CFC Chocolatier Celebration “O” Single Origin Selections “Celebration O” O is for Origin but also for world of flavor. Chocolate grows complete circumference of earth within 20 degrees of the equator, hence full circle! The focus is on the ganache filling for each country of origin. Each origin has its very own distinct flavor profile partly due to soil and climatic growing conditions; the rest is due to the actual cocoa tree varietal. There are three main types of cocoa tree; Forastero, Criollo and Trinitario (a highbred blend from the other two varietals). Each origin has been carefully blended with cream to form a velvet smooth ganache balanced with the addition of wild honey, Madagascan vanilla & Tahitian vanilla seed. Dominican Republic 31 The depth of flavor developed from the cocoa butter offers character as if a milk chocolate. Costa Rica 38The slightly roasted cocoa aroma embedded deeply within the body of this chocolate is a real treat for connoisseurs. While being caressed by this creamy chocolate you feel the tickling of olive and clove and the warmth of wood on your palate.  Venezuela 43A dominant cocoa palette with an overall impression of roasted beans. This combined with a strong accent of nuts, impregnated with vanilla and caramel, results in an exquisitely unique milk chocolate.

Vanuatu 44 An excellent chocolate bouquet lingers on the pallet without an edge of bitterness. Subtlety reveals hints of earth, mineral and spice enhanced by the vanilla. A unique cocoa experience from this Island located between Australia and the Fiji Islands.  Costa Rica 64A robust dark chocolate with a taste enhanced by the exquisite bitter cocoa aroma. An overall delicate smoky and woody bouquet ensures that this chocolate maintains its own individualism and character. Papua New Guinea 64Distinct tones of whisky and smoke, combined with an acid cocoa taste, create the body of this chocolate. A bouquet of tobacco and a sheer touch of mushroom give this origin chocolate a sensational, almost sensuous taste.   Peru 64A delicate bitter cocoa taste with a fresh fruity note, accentuated by a bouquet of dried fruit, makes this chocolate an unforgettable sensation.  Ecuador 71The exceptional fine flavor and rich aroma of Ecuador’s ‘Cacao Nacional’ is the main characteristic of this origin chocolate. This high cocoa content chocolate distinguishes itself by its softness and subtle aromas. A complex cocoa taste with a delicate bouquet of flower and a hint of earth gives this chocolate the finishing touch.

Uganda 80 A deep cocoa aroma opens immediately with earth and mineral tones, hints of fig and olive delightfully balanced in the background. In addition an undertone almost resembling that of port wine generated from the cocoa’s complex acidity. One might anticipate bitterness from such a high cocoa content yet the powerful cocoa aroma remains smooth with a long finish; perhaps an attribute linked to a well balanced conching period. Excellent chocolate experience!
