The “Lunchtime favourite” recipe was Maria’s Banana bread….here’s how to make it, and if you’ve got a lunchtime favourite…recipe or tune, let us know!

Banana Bread Recipe

Ingredients:2 – 3 Bananas2 beaten eggs5 ounces of sugar2 ounces of margarine8 ounces of self raising floorA pinch of salt½ a teaspoon of essence of vanillaA pinch of cinnamonA hand full of raisins (optional)

Method:Mix together the sugar and margarine. Add the 2 beaten eggs and mix together. Mash the bananas and add the pinch of salt to the floor. slowly fold the bananas and floor into the mix at the same time, do this by adding a spoon at a time alternately. Finally add the raisins, vanilla essence and cinnamon. Pour the mixture into a loaf tin and place in a pre heated oven at gas mark 3 or 150 degrees, for approximately one hour. When nicely browned, allow to cool on a baking try, and enjoy a slice while it’s still warm, Mmmmm Lovely!
