Shortbread
RecipeIngredients:250 grams of gluten free flour250 grams of butter125 grams of cornflour125 grams of icing sugarCaster sugar for dusting
Method:1. Pre-heat the oven to 180/355F or Gas Mark 4.2. Mix all the ingredients gently until the mixture comes together.3. Knead lightly, cover with cling film and put in the fridge for 1 hour.4.Knead the mixture a little bit after taking it out of the fridge.5. Roll it flat to 1.2cm thick.6. Use the cutter to cut shapes.7.Put onto a baking tray and prick lightly with a fork.8. Bake until golden brown.9. Take out of the oven and let the shortbread cool a little bit.10. Sprinkle lightly with castor sugar.
