Makes about 6 cups
Ingredients Zest stripped from 2 pounds of scrubbed lemons
4 cups of unflavoured vodka
3 cups of sugar
3 cups of water
Instructions This Italian digestivo looks and tastes like
sunlight. Though enjoyed throughout Italy, it
is relatively unknown here. That's too bad.
And it is one of Hamish's favourites, and it is
quite delightful. One sip and you will become
a proponent too. If you make Limoncello in
March, it will be ready for Waster and Mother's Day celebrations.

SIT AND SIP LIMONCELLO
Put the lemon zest in a large bowl and pour
the vodka over it. Cover the bowl and let
stand for 1 week at room temperature.
In a large saucepan, combine the sugar and
water and cook over medium heat, stirring
until the sugar dissolves. Remove from the
heat and let cool to warm. Add to the vodka
mixture and stir well. Strain the liquid into
sterilized bottles, seal and refrigerate for at
least 1 month or up to 1 year. Serve very cold
in small glasses.
