Hotel Management (Swiss Hotel Association), the first ever degree to which this association has agreed to attach its name.

Ahead of their time, our founders foresaw exploding growth in Asia, and that hospitality education in the region would be required to underpin the growth of Asian travel and tourism. They referred to the project as the Asia Pacific Basin Swiss Hotel Association International College of Hotel Management.

ICHM started in 1993 with 47 students from around Australia and 10 other countries. Since then, more than 2000 young people from 82 countries have come through our doors to fulfill their aspiration to excel in an international career.

Sure enough, over two decades a large number of our graduates have gone on to great things, in hotel management or in a hospitality-related field. And yet others have gone on to quite different careers.

You’ll read about some of them in this publication, which pays tribute to all those who have played their part so enthusiastically in making ICHM such a very special place—graduates, students and the families that support them, staff, industry and academia.

This publication is inspirational proof of intelligent people coming together to turn a good idea into reality so that young people get to soar.

It celebrates our past and our future.

Gerald Lipman Chief Executive

There are some people who just can’t let a good idea go. Dr Rex Lipman AO is one of them.

Twenty or so years ago, Rex discovered that the Swiss Hotel Association was casting about for a location for a hotel school in the Southern Hemisphere. With typical foresight, he set his mind on it being Adelaide.

The South Australian Government, the Swiss Hotel Association and the Lipman family signed the agreement that brought ICHM into being on 30 September 1992. It was a triumph for the then 70 year old.

Unlike today, back then hotel management was little known as a profession in this part of the world. So ICHM began with a dual marketing role: to establish hotel management as a profession and ICHM as the college to go to.

The Swiss education and training model—a 50:50 balance of on-campus study and industry placement—was based on theoretical grounding backed by practical hands-on training and industry readiness.

The Swiss were recognised for the highest standards; average was not good enough. Ahead of their time, they understood that a strong foundation in business management was critical, covering finance, information technology, marketing, human resources and organisational management and strategy.

The formula has stood the test of time. Serendipitously, in the same year ICHM welcomed its first students, the Swiss Ecole Hôtelière de Lausanne celebrated its first 100 years.

This depth of ‘Swissness’ is what sets ICHM apart from any other hotel school in the region. And its continuance is reflected in the recently introduced Bachelor of International

2008ICHM Founder Dr Rex Lipman awarded Officer of the Order of Australia by the Australian Government. Twenty-two Year 3 and Year 4 students fly to Sydney for the Association of Australian Hotel Schools Career Fair, with eight taking up job offers. Graduate Kristian Livolsi named ‘Young Achiever 2008’ by Restaurant and Catering Australia.

2010Total scholarships provided exceeds $2 million. ICHM wins National Tourism Award.

1996Australia’s Best Industry Trainer Tourism Award Inaugural Graduation Ceremony.

2012Total ICHM program delivered within the Higher Education sector. In a world first, ICHM approved to deliver Bachelor of International Hotel Management (Swiss Hotel Association). Southville Foreign University in the Philippines approved to deliver ICHM’s Bachelor degree.

10 things we love about ICHM

1 Network, network, network! It’s no surprise that the catchphrase network, network, network! is instilled from day one. It comes into

action on campus and occurs at ceremonies and more formally when top industry professionals come to campus to share what they know . . . and recruit. Of course, many are graduates who either head up or are in positions of influence in some of the most world’s most prestigious properties. Web-based social networking doesn’t replace the concept; it just adds a whole new dimension.

2 The program It bears repeating: our 50:50 mix of on campus study and industry placement has endured for more than a

century as the model for quality management education and training that is industry relevant. But we have never rested on our laurels and have worked to evolve our program over time to keep on improving the quality of the ICHM experience and, ultimately, the success of our graduates. The two degrees introduced in 2012 are recent examples.

3 Swissness The superior quality of the Swiss is legendary: think watches and chocolates. Switzerland has also been

famous for its quality tourism experience since the birth of tourism in the mid-19th century, with the word spread by some of the world’s great writers. In the 1890s the Swiss Hotel Association (SHA) opened the first hotel school to develop staff to grow the industry’s future. Let it be said we are proud of our Swiss heritage; proud to be offering the first degree the SHA has laid claim to; and proud that we remain today the only school of this famed association outside Switzerland.

4 Internationalisation From day one, our students from around the world and throughout Australia come to us with one thing,

principally, in common: to achieve an international career. By necessity, then, we have always been international—in name and by nature. Over the years it’s a concept that has evolved, and today internationalisation is intrinsic to our set of graduate qualities, attributes we look to develop above and beyond knowledge-based outcomes. ICHM’s membership of EUHOFA is another reflection of this focus, and both the Chief Executive and Principal have served on the board of this international association of the world’s leading hotel and tourism schools.

