– must not have too much sugar or chips will be dark after frying

– potatoes build up sugars if they are stored below 60oF

• Potatoes are washed to remove soil• Potatoes are peeled

– mechanically by rubbing against a rough surface but does not remove all the peel unless a large amount of potato flesh is removed

– chemically by dipping in strong alkaline solution such as sodium hydroxide

– this removes peel in crevices but creates waste that is expensive to dispose of
