RESERVATION POLICYThe club strongly suggests reservations for dinner. However, we will make every attempt to accommodate any member wishing to dine with us. Walk-ins and late reservations will be accepted on a space available basis.

CANCELLATION POLICY If a reservation for a special event (where the policy is in action) is cancelled less than 24 hours before the start of the event, then the member holding the reservation will be billed for 50% of the cost of the event. This will apply for each guest that the original reservation was made for. Cancellations made more than 24 hours from the time of the reservation will not be billed a cancellation fee.

As I peck at this article for May, Easter is all but a memory and the summer season is on the horizon and approaching rapidly. With Easter being so early this year we weren’t sure how many of you would make to the island for this

annual start of spring tradition. I am pleased to say we enjoyed an explosion of interest, enthusiasm, thirst and hunger for all things F8I! The club was “hoppin” all weekend (pardon that pun, I just couldn’t resist), with participation at all the various events up about 25%!

As mentioned in my last Shorelines article, this past winter has been an especially fertile few months, sprouting facilities enhancements throughout the club campus. “Hidden gem…just beautiful… intriguing… wow…took my breath away…quite unexpected,” these are just a few of the Members reactions upon discovering the lawn between the pool and the tennis courts.

So, weather permitting, we thought it would be a great idea to unveil the “new and improved” event lawn at the May “Meet & Greet” on the Friday evening of Memorial Day weekend. Please make your plans now to be there!

The winter has also been a fertile time for membership growth, resulting in four new Members. Please join me in welcoming this new life to our club family…

The Reverend Bob Haywood continues to lead the church, and we will welcome eight visiting ministers and speakers during the summer. On this Memorial Day weekend we are pleased to welcome back retired Gen. Dan McNeill who never fails to deliver an inspiring message. Please join us at 8:30 am in the Yacht Club for this casual, family-friendly service.

Wiley is writer-in-residence at the University of North Carolina-Asheville and teaches in the Low-Residency MFA Program in Fiction and Nonfiction Writing at Southern New Hampshire University. A native of North Carolina, he lives in Wilmington, NC with his wife and their young daughter.

Korean BBQ Beef Short Ribs

Ingredients5 pounds Korean Style Beef Short Ribs

1 cup Brown Sugar

1 cup Soy Sauce

½ cup Water

¼ cup Rice Wine (such as Mirin)

1 small Onion, Peeled and Grated

1 small Asian Pear, Peeled and Finely Grated

4 Tablespoons Garlic, Minced

2 Tablespoons Dark Sesame Oil

¼ teaspoon Ground Black Pepper

2 each Green Onions, Thinly Sliced

DirectionsRub the ribs and coat evenly with the brown sugar. Let them sit at room temperature for 10 minutes while preparing the marinade. Whisk the remaining ingredients(except green onions) in a bowl. Transfer the ribs in a large re-sealable freezer bag (this may require several bags). Add the marinade to the freezer bags, press out the excess air from bags, and seal. Turn bag over several times to ensure that beef is evenly coated. Refrigerate for hours or better yet overnight.

Heat a charcoal or gas grill to medium hot. Drain the ribs of excess marinade and grill the ribs turning once. Cook to desired doneness (about 3 to four minutes per side).

Garnish the cooked ribs with the green onions. Serve whole pieces for an entrée or cut into smaller pieces using kitchen shears, for a starter or party nibble.

Chefs Note: Korean-style short ribs can be found at most Asian markets. The cut, also known as” flanken,” refers to a strip of beef cut across the bone from the chuck end of the short ribs.
