel free to give you top ratings for some restaurants, and totallyinsufficient ones for others, if that is the opinion we have reached.

As to its actual contents, you will find critical opinions on 150 restaurantsand 51 pizzerie. In the first pages we have listed the best: number one isChef Heinz Beck's La Pergola in the Monte Mario Cavalieri Hilton Hotel,with its splendid terrace above the eternal city. Antonello Colonna comes insecond, with his (same name) restaurant in Labico, some 40 km fromRome, in which he offers a cuisine linked to the territory and revisited in acreative mode. The two restaurants ranked third are located in the capital'shistorical centre: Il Pagliaccio with chef Antony Genovese and L'AltroMastai with Fabio Baldassare. The former has a more innovative type offare, with unusual and almost always successful combinations, the latterserves a refined cuisine in a top class setting. And all the others follow...Just a word of advice: please do not just rely on the restaurant rating whenchoosing a restaurant, but read the whole review, because it is only by rea-ding the detailed account of the experiences we had in each place that youcan understand what you will actually find there. To help you choose, wehave also inserted a list of our suggestions in the first pages.

A lot of foreigners think pizza when they think of Italian food, so we just hadto put in a separate pizzeria section (though we would like to point out thatif you want to eat really authentic pizza, you had better plan on visitingNaples: as they say, it's a whole other story there..). In Rome, most pizze-rie serve very thin and crispy "romana"-style pizza. For "romana" fans, wedo suggest Da Baffetto, right in the heart of the historical centre near PiazzaNavona, and Da Giggetto near Porta Pia, where they also make excellentfried dishes. However, in our opinion, there are three pizzerie in Rome thatare even better, where they serve a thicker, masterfully leavened pizza: Bir& Fud in Trastevere (vast selection of boutique draught beers), La GattaMangiona in Monteverde and Sforno, a bit out of the way, in Cinecittà.

We have also added a list of 258 shops in which you can buy gourmet spe-cialties (wine shops, delicatessen, bakeries, cheese shops, ice cream par-lours, pastry shops, chocolate shops, and shops for kitchen accessories).

Key to Symbols

This is a brief explanation of how you should read this guidebook and thesymbols you will find in it. We would like to stress that if you just look atrestaurant or pizzeria ratings, prices and value for money, it would be ratherreductive. In fact, it's in the text that you will catch the nuances that areessential for you to get the right idea of the place you're going to try out.RESTAURANT RATINGSRatings range from 0 to 10, with multiples of 0.25 (+ and - are in fact worth0.25). The assessment corresponding to the various ratings can be under-stood as follows:

The difference between a restaurant in the top end of a price range and in thelower end of the next price range is not as clear-cut as the corresponding ratingswould seem to indicate. PRICESRestaurants:The prices listed in Euros are for meals consisting in:

cover charge and service + first course + second course + dessert + ½ wine+ ½ water + coffee

the prices of the courses are average menu prices (excluding special dishes

such as lobster, truffles etc.), whereas for wine, it is the house wine, or wherenone is served, a bottle from the lower price range. By choosing this type ofwine, we realise that we have included an arbitrary element, but we feel that withthis convention, the price you read on each review corresponds approximatelyto the price you will be paying.N.B.: for top level restaurants - considering their rather refined dishes we havechosen to indicate the average price of a complete meal.Pizzerie:The prices listed in Euros are for meals consisting in an appetizer, a pizza, amedium-sized beer and coffee, besides fixed items such as cover charge,bread and service. After just over a year, the temporary restaurantsign, which represents a stylised fish and sun, isstill held up by simple white metal thumbtacks. Wehad hoped that it would have changed, and thatthe cuisine and service would have improved, butunfortunately, none of this had come about. In ouropinion, to err is human...but to persevere is dia-bolic! Apart from a few small details in the placingthat have been changed, the restaurant is stillrather cold and empty inside, whereas outsidethere continues to be the usual problem ofacoustic smog (and not only) as many publicbuses pass in front. Though the kitchen usesexcellent fresh ingredients, it still doesn't convinceus, as they managed to go wrong on even simpledishes such as the classic spaghetti with clams.Finally, service is occasionally precise (wine bythe glass is also poured at the table now) but oftena friendly approach with a lack of formality can turnto excessive familiarity.From the Kitchen The wine list, which is managed by Stefano theowner in person (he particularly likes sparklingwines) offers various good labels, both Italian andforeign, but the markups are always a bit high;besides, just two wine labels by the glass are notacceptable. As appetizers, we tried the classicmussels "alla marinara" (juicy and tasty, but badlycleaned on the outside). Various disappearancesmarked our second courses...served before thepasta in this restaurant: the little skewer of babysquid and oven-baked anchovies with a falseparmigiana casserole of aubergine was fair andhad neither anchovies nor parmigiana: the oil andlemon rayfish with a little potato cake (the latterwas missing and was substituted by a vegetablereheated in a pan). The spaghetti with the wolfishwere disappointing, with properly timed cookingbut they were bland and the molluscs were taste-less: the vermicelli with garlic, oil, pecorino cheeseand breadcrumbs were well executed. As usual,the crisp flaky crust dessert with whipped chantillycream was good.

