DJ Heiser Retires!

For those who have invested 23 years withone organization, it can seem like yesterdaywhen you started…a blink of an eye and it’sover. But DJ’s retirement is just part of a family legacy that continues to build atWaterfall...as there still will be a Heiser or two at Waterfall in 2008.

Meal Choices?

Chef Stu Campbell and Sous-chef Jeni Leatherberry pre-select the Day 1 meals for ourarriving guests. Then, at theend of that first day, guests fillout a menu form to selecttheir own lunches for Day 2;and again for Day 3.

Last season’s new boat lunchmenu received rave reviews, but many guests alsorequested a hot item. Sostarting this season, duringthe full 2 days of fishing, along with sandwich selections like Roast Beef & Cheddar or a VegetarianWrap, guests will enjoy soup, stew or chili on board theircruiser.

Chef Stu’s new state-of-the-art BBQ kicks the grillin’ up toa new level with his memo-rable culinary masterpieces atthe farewell luncheon for ourdeparting guests on Day 4.

The perfect ending to the

perfect adventure!

Gary Sherrell, Maple Valley,WA, landed his 42.1 KOD onJune 6. A day later, his dad,Steve Sherrell, Ronald, WA,caught his 35.8 KOD! Threegenerations of Corwins,Surprise, AZ, enjoyed fishingtogether as a family.

“Smoke-innnn!”

Our new smoker meant discovering new recipes for our guests andstaff and changed the direction of our departing guests’ outgoinglunch menu. Instead of just burgers or pasta, we had wonderfulnew entrees like BBQ beef brisket & ribs. What a great way to finishoff a fantastic fishing trip!

I add to a store bought rub if I think it needs a little extra brownsugar, honey or more spice, like cumin. One secret that was successful was lightly brushing yellow mustard on our brisket or ribs before adding the rub.

How to tell if the ribs are done? Pull on a bone and if it pulls awayfrom the meat, they’re done. If they fall apart when you pick themup, they tend to be over cooked. On average, we cooked our ribs at150 degrees for about 3 1/2 to 4 hours. It’s also a good idea to planahead. Will the smoked meat be served immediately or will it bereheated? This affects the cooking time considerably.

The internet is a great resource to learn more. So, smoke’m if yougot’m!!

The Season for Change

We look forward to our first season withScott at the helm as OperationsManager.

Our Maintenance Supervisor, Glen“Babe”Wilks, and his crew workeddiligently during the off-season.Some of the projects includerebuilding boardwalks, upgradingthe cabins, and fortifying the foundations of several buildings. Our constant goal is to supportthe on-going maintenance program that will keep Waterfall in pristine condition.

Guests now can be creative firstthing in the morning with our newbreakfast menu: omelets and eggsto order! And for that mid-dayhunger: last season’s new boatlunch menu was well received andwe all anticipate another deliciousseason of Chef Stu’s specialties!

A Grateful TributeOn June 19, long-time guest Clay James, Huntington Beach Dodge, CA, landed both thedaily and weekly King prizes with his 43.5 lb. King of the Day.

Everyone, including 2 servicemen back from active duty in Iraq, had assembled in the diningroom to await the daily award presentations. After Clay had received his coveted white capfor his KOD, he walked across the room and presented his cap to Lt. Commander DennisMonahan, a Navy flier from Oak Harbor, WA. Clay then announced that if his KODweighed in as largest for the week, Dennis would receive Clay’s weekly prize, as well. Clay’sKOD won the weekly and Dennis received the sportfishing package trip for the 2008 season.

Clay’s gift was spontaneous, heartfelt and genuine—the qualities that to me help define “classy.” Thankyou, Clay, for providing something that will mean so much to my family and myself! ~ Dennis Monahan

We salute you Dennis, and we salute you Clay for honoring our nation’s military.
