CATERING HIGHLIGHTS

Four healthy habits can have asignificant impact on the preven-tion of serious disease such asType 2 Diabetes Mellitus, heartdisease or cancer. After a 7 yearstudy of approximately 23,000Germans, researchers from theUS Centers for Disease Controlwere able to conclude that thefollowing lifestyle factors posi-tively influenced quality of life.

The healthy habits were:

1. Never smoking.2. Having a body massindex (BMI) lower than 30.

3. Maintaining a daily routineof moderate exercise for 30minutes.

4. Eating a diet high in fruits, vegetables, whole grainsand low meat consumption.

As the number of healthyhabits increased, the risk ofchronic disease developmentdecreased. Maintaining a healthyweight had the most significantimpact on a healthy lifestyle, fol-lowed by abstinence from smok-ing. Only 9% of the participantsmaintained all four healthyhabits but they were 78% lesslikely to develop a chronic dis-ease than those whose lives werevoid of healthy habits.Several years ago, Food

Service Consultants introducedthe “Healthy Habits” menu pro-gram into school food service. The focus is on food choices thatare reduced in fat and nutrientrich. Certainly this option offersstudents a great start towardhealthy living.

Cor Jesu Wins erinx Tourney

Cor Jesu's Liz Sinclair refused to let her team lose in the finalsof the Nerinx Invitational against conference rival Visitation. With her team trailing midway through the fourth quarter,

Sinclair hit clutch free throws, made an assist that led to a back-breaking 3-pointer and came up with the game-clinching defen-sive stop. Sinclair's 11 points and seven assists led Cor Jesu to a45-42 win."It came down to who wanted it more," Sinclair said. "This is a

good tournament and we played some really good teams. I reallywanted it. We all really wanted it."Sinclair hit four consecutive free throws to erase a 40-38

deficit. Then, with 1:30 left, Sinclair drove the lane and dished toa wide open Audra Horn, who drained the 3-pointer for her onlybasket of the game to make it 45-40 Cor Jesu."We like it when (Sinclair) has the ball in her hands at the end

of games," Cor Jesu coach John Neff said. "She makes very smartdecisions and she handles the ball so well."After cutting it to 45-42, Visitation got the ball back with 25

seconds left. But Sinclair was there again, blocking MartaNowogrocki's shot to secure the victory.Cor Jesu's Meg Riley, who scored 13 points and grabbed 8

rebounds, said defensive adjustments were the key. "When wewere in the zone, they were shooting over it and they have reallygood shooters," Riley said. "Going to a more aggressive man real-ly helped."Cor Jesu (5-0) jumped to an 18-8 lead after the first quarter. The

Chargers went seven for 10 from the floor, including three of fourfrom 3-point range. But Visitation (3-1) ratcheted up its defense in the second quar-

ter, holding Cor Jesu to just three for 13 from the floor, to helpmake it 27-24 Cor Jesu at halftime."We were playing a couple of different zones and we switched

to a man," Visitation coach Paul Stoecklin said. "We made a nicerun to get back into the game."Visitation took a brief 30-29 lead midway through the third on

a Courtney Young 3-pointer. But Riley finished the quarter withconsecutive baskets to give Cor Jesu a 35-32 lead.Lydia Harlan brought Visitation back in the fourth. Harlan

drilled a 3-pointer to tie it at 38-38 and then scored a basket off ofa steal to give Visitation its last lead at 40-38 midway through thefourth. Harlan finished with 13 points.

CBC Wins Class 3 State Championship

For CBC's Jake Bond, it was the perfectfinish to an emotional junior soccer season.Bond came off the Cadet bench to score the

lone goal as the Cadets defeated St. LouisUniversity High 1-0 in the Class 3 champi-onship game at Anheuser-Busch Center."Not a likely goal-scorer, but he was the

right guy at the right place and he made themost of it,'' CBC coach Terry Michler said."He lost his mother (Mary Ann, to cancer) inAugust, just before the start of our games, soI'm really happy for him.''With about 11 minutes to play in the first

half, Bond received a pass from senior reserveVic Lombardo and scored on a rising shot tothe short side."Vic did a great job of getting me the ball,''

Bond said. "It seemed like the goalie was lean-ing a little, and I hit it well. I definitely felt mymom was with me tonight. All this was forher.''With the victory, CBC (26-4-3) wins its sev-

enth soccer title and the sixth under Michler. So what does six titles mean to the win-

ningest high school soccer coach in America?

