Preheatovento350°F(177°C).Linea12-countmuffinpanwithcupcakeliners.Thisrecipemakes14cupcakes,soyouwillhave2cupcakestobakeina2ndbatch.

Add2eggyolksandthevanilla.Beatonmedium-highspeeduntilcombined.Scrapedownthesidesandupthebottomofthebowlwitharubberspatulaasneeded.Beatinthevinegarandthefoodcoloring--untilyoureachyourdesiredcolor.Iuse2Tablespoons.Withthemixeronlowspeed,addthedryingredientsinthreeadditionsalternatingwiththebuttermilk,beginningandendingwiththedryingredients,andmixingeachadditionjustuntilincorporated.Donotovermix.Foldwhippedeggwhitesintocupcakebatterwitharubberspatulaorwoodenspoon.Thebatterwillbesilkyandslightlythick.(Iftherearestillpiecesofbutter-andtherewerein1testbatchforme-again,thisisok.Theywillmeltinsideasthecupcakesbake.Makingthemevenmorebuttery.)