5 Regency International House Ruled over by the fair but firm hand of Irene Ninnes, Regency International House is a home-away-from-

home halls of residence for the majority of ICHM students. It’s a place where memories are made. The first 120 students moved into the villa-style accommodation in 1995, and that number grew to 168 with expansion in 1999. The active Student Representative Council has its meetings there, making continuous improvements to campus life.

6 Camaraderie We’re not sure where it begins, but we do know it never ends. The friendships formed at ICHM are the kind

that last a lifetime. We think these bonds are informal in nature; however, they may start during more formal activities, such as Adventure Day or at any one of a number of on-campus activities organised as antidotes to long hours of study. Our graduates may be an ambitious lot, but they keep in touch out there and look out for each other. Many have proven that their next career move comes down to simply picking up the phone.

7 Ceremonies Of the three ceremonies conducted each year, if End of Course and Graduation are the most satisfying

then Course Commencement has to be the most fun. This is the occasion at which new and returning students are welcomed and everyone gets to be on the receiving end and taste hospitality for a change. Dress up is essential of course, because students get to strut their stuff at a cocktail party following the formalities, with the evening culminating in local pub fun for those with the stamina and wherewithal to keep going.

8 Career success We proudly present a snapshot of graduates in this publication (see pages 6&7), who we don’t believe we’ve

given mention in our On Course magazine, as we have so many others. They too are bringing a whole new level of professionalism to not only hotel management, but also as you’ll see to the many and varied fields in which they have established as high fliers. Whatever, we are blown away by the sheer number and nature of graduate success stories, with the main question for many being: ‘London? Shanghai? Dubai? Just where will I take my career next?’

9 Enviable destination In 2012, the Economist Intelligence Unit’s Global Liveability Survey ranked ICHM’s home base, Adelaide,

as the fifth most liveable city in the world. Education is one of the scoring criteria, along with political and social stability and crime rates. And New Yorker magazine once called Adelaide ‘the last well-planned metropolis on earth’. With a little over one million people, it’s big enough to offer sophistication, but small enough for the peace and quiet essential for serious study. Wide sandy beaches are on the doorstep and premier wine-growing regions are within easy distance by car. It’s best to ask on campus about night life!

10 Adventure Day It started at the Adelaide Hills home of the then Principal Dan Edmonds and his wife Jill. It’s still in

the hills, but more recently at an outdoor centre run by a professional team. Adventure Day is an important part of Commencement Week, where new students take on team-building activities, helped along by senior students, staff and their families and friends. In 2007 the day was made even more special when Australia’s then Foreign Minister, the Hon. Alexander Downer, dropped in.

About the position: The Strategic Development of the AHL Hotel and Resorts network and the AHL Cinema Brands in the Middle East. Brands include: Rydges Hotels & Resorts, QT Hotels & Resorts and Event Cinemas.Involves working with owners and investors to develop hotel and resort projects with a view to entering into management agreements.

Most notable success: Looking after one of the key Olympic partner companies during the Sydney Olympics at the Sydney Hilton.

The plan: Continue in the industry and explore the hotel development career path, as well as keeping in touch with ongoing changes and improvements in the operation of hotels and resorts worldwide.

ICHM is. . . a tremendous experience, preparing you for the industry globally, with world-class lectures teaching the finer aspects of hotel operations. Importantly, ICHM also prepares you with the essential management skills, such as strategic planning and reporting, critical to senior management roles.

Most notable success: Paul says his journey and growth since moving from Varsity College in South Africa to study at ICHM has been marked by solving problems and creating solutions, based on the comment of a former manager to, ‘watch for big problems; they disguise big opportunities’.

Career path to date: A career characterised by an upward trajectory, starting with a six-month Food & Beverage traineeship at the Hilton Durban. Positions that followed: Porter, Centra Melbourne and Landmark Parkroyal; Sales Associate, Hilton Sydney; Business Development Executive, Crowne Plaza Darling Harbour; Business Development Manager, Holiday Inn Central Cluster Sydney, Crowne Plaza Darling Harbour and Holiday Inn Cairns: and Business Development Director and Director of Sales, IHG Queensland, Papua New Guinea and Vanuatu.

Year ahead: Launching the first Traders Hotel by Shangri-La into Australia.

Married to: Melissa McMurray (nee Bulan), a former ICHM student.

The plan: onwards and upwards in the industry he loves and serves (much like his wife).