It means his teams are .500 in championshipgames."I'm even now — six wins, six losses,'' he

joked. "Seriously, each one is special becauseeach one involves a different group of kids. For this group, it means an awful lot becausethey were anointed as champions before theyever played a game this season. They workedtheir way to the top, dropped off a little andthen found a way to get back to the top."We played a perfect game tonight. In terms

of what we had to do in order to win, I couldnot have asked for any more than we got fromthese guys. We made a few moves and wecompletely shut down SLUH. And we wereable to do it without having to compromise inwhat we were trying to do in terms of theattack.''CBC was in control from start to finish, get-

ting superior play from seniors Sam Carenza,Austin Tierney and Sean Kuster. The loss ended SLUH's season at 21-7-1."We got beat,'' Junior Billikens coach

Charlie Martel said. "We got outplayedtonight. They were stronger, they were fasterand they were the better team. Give all thecredit to CBC, but I also want to say howproud I am of our team.''Martel said that CBC's tight marking on

SLUH's outside midfielders all but eliminatedthe Junior Bills' attack. SLUH's only real scor-ing chance came with just under 28 minutes toplay as Matt Reda's shot from the left side ofthe box bent just past the far goal post.CBC keeper Drew Duncan posted the

shutout without recording a save. The third-place game, between Hickman

and Park Hill, finished in a 1-1 draw.

defended its South Side Classictitle with ease. The JuniorBillikens opened the title gameagainst St. Mary’s with analley-oop dunk and never lookedback in their 52-36 victory atDuBourg. “We felt pretty confident,”

SLUH senior guard Tim Cooneysaid. “We feel we have apretty good team with all theseseniors.” Cooney lofted that game

opening alley-oop pass to seniorforward Mike Butler for theflush. The long, athletic Butler, all 6-foot-6 of him, can flat outjump. He’s not too bad awayfrom the basket either as heflashed an excellent jump shot.He led the Junior Billikens with14 points while throwing in fiverebounds and a block. Teaming him with fellow

6-6 senior Andrew Ostapowiczand then throwing 6-8 Mogbol-uwaga Oginni, a guy coach JohnRoss said might be the fastest onthe team, SLUH had more sizethan St. Mary’s could handle. The Dragons (2-1) don’t have aman on their roster listed over 6-2 and, as the game wore on, itplayed into SLUH’s favor. “They kind of wore us down,”

St. Mary’s coach Ed Perniciarosaid. “They’re a good team.” St. Mary’s sophomore point

guard Jonathan Connelly ledthe team with 18 points andwas dynamite breaking downSLUH’s defense as he penetrat-ed to the rim for high percentagelooks.“We tried to put some size on

him and make him drive,” Rosssaid. “He’s tough to defend.” Ross said that his team was

happy to open the year with achampionship. Playing in theSouth Side Classic puts SLUHunder some pressure to win. “We’re the biggest school so

we have a target on our backs,”Ross said. “We get the best outof everybody.”

Soccer Hall of FameChristian Brothers College (CBC) and Saint Louis

University (SLU) graduate Don Doran, 55, recently wasinducted into the St. Louis Soccer Hall of Fame.“I was very proud to be going into the Hall of Fame,” said

Doran, who was a defender. “They have a lot of big names inthere. These guys were among the best players and coaches inthe country.”Doran did not play at CBC but played club soccer for Kutis.

He became the first walk-on to play at SLU. In 1977, the St.Louis Stars of the old North American Soccer League draftedhim and he then played for the St. Louis Steamers in 1979-80.In 1980, the California Sunshine of the American SoccerLeague (ASL) drafted him and he then played for the LosAngeles Lazer in 1982-83.“I was drafted to go to California and thought I would be staying nine months and I ended up

staying 25 years,” said Doran, who moved back to the St. Louis area two years ago.Doran has played with many other teams over the years.“Soccer is still part of my life,” Doran said. “I just keep raising the age requirement.”Doran started an over-50 league at Scott Gallagher in Maryland Heights.“A lot of Hall of Famers participate in it,” Doran said. “We started with six teams and 80

players, and I think it will keep growing.