"C'era un luogo, un tempo, che si chiamava"Caffè"...questo luogo ormai perduto...ora ritrova-to...". We find ourselves in Via delle Coppelle(which is already intriguing given the success otherrestaurants have had lately around here), next to alarge wellness center, organic products areused...is this just one more non-mainstream type ofplace? Well no. It is a place in which you feel pam-pered as soon as you enter, with books along thewalls that you can read, exotic objects on sale, caféand wine bar for a pleasant cocktail or for an after-theatre dinner, a colourful display of pastries, andin the back, the restaurant. Books here too, light-coloured walls, dark wood for the tables, alternatered and white armchairs, large square chandeliersmade of jute coffee bags. It looks like a crossbetween a Fair Trade sales point and somethingradical-chic. Nice service, efficient (though it mightbe an idea to write down orders), high level cuisineand excellent prime ingredients - all obvious fromthe very first taste. The menu is rather varied andwell put-together. A place that is a delight for all thesenses.From the KitchenWe started off with excellent grilled tomino cheesewith pears, and a good selection of hams withParma, Patanegra di belota (the "belota" is the glandthat the Iberian pig feeds on) and Cecina de Leon.Among the first dishes, the spelt pasta all'arrabbiatawas truly exquisite. Perfectly spicy, the trofie with anunusual but successful pesto of arugula andalmonds was very delicate. We proceeded with atender filet of pork served with a cream of "pecorinodi fossa" cheese, and an excellent sliced beef withfalse Peruvian pepper (a variety of crushed pink pep-per). To finish on a dignified note, fresh miniaturepastries, tantalizing and with various assortments,and a fragrant orange cream covered with a salad ofboth exotic and season's fruit. The wine list offersvarious labels, not many, but with correct markups,but actually the menu deserves a better compilationand above all more professional service (we wereasked to make two choices should the first choice beout of stock, and then we were presented with a thirdone).

Though it has hidden itself in a street parallel toVia del Tritone, this restaurant is not dispensedfrom the continuous patronage of tourists from allcontinents, who have heard enthusiastic reportsover the grapevine, saying that this is a placewhere you eat excellent Emilia cuisine, simple,efficient and well-executed. The two little diningrooms are tidy and attractive, and make theexperience a pleasant one, though they are notvery large, so considering the number of com-peting clients, we suggest booking. The serviceis a bit gruff, but comes from a "heart of gold",and is in any case professional and flawless. Wegreatly appreciate the fact the menu hangs out-side the door, so you can study it at leisurebefore entering, and also look at prices. The winelist is not very large and is mainly centered on theterritory of Emilia Romagna: there is of coursethe house wine in a carafe, if you prefer not tocommit yourself to ordering whole bottles.From the KitchenThe appetizers offer a large selection of excel-lent cold cuts: we chose a ham from Langhirano,coppa from Parma and mortadella fromBologna, and were more or less satisfied. Wecontinued with pleasant tagliolini with ham, sim-ple and tasty. The tortellini with meat sauce werereally excellent, though both the tortellini and thesauce were not on the menu. We followed up infull-fledged Emilian tradition, and ordered boththe boiled beef and the assorted boiled meatwith green sauce and we enjoyed both a greatdeal. The grilled meat dishes, sirloin steak andtenderloin, were irreproachable (ordered byclients who were less inclined to explore the tra-ditions of other regions); the more elaborate legof veal with mashed potatoes was delicate andexquisite, a cut of meat that we call "campanel-lo" and that had been artfully browned in theoven in this case. The pan-reheated chicory hadjust the right taste, and the roast potatoes werealso well -made. Among the desserts, all rathergood, first prize to the pear and cinnamon tart,and the crunchy biscuit wtih rum was also pro-moted hands-on.

If you feel like spending a pleasant evening in atrendy restaurant, crammed with "beautiful peo-ple" (how about the center of Rome, so as toenjoy the exciting night life of the capital afterdinner?) - but above all where you can find goodfood, then Crudo is just the thing for you. Atcocktail time there is a rich buffet while you waitfor you table in the upper floor restaurant."Design" - style interior decoration, with a longbar in the entrance where you can stand aroundand chat in the various moments of the evening,then a series of little rooms with comfortablearmchairs and sofas. The tables in the restau-rant have beautiful modern table settings, andservice is courteous and professional. The menuoffers dishes that are "raw" or "slightly cooked",both fish and meat, for which the choice of topquality prime ingredients is absolutely neces-sary. The wine list is well-conceived, startingwith Champagnes, Italian sparkling wines andthen white, red, rosé and dessert wines, withmarkups that are more or less correct. A little listof oils to top off some of the dishes with "raw" oil.From the Kitchen Take note: no first courses, because thesewould have to be cooked. The menu is well-appointed, and we chose a very fresh salad ofred prawn, red tuna, bass and asparagus DOPand a delicate millefeuilles of prawns with littlesalad of goby squid. We proceeded with tastycubes of red Mediterranean tuna with chick peapurée, succulent sliced beef with herbs withcous cous (nice separate and fragrant grains) arefreshing fennel, orange and black olive salad,a tasty kebab of king prawns (actually a skewerof shellfish) with herbs, served with rice, cornand black beans (unfortunately overcooked, butwith very hard beans). Finale with a very tastyvariation of crème brulée (with vanilla, anice andlicorice), simply perfect both in terms of execu-tion and composition.