ICHM is. . . an invaluable platform from which to launch a professional career with confidence and aplomb. Its exemplary reputation supports and enhances career progression, with alumni colleagues an an ideal network for creating potential partnerships and sharing successes.

Pingkan Umboh

About the position: Managing Australian–Indonesian government and institutional relationships in education.

Most notable success: Managing high-profile events such as the Australian Alumni Awards, the Australian Embassy’s largest public event in 2008 and 2009, and a number of other events to support science diplomacy, including profiling Nobel Prize winners.

Career path to date: Went on to complete a Bachelor of Business at UniSA and a Masters in Hospitality Management at Griffiths University after graduating from ICHM. Joined Xerox Indonesia as an Accounts Manager in 2000, moving to the Australian Embassy in 2003 as Manager of the Australian Education Centre Jakarta, promoting Australia as a study destination for Indonesians. In 2009, she was promoted to the position of Deputy Director of Australian Education International Indonesia.

Year ahead: To complete her PhD in management (in 2014) and seek opportunities to develop her career in the international education area.

The plan: Wishes to improve the internationalisation of education in Indonesia, to support Indonesian graduates, research and society to be better positioned in a global world.

ICHM is . . . the college that exposed me to the value of service, professionalism and management, through its curriculum and high-calibre lecturers and support staff, as well as its international network. Career path to date: Yen has always been into hospitality, dating back to 2007 while still at school. He studied at YTL-ICHM Malaysia before joining ICHM in 2009, working part time at Adelaide Airport with Delaware North to a supervisory role in various cafes and bars. After graduation, joined Southern Ocean Lodge starting as a Housekeeper. Made his willingness to learn and move forward known, and after seven months was given a chance to work in the restaurant and has never looked back. Working long hours, has gained a reputation as a multi-talented staff member—also putting in time at the Front Desk.

Year ahead: Relishing his chances and enjoying every moment, with the Award providing additional focus to do better, get more involved in all matters at the Lodge and achieve a bigger role in the management team.

The plan: Planning to stay for another year or more and determined to grow within the company.

Most notable success: Design and deployment of a Global Graduate Program for Orica, awarded Finalist (top three) for Best Graduate Development Program in Australia by the Australian Association of Graduate Employers.

Career path to date: Adele was recruited into the Hyatt Hotel’s Corporate Management Trainee program in San Diego, California immediately after graduating. She was recruited as a Rooms Division Trainee, but was transferred to Human Resources within a couple of months because of her keen interest in the sector. She was then posted to the Grand Hyatt Melbourne as HR Officer, before promotion to HR Assistant Manager. She moved to Orica—the world’s largest provider of commercial explosives and blasting systems—18 months later, joining the Human Capital team, responsible for the design and global deployment of the company’s Graduate Program.

Year ahead: Starting a Masters of Human Resources part time.

The Plan: Continue to build and grow capability as a global HR professional, which means continuous learning and a diversity of HR roles to best prepare for an Executive HR role long term.

2008

About the position: Controls, sources and interacts with vendors providing catering and pantry services for Intel across the Asia Pacific region, feeding thousands of microprocessor engineers, administrators and the community within Intel campuses and building offices.

Most notable success: Outperforming financial budgets of each and every Food & Beverage outlet managed.

Career path to date: Very simple, from the lowest position in a hotel as a trainee to a regional Asia-Pacific director.

Luis studied at Les Roches, Switzerland before joining ICHM in 2005 to finish his bachelor degree.

Year ahead: To work extremely hard in an adverse year financially speaking, doing more with less.

The plan: To continue in the Integrated Facility Management field, and diversify to others.

ICHM is. . . a great place. It teaches you: to put yourself in the customers’ shoes, so you can drive your plans and strategies accordingly; and the art of service in the workspace, which means to address customer needs with flexibility and financial responsibility.

Few colleges would have attempted it. But ICHM’s recent transition from vocational education and training to higher education took place relatively smoothly, despite some initial uncertainty brought about by such a massive change. It suggests an experienced hand.

the mAn who DesigneD the ProgrAm

Now into their second year, the Bachelor of Business (Hospitality

Management) and Bachelor of International Hotel Management

(Swiss Hotel Association) are making their mark in every

quarter—on students, in industry and within academia.

The two degrees, one of them a world first, are a significant

milestone. The BIHM SHA (as it is affectionately known) is the

first degree anywhere to earn the imprimatur of the Swiss

Hotel Association.

Dr Whyte was ICHM’s inaugural Principal, and directed the

college with enthusiasm and distinction through its early years.

Recognition came early, when the college took out the state’s

Tourism’s Industry Education Award for three consecutive years

and the national award twice.