Students at Ascension School in Chesterfield gotan early Christmas present this year, when theschool recently opened a new technology lab.Late last month, the school held a ribbon cutting

and blessing of the Smith Technology Room, which features a Promethean interactive white-board and 30 new Dell computers. The project costabout $38,000, and most of the funding wasraised through a trivia night held at the parishearlier this summer. The effort was coordinated bya technology committee made up of school parents. The lab will be used with all 470 students in

Kindergarten through eighth grades, said principalCathie Wayland."The classroom is one that all of the teachers can

access and use with their curriculum," she said."Our original lab could only hold half of a class ata time. Before, we could never take an entire classat one time. So this is a new step for them."The whiteboard, said Wayland, includes equip-

ment that allows students to interact with what theteacher is presenting on the board. The school's Spanish teacher, for example, can

use the whiteboard to have students match Spanishwords with pictures. The teacher also can ask ques-tions, with the students responding using special-ized handheld equipment."We can use this in every single subject area,"

said Wayland. "We want to make learning excitingfor the kids, rather than just always reading out of atextbook."

The Visitation Christmas Tournament has become JazminHitchens' personal playground.Hitchens, a 5-foot-11 forward for Incarnate, poured in a

game-high 25-points to lead the Red Knights to a 57-51 winover conference rival St. Joseph's Academy in the championshipgame Sunday. Afterward, Hitchens was named tournament MVP for the sec-

ond consecutive year. "We love the Visitation Tournament," Hitchens said. "Just

knowing that so many locals and your friends and family arewatching makes it easier for me to get it done."Hitchens' 3-point play with 2:11 left in the fourth turned the

game. Hitchens swooped in to grab an offensive rebound andwas fouled. The play ended an 8-0 St. Joe's run and swung themomentum back to Incarnate's favor."She just makes so many things happen offensively, defen-

sively and in transition," Incarnate coach Dan Rolfes said. "Shegets you a ton of extra points with steals that you don't count onin a regular possession."Hitchens' play turned the rest of the game into a free-throw

contest. Again, advantage Incarnate (11-0). The Red Knights hit18 of 23 free throws for the game, while St. Joe's went 12 for 16from the line.St. Joe's (7-1) led for most of the first quarter after Sydney

Stipanovich started the game with two consecutive baskets. ButIncarnate finished the quarter on a 4-0 run, capped by a Hitchensbasket that gave the Red Knights their first lead at 14-13 withfive seconds left in the quarter.St. Joe's went on an 11-2 run to take a 26-20 lead in the sec-

ond quarter, but a late 3-pointer by Julia Kohnen cut the Angels'lead to 26-25 at halftime.Incarnate turned up its defensive intensity in the third, forcing

six St. Joe's turnovers to spark a 13-2 run that gave Incarnate a42-32 lead."We just didn't execute as well as we should," St. Joe's coach

Julie Matheny said. "For that, you've got to give credit to theirintensity on defense."Maddie Stock led St. Joe's with 19 points. Morgan Stock

scored 13 and Stipanovich added 10.Chloe Nelson scored seven of her 10 points for Incarnate dur-

ing the third-quarter run."At halftime, we went over how we needed to rebound, our

rotations on defense and how to get out on their shooters,"Nelson said.It was the sixth time Incarnate has won the Visitation cham-

Tina DeBarry hit a pair of free throws with 46 secondsto play to break a tie and help DuBourg to an exciting 47-44 win over Notre Dame in the championship game of theSouthside Classic late Thursday night at Lutheran South. The second half featured 12 lead changes with the

biggest lead by either team being four points. The pointwhich turned out to be the game-winner was a banked freethrow by DeBarry. The senior was clean with her secondattempt and Caitlin Regan added another free throw with24 seconds for the final margin.DeBarry rebounded a missed 3-pointer by Michelle

Auer in the final seconds."We are still learning how to win," said DuBourg Coach

Matt Bolger, whose team finished over .500 last year afterwinning just one game two years ago. "Beating a team likeNotre Dame, which has won several district titles recently,is a great stepping stone for us. We had some seniors stepup and we showed a lot of resilience after Tiara(Fitzpatrick) went out."Fitzpatrick, a talented freshman, injured her knee last in

the first half. Fitzpatrick had helped the Cavaliers to aquick 8-0 lead but that was gone by early in the secondquarter as the Rebels went on a 10-point run, keyed by theoutside shooting of Auer.Auer had a steal and lay-up at the buzzer of the first half

to give the Rebels a 21-20 halftime advantage. It was back-and-forth from that point on.Auer, who was named to the all-tournament team as was

Sam Goodman of the Rebels, had an outstanding game forNotre Dame. She hit six 3-pointers and led all scorers with23 points. She was the only Rebel in double figures as Notre Dame

struggled mightily from the free throw line, converting justfive of 14 attempts.DuBourg's Jamie Buehrig dominated the inside and led

the Cavaliers with 17 points, 12 of them coming in the sec-ond half. She made the all-tournament team as didDuBourg sharpshooter Taylor Brachbill, who hit two key3-pointers in the second half Thursday.

