WATERMELON AND FETA SALAD750 g (1 lb 10 oz) seedless watermelon200 g (7 oz/1½ cups) Bulgarian feta cheese20 kalamata olives, pitted and finely sliced12 mint leaves, finely sliced2 celery stalks, finely sliced1 tablespoon red wine vinegar2 tablespoons olive oil
Serves 41 Remove the rind from the watermelon, then cut the
flesh into bite-sized pieces. 2 Cut the feta into 2 cm cubes. Roughly pile the
watermelon and feta onto a serving platter, then scatter with the olives, mint and celery.
3 Combine the vinegar and olive oil in a small bowl and drizzle over the salad.
4 Season lightly with freshly ground black pepper.

ideas perfect for the festive season.
POOLSIDE PUNCH200 ml (7 fl oz) aged rum (Pampero AnejoEspecial works well)100 ml (3½ fl oz) lime juice40 ml (1¼ fl oz) honey water40 ml (1¼ fl oz) homemade falernumhomemade ginger beer4 mint sprigs, lemon and orange wedges, to garnish
Serves 41 Place all the ingredients, except the ginger beer, in a
shaker and shake over ice.2 Strain into four highball glasses filled with ice and top
with ginger beer. Garnish each drink with a mint sprig, lemon and orange wedges.
Note: This drink was inspired by Nick Van ‘Tiki’ Tiel.

CHILLI SALT-INCRUSTED RIB EYE WITH LEMON2 x 500 g (1 lb 2 oz) rib eye steaks100 g (3½ oz/3/4 cup) sea salt2 tablespoons black peppercorns1 tablespoon chilli flakes1 tablespoon chopped rosemaryolive oil2 lemons, halved
Serves 41 Bring the steaks to room temperature. Preheat the
barbecue grill to high.2 In a mortar and pestle, pound the salt, pepper, chilli
and rosemary together. Rub the steak with some olive oil and coat in the spice mix.
3 Cook on the barbecue for 5 minutes on each side, then rest for 15 minutes.
4 Place the meat back onto the barbecue and cook until done to your liking. Rest for a few minutes before slicing. Serve with lemon halves and drizzle with extra oil.