In 2000, Dr Whyte left to take up another position in tertiary

education and went on to the University of South Australia’s

Division of Business, responsible for managing the doctoral

programs in the International Graduate School of Business. In

a more recent position, he took the division through its third

iteration of the internationally significant EQUIS accreditation.

Prior to that Dr Whyte was with ICE WaRM, working with five

Australian universities to develop water resources programs

and research in China, the Middle East, India, South-East Asia

and Europe.

In the 1980s Dr Whyte experienced life as a restaurateur in a

number of high-profile establishments, including his own. He

went on to take up various management roles within Regency

Hotel School before making the move across to ICHM.

Throughout his absence, he maintained a keen interest in

ICHM, reconnecting more formally in 2008 as a member of the

Academic Board and advisor to the Chief Executive.

One of his first jobs back as Principal in 2011 was to travel to

Europe with Gerald Lipman, where the pair met with their

Swiss Hotel Association counterparts to thrash out the new

program and, in particular, the BIHM SHA.

The two degrees were subject to a rigorous process of

review, including the Bologna Process in Europe, the

SHA’s Ecole Hôtelière de Lausanne and the Australian

accreditation system.

In developing the qualifications, Dr Whyte drew on the

expertise of international hoteliers, including ICHM’s

Graduates in Industry International Advisory Committee.

‘The contribution of our staff, graduates and industry partners

resulted in new programs that challenge the traditional and

prepare for the future. My experience away from ICHM involved

in other international tertiary business programs also provided a

basis for new thought and approaches’, Dr Whyte said.

The SHA will subject the degrees to a comprehensive audit

process in 2014 as part of quality control built into the program.

the riPPLe effect

Clearly ICHM is contributing more to the city, state and country than quality education for young people. Since 1992, our students and their parents have paid more than $125 million in tuition and accommodation and spent an estimated $250 million on accommodation, entertainment and travel. And then there are our graduates. With strong ties to Australia and Adelaide in particular, they readily promote our country, our state and our produce. For example, a significant amount of Australian wine is being sold through graduates overseas—as sommeliers, in wine sales and as food and beverage managers. We call this the ripple effect. The Rozo family’s story (below) is another example of ICHM’s powerful impact on the South Australian community.

A fAmiLy mATTeR

From South America to the United States and the Middle

East, the road to ICHM has taken the family on a truly

international journey.

When Maria Rozo was introduced to ICHM in 2010 she was at

the American International School in Muscat Oman. She was

excited by its potential.

This led to continued email contact and a family holiday to

Australia the following year. The rest of the family developed

and instant liking for the city, but father Ricardo was

uncertain about job prospects.

Ricardo was a senior employee with an international oil and

gas company and postings had taken his family around South

America and to California and Oman. He didn’t think his

experience would translate to Adelaide, until a fellow worker

in Oman sent him a job advertisement for Australia’s oil and

gas company, Santos.

The message said: ‘look at this posting; exactly your profile in

the city that you love!’

Ricardo had an interview in November 2011 and heard

back less than 24 hours later that he had won the job. The

family was on the plane to Adelaide just one day after Maria

graduated from high school.

‘Adelaide’s a small city; it’s peaceful and you have all the

things you need’, says Ricardo.

Maria says that ICHM is exceeding all of her expectations, and

is a perfect match with her personality and what she wants to

do with her life.

Her first placement after six months of on-campus study was

at Southern Ocean Lodge, the multi-award winning luxury

property on Kangaroo Island, off the coast of South Australia.

With her sister Luisa at University Senior College, her mother

involved in community activities and working on her English

and her boyfriend now studying a Bachelor of Science at

the University of Adelaide, Maria says ICHM and Adelaide is

working out really well for the whole family.

‘It’s been one of our best decisions’, says Ricardo.

AcademiaI joined ICHM’s Academic Board in 1995

(and made President in 1997) when I was

Pro Vice-Chancellor and Vice President of

the University of South Australia, Division

of Business and Enterprise. The Division was responsible

for the development and implementation of the academic

partnership between the two institutions, which continues to

the present day.

The Board was established by the College Council to take

overall responsibility for the academic affairs of the college.

Thus, it has primary responsibility for the maintenance of high

standards in teaching and scholarship, as well as contributing

to academic planning.

In reflecting on my time with ICHM, the college has continually

developed its programs in response to changes in the

marketplace and varying regulatory requirements.

I am proud to say that the Board played a central role in the

academic planning, preparation of documentation and the

securing of regulatory approval for the recently accredited

dual degree program—the core of the future success of ICHM.