“Big Losers”8,600 hours of exercise, 1,000 miles of cardio, and 350 pounds lost…All in just over two months

"My 47 years as an SSND have been a gift," said SisterKarl Mary Winkelmann, summing up her vocation as aSchool Sister of Notre Dame, a vowed religious dedicatedto Catholic education.Sister Karl Mary, 67, is the president of Trinity Catholic

High School in North St. Louis County, an area she hasserved for more than 30 years. She said the roots of hervocation began in her childhood."My parents, Karl and Elizabeth Winkelmann, laid the

foundation of love of God, family and others," she said.Baptized at St. Boniface Church in South St. Louis, shegrew up in Mattese, an area of South County. She called theSisters of the Most Precious Blood of O'Fallon atAssumption Grade School and the School Sisters of NotreDame who taught her at Notre Dame High School rolemodels."Three sisters in particular intrigued me and influenced

me because of their commitment, caring and unique spiritthat now I know was the presence of God. I will alwaysremember Sister Ann Clare, my first grade teacher, SisterFrancine and Sister Mary Ann Eckhoff (a School Sister ofNotre Dame and former archdiocesan superintendent ofCatholic education), who became my mentor as an educa-tor."Sister Karl Mary stressed, "In the final analysis it is peo-

ple who became God's skin for me and led me to my voca-tion."Although she originally wanted to be a Maryknoll sister

and go to foreign missions, "that idea quickly faded," shesaid. But her goal of "wanting to make a difference"remained. In 1960, after graduating from high school,Sister Karl Mary entered the School Sisters of Notre Dameand professed her vows in 1962. She earned a bachelor'sdegree in English, with a minor in Latin, from Notre DameCollege in St. Louis in 1964.She soon became a teacher at Rosary High School in

Spanish Lake, where she taught English, Latin and religion. It was the beginning of many years of service to Catholiceducation in North County."I can still remember my first week of teaching Latin at

Rosary in 1964. In a telephone conversation with my dad, Icommented I wasn't sure I could do this. His answer was,

'Give it time. You will be fine!' (And) I was fine."In 1970, after earning a master's degree in administration

from Southern Illinois University-Edwardsville, Sister KarlMary became the principal of Notre Dame High School inQuincy, Ill. After serving eight years there, she returned toRosary High School as principal.Sister Karl Mary led Rosary for 18 years, until her

appointment as archdiocesan associate superintendent ofCatholic education in 1996, a post she held for four years. Then she happily returned to Rosary as principal. In 2003, she helped during the merger of Rosary and St.

Thomas Aquinas-Mercy High School in Florissant. Thenew, merged, archdiocesan high school became TrinityCatholic High School, on the site of the former RosaryHigh, with Sister Karl Mary as president."My passion is to provide quality Catholic education for

as many teens in North County as possible. My strongbelief is that quality education can transform the world.Catholic education can do just that at Trinity," she said.A dedicated educator, Sister Karl Mary is also strongly

involved in the North County community. She is a memberof numerous community groups, including North CountyInc., Florissant Valley Chamber of Commerce and theSpanish Lake Community Association. In September 2009, she was a recipient of the Cardinal

Rigali Award, awarded annually to Church employees andvolunteers for outstanding service to the archdiocese, parishes, schools and agencies.Looking back on her years as a School Sister of Notre

Dame, Sister Karl Mary said, "Forty-seven years seems likea long time, and yet that is hard to believe. I have noregrets. Oh, there were challenges, but I am so grateful forthe gift of my vocation and through it, the outstandingpeople I have met over the years."

A new initiative at MBU is encouraging faculty and staff to gethealthy. By the summation of its results, the plan is working.

Karen Avila had been waiting for a reason to lose weight. She, along with nearly 70 other MBU employees, found it thispast summer. The University kicked off a comprehensive health program

called Way of Life. The goal: to simply improve the quality oflives of those who work at this institution by encouraging alife lived well.

The multi-faceted initiative covers the gamut of ways toincrease healthy living, from an aerobics class over the lunchhour to its flagship exercise and weight loss competition.During the first session of the program, which began in Mayand ended in August, participants logged more than 8,600hours of workout sessions, 1,000 miles of cardio exercise and350 pounds of weight loss. The program is continuing yearround on a quarterly basis.

