    Safeco Field and Centerplate Catering are pleased to have Dave Dekker as our Executive Chef providing Mariner fans with memorable culinary experiences. Chef Dave joined the Centerplate team in 2011, and oversees the entire culinary operation for Safeco Field. Chef Dave’s 2011 season was highlighted by the opening of “The ‘Pen”, which The Seattle Weekly named one of Seattle’s Top New Restaurants in 2011.

    Chef Dekker comes to Seattle from a wide range of diverse markets such as California, Kansas City, Las Vegas, Lake Tahoe and Hawaii. He has an extensive background in volume service working such events as the Kentucky Derby, Grammy Awards, US Tennis Open, NBA Finals as well as the NBA and MLB All-Star Games.

    The common thread Chef Dekker has always looked to bring to any place he has worked has been get-ting to know and understand the people and flavors of the areas he has lived. Whether touring organic farms in California, meeting Bison ranchers in Kansas, or walking papaya orchards in Hawaii, he has always wanted to understand what is important to the local market and how to keep the products locally sourced. With such a bounty of culinary resources at his fingertips in the Seattle area, that desire has only grown in importance. With the freshest seafood available during the summer months and the ability to source most of our fresh produce from within a 150 mile radius, stressing the importance of local products with his culinary team has remained top priority to not only boost the pride in where we live, but truly support the local economy.

    Whether your need is a breakfast for 20 people, lunch for 500, or dinner for 18,000, Chef Dekker and his Culinary team have the experience and skills to deliver a memorable event with flawless execution.

    Our Centerplate Catering staff is delighted to work with you to provide all of your food and beverage needs, as well as décor, props, flowers and party themes. Providing everything from fun stadium fare right out of the concession stands to continental breakfast service, buffet lunches, and elegant dinners, Centerplate has what you are looking for!

    GuaranteeTo ensure we have ample time to obtain the best product needed to create your event, please provide a guaranteed attendance figure for all functions at least five (5) business days prior to the event date. While we are flexible, if the Catering Manager is not advised by this time the estimated figure will auto-matically become the guarantee. Certain circumstances will be reviewed for approval. Increases made within the five (5) business day deadline are subject to approval by Centerplate and may be subject to an additional charge. We understand there might be a last minute increase in guest attendance so Center-plate will be prepared to serve 5% over the guaranteed attendance for all events up to a maximum of 100 guests. We reserve the right to make reasonable substitutions as necessary.

    Billing and DepositsA 50% advanced deposit is required at least thirty (30) business days prior to the event date and the remaining 50% balance is due on or before the event date. Acceptable forms of payment must be agreed upon when the event is booked. Acceptable forms of payment include credit card (Visa, MasterCard, American Express and Discover) or company check. We require a completed credit card authorization form to be kept on file for any overages. Purchase orders are not accepted by Centerplate. Cancellation PolicyPayment is non-refundable if a function is cancelled less than five (5) business days prior to the event.

    Menu SelectionThe menu presented offers a wide variety of items for all catering needs. In addition, our Executive Chef is available to create a custom menu to suit all types of events and tastes.

    We understand you may have guests with dietary restrictions who require specialty meal. Please notify your Catering Manager at least five (5) business days in advance to ensure we have ample time to create something for everyone.

    Food and Beverage ServiceCenterplate Catering is responsible for the quality and freshness of the food served to all guests. All food and beverage presented at Safeco Field must be prepared by the Centerplate culinary staff. Food may not be taken off the premises after it has been prepared onsite. No food, beverage, or alcohol will be per-mitted to be brought into or removed from the venue by the client or any of the client’s guests or invitees.

    Sales and service of alcoholic beverages is regulated by the State of Washington. Centerplate is respon-sible for the administration of these regulations. Centerplate requires that all alcoholic beverages be dispensed by only Centerplate employees or agents. It is acknowledged that State law prohibits the sam-pling and distribution of all hard alcoholic beverages. The State does not allow guests to bring alcoholic beverages into the facility. An exception is made for wine. A corkage fee of $15.00 per opened bottle will apply.

    Beverage Consumption – Canned or bottled beverages may be purchased on a consumption basis.

    PricingHouse linen is supplied for all food and beverage functions, buffet tables and cocktail tables. Registra-tion/meeting table linen is provided for up to five (5) tables at no charge. Additional linen is available at $20.00++ per linen. Please contact your Catering Sales Representative for additional specialty linen selections and pricing.

    Pricing listed includes compostable plates, cups and utensils. China service is available at an additional fee.

    Listed prices are effective November, 2011. Rates are subject to change without notice and menu items may vary based on seasonal availability.

    Service Charge and TaxesAll menu prices are subject to a service charge of 18% and applicable Washington Sales Tax (currently 9.5%). You are free but not obliged to add or give additional gratuity directly to your banquet attendant.

    If your group is tax-exempt, please provide proper documentation to the Catering Office at least fourteen (14) days prior to the event in order to ensure proper billing. Please contact your Catering Manager to inquire about proper tax-exempt documentation.