Regulation of higher education providers in Australia has

become considerably more complex in recent years, and

ICHM has had to meet strict requirements in the standards

and quality of its programs. This includes the management

of programs offered through international partners and the

industry placement component of programs.

The experience and knowledge of members of the Board,

together with the work of the Chief Executive Gerald Lipman

and Principal Dr Ian Whyte, have been major contributors to

the successful operation of the Board as an interesting and

productive body. Of course, being able to secure the services of

very good people in a range of areas has also been fundamental

to success and, in turn, the continued success of ICHM.

IndustryIn the early 1990s I had been appointed

head of Human Resources for the

expanding Peninsula Group, based in

Hong Kong. These were early days for

ICHM, and out of the blue Rex Lipman made contact. When we

subsequently met, Rex asked two astonishing questions: ‘What

are the Peninsula Group’s needs?’ ‘And how can we help you?’

This was a first for me: a hotel school that saw a hotel company

as its customer! Rex got my attention, and the meeting led to a

fruitful collaboration.

Over the years the Peninsula Group took on ICHM students

for industry placement and I have visited the college on

numerous occasions—for graduations, ceremonies and to

meet with students.

It is easy to recommend ICHM, as I have done to countless

friends and colleagues when their children were looking at

hotel school options.

Both Ian Whyte and Gerald Lipman connect with me several

times a year, and I know they do the same with other industry

colleagues. This alignment with the industry is ICHM’s

strength. It has resulted in cutting-edge and appropriate

curriculum and a reputation for students who are known

for making a difference, and therefore highly prized by

preferred employers.

The hospitality industry is changing faster than many

companies can adapt. China and South East Asia have boomed

in the last two decades and Australia’s hotel sector has entered

a period of rapid growth. Add to this the incredible growth of

outbound Chinese tourism and we have the ingredients for

another 20 years of growth for ICHM. In a world inundated with

gloomy economic woes, ICHM and the hotel industry offer and

will enjoy a glittering and sustainable future.

Through our visits to ICHM my wife and I have developed a love

affair with Adelaide and South Australia, which we regard as

Australia’s best-kept secret.

The SwissThe Swiss Hotel Association (SHA) was

formed in1882 to manage the interests of

the Swiss hotel industry. It opened its first

hotel management training school, Ecole

Hôtelière de Lausanne (EHL) in 1893, laying the foundation for

an international success story that continues today.

A second pioneering event, a century later, was the signing

of the agreement with the International College of Hotel

Management (ICHM) and the South Australian Government.

Since ICHM’s first intake in 1993, more than 2000 students have

been awarded the coveted SHA Diploma, a qualification that

symbolises the quality with which the Swiss training system

has always been associated.

This pioneering spirit and consistent quality of the Swiss

formed the guidelines for ICHM’s founding fathers, in particular,

Dr Rex Lipman.

The education and training landscape in Europe shifted

significantly from 2000 in the wake of the Bologna Process

and reforms to higher education. As a result, EHL evolved into

a university of applied sciences—the only one of its type in

Switzerland; and the Thun Hotel School, which opened in 1987,

implemented a new three-year general syllabus.

In Australia, with Gerald Lipman at the helm, ICHM introduced

the changes to fit this new landscape and retain the ‘Swissness’

of the original training model.

The new ICHM program is decidedly futures-oriented

and international in outlook, with the way now open for

appropriately qualified students to take up the fourth ICHM year

in Adelaide, culminating in a SHA Bachelor degree. Additionally,

language permitting, third and fourth year ICHM students can

now do their industry placement in a Swiss hotel.

That 20 years after signing the agreement it is possible to

award successful graduates the first SHA Bachelor Degree is a

particularly historic event. The SHA looks forward to continuing

its productive partnership with ICHM over the next 20 years.

We close where we began, with our Swiss connection.

ICHM is the only Swiss Hotel Association school in the Southern Hemisphere, connecting our students with a rich European heritage in the service and hospitality industry.

The Channe—awarded to our top academic students each year—is a symbol of this special relationship.

The Channe dates back to at least the 15th century when it was widely used as a wine pitcher. It was seen as an up-market way (in preference to a wineskin) of carrying wine to the table from wooden storage barrels. It is also a Swiss tradition to use the Channe as a gift or award at a time of celebration.

Known in French-speaking Switzerland as Pichet à Vin or Channe and in German as Kanne or Zin (pewter) Kanne, the Channe comes in various shapes that signify their region of origin. ICHM’s Channe, with its distinctive ram’s head lid, is typical of the Valais region.

Today the Channe holds a special place in the history of ICHM and in the hearts of our students, especially those awarded it each year.