It was the competition part of the program that promptedAvila, an assistant manager in the MBU Café, to stop living asedentary life and start including healthy options in her diet."For a long time, I've wanted to get healthy, but I just could-

n't do it on my own," Avila said. "When I joined my team, Isaid, ‘I am not going to be the one who doesn't pull my fairshare.'"

The summer-long competition pitted 17 teams of fiveagainst each other. The teams, among other things, reportedweekly their time spent exercising. Participants of the pro-gram also weighed in at the beginning of summer and again at

the program's conclusion in August. Each team's percentage ofweight loss was tallied at the end of the program, countingtoward the overall results. The program also included month-ly meetings, called Healthy Hour, that included topics such asfitness plans and healthy eating.

"The goal of the program is to simply provide our facultyand staff with some of the resources to live well," said SusanRutledge, coordinator of the program and assistant to thepresident. "The goal is that the initiative will cause people toexamine the way they live and, hopefully, make completelifestyle changes."It is apparently working for Avila. Shortly after the program

began, she began daily walking around the University's cam-pus.Before too long, she expanded her jaunt to include some of

West County. She coupled her exercise with healthier eatinghabits, which can be a challenge considering her occupation. Before too long, she could tell a difference in the way she

felt. On the final weigh-in day, her feeling was validated. Avilahad lost 24 pounds within three months.Since the program ended in August, Avila has continued to

walk everyday-without exception. Just as impressive, she'scompletely cut out fried foods from her diet.

Despite her dramatic results, Avila's team didn't win thecompetition. For her, though, she won a far greater prize."The program gave me the push to become a healthier indi-

vidual," she said. And that's the goal.

A 'Gift' From God

Fifth Graders Learn Valuable LessonFrom The Tango, Fox TrotBy Heidi Glaus KSDK For 10 weeks, the fifth

graders at St. KatharineDrexel, Our Lady ofGuadalupe and St. FrancesCabrini have been taking

dance lessons and have learned about respect. Step into any gym on game day and you can feel the excite-

ment. You know who you're rooting for and if you're about tostep on the floor, the butterflies are fluttering. "Well, it was kind of scary at first, but also kind of exciting,"

explains Anna Klezorn, a fifth grader at St. Katharine Drexel. On this particular day, however, the competition is also a

showcase."The swing, the rumba, the tango, the myringa, did I say

swing already?" asks Cierra Simon as she goes through thedances she's learned. For 10 weeks, the fifth graders at St. Katharine Drexel, Our

Lady of Guadalupe and St. Frances Cabrini have been learningto shake what they're mamma gave them. It's something these kids obviously have taken very seriously,

but on day one, there was a lot of giggling and plenty of strangelooks. "The first day we were in dance frame position, we were like

oh and then we got used to it," says Khyla Davis Johnson, a fifthgrader at Our Lady of Guadalupe.

That doesn't mean on thisday they were absolutelythrilled about it or that theywill all keep dancing."I'm done with dancing,"

says Grant Greenwood ratheremphatically. But there's no question the

program taught them exactlywhat it was intended to."How to respect myself and others," says Anna Klezorn."Respect because if you don't want to dance with the person

you still have to, you have to say thank you and twirl them whenyou're done," adds Luis Mora."To be respectful to other people," explains Cierra Simon.

"You might not like them, but you still have to be respectful andsay may I have this dance, thank you and all of that."It is a lesson these kids

will use throughout life butfor the record, GrantGreenwood is definitely donewith dancing."Yes I am!" Grant says one

more time.

Belief IsAll You

Need

A man was lost while driving through the country. As hetried to read a map, he accidentally drove off the road intoa ditch. Though he wasn’t injured, his car was stuck deepin the mud. So the man walked to a nearby farm to ask forhelp.“Warwick can get you out of that ditch,” said the farmer,

pointing to an old mule standing in a field. The man lookedat the haggardly mule and looked at the farmer who juststood there repeating, “Yep, old Warwick can do the job.”The man figured he had nothing to lose. The two men andWarwick made their way back to the ditch. The farmer hitched the mule to the car. With a snap of the

reins he shouted, “Pull, Fred! Pull, Jack! Pull, Ted! Pull,Warwick!” And the mule pulled the car from the ditch withvery little effort. The man was amazed. He thanked the farmer, patted the

mule and asked, “Why did you call out all of those othernames before you called Warwick?”The farmer grinned and said, “Old Warwick is just about

blind. As long as he believes he’s part of a team, he doesn’tmind pulling.”