Not far from the Vatican walls, in an area frequented by tourists, this large eaterywith outside tables attracts a mixed crowd of Italians and foreigners. The diningrooms are adorned with oxen yokes, necklaces of garlic and photos of AlbertoSordi depicted in an epic maccheroni battle. The service is quick and efficient,even when it is a full house. With its roots in Amatrice, the place provides thin andwell-garnished pizze as well as a menu that covers all of the classic first coursesand a variety of grilled meats. We started with the mixed hors d'œuvres "Isoladella pizza", an abundant choice of delicacies that included avocado with lettuce,aubergines, beans, raw ham with melon and figs and different types of tiny moz-zarellas of medium quality. These pizze met with our unhesitating approval: themarinara and the amatriciana in its white version with mozzarella and bacon. Atthe conclusion of the meal, the Catalan-style cream was not convincing at all.Paulaner Chiara draught beer.

It is difficult to judge when a good kitchen mirrors service that is oftenimprecise. What distinguishes Napul'é is the live music that enlivensalmost every evening, that the numerous foreign patrons find pleasant andappreciate. We enjoyed the house platter of mixed fries because of thevery good quality of the fry, dry and particularly crisp, especially the cro-quettes, the zucchini flowers and the little pizze, as well as the various tid-bits from the buffet (although of an inferior quality). What you must try isthe buffalo mozzarella with raw ham, where every bite of the mozzarellashowed its freshness. The pizza margherita and the soldato (practically aNeapolitan pizza) were both convincing but the latter was a little lacking intaste. We couldn't miss out on the orecchiette with pesto and mussels: thepasta was good quality and the condiment was decidedly inviting. To finishoff, a very fine pastiera. Draught beer: only Moretti chiara.

Without a doubt the inspiration is Neapolitan. Parked at the entrance is alarge reproduction of a typical rustic Neapolitan scene, but as it turned out, itwasn't enough to guarantee the quality we had expected. A step by stepreport: the platter of mixed fries, not bad from a culinary point of view, wasserved incomplete (the promised arancino wasn't there). The “pagnottiello”with aubergine and buffalo mozzarella was rather anonymous, and had veryheavy dough. Same goes for the pizza dough (margherita, salami, ham),which was gummy, to boot. And finally, we didn't appreciate the ubiquitouspresence of cheese and its overbearing flavour in the condiment, which alsoweighed heavily on our digestion. The lemon delight was passable, with itscream topping that was not convincing and a sponge base that was too dry.The draught beer served is Nastro Azzuro.

Candido, a restaurant-pizzeria, is quite well known in the Prati area for its tra-ditional-style cuisine and its thin Roman style pizzas. The place has only onedining room, furnished with wooden tables and chairs, the walls are paintedin a warm colour and the floor is terracotta tiled. Outside there is a coveredveranda and there are also some tables along the footpath, where it is possi-ble to eat in good weather. From the quite large menu we chose as an appe-tizer the mixed fry (small mozzarellas, supplìs, potato croquettes and oliveascolana), which was passable and not greasy. The pizza was moderatelygood. Whether you like Roman style pizzas or not, you can’t miss Mrs. Luciana’s.The dining rooms are crowded and noisy, the ambient spartan and the tablesettings reduced to a minimum; but the pizza is something else, available inthree sizes and cooked in a wood-fired oven. To start with there are lots ofdelicious crostini with ham or sausage as well as the mixed fries, which area little bit oily. There are vegetables also, cooked and stir-fried with garlic andoil, or cooked and served with oil and lemon. Don’t miss the large white pizzawith sausage and the salami with a certain special aroma. Also great werethe diavola, with a piquant salami condiment and the huge alzone. The largeservings and the quality of the condiments used produce a very substantialmeal. Rather than a pizzeria, this place in Via degli Scipioni is a "Pinseria", or a"pines" forge, which means it turns out oval pizze made with very digestibledough: a return to the dishes of ancient Rome. First of all we recommend the"Simpatico", a mix of croquettes: potatoes, provola and chives, or with nuts,red chicory and gorgonzola, with " 'nduja" (to leave till last). The assortmentof salamis and cheeses was passable, served together with delicious focac-cia. The pinses, available in such a large variety, are enough to satisfy everypalate; to name a few: the bufala and pachino, the margherita, the ortolanoand the stracchino and ciauscolo (fabulous, but the cheese was barely warmand really risked becoming cold halfway through its consumption). Thedesserts were very high level (this year there is also a very good jam tart)and all home-made: don't miss the white chocolate mouss. The Draught beeris Menabrea both light and amber coloured.
