They use no chemicals or fertilisers in the vineyard and operate more or less organically (but without certification). Maceration for six weeks with natural yeast fermentation at 28 degrees, using a tiny amount of sulphur (10% the legal dose) at bottling, also unfiltered. No oak at all either, just fruit!
