Ingredients:

16 vanilla wafer cookies

2 (8oz) pkg cream cheese, softened

3/4 cup sugar

2 eggs

1 teaspoon vanilla extract

Directions:

Preheat oven to 350. Line muffi n pans with cupcake paper. Place one wafer cookie on

bottom of each cupcake paper. In a medium bowl, cream together cream cheese and

sugar. Beat in eggs and vanilla until smooth. Pour over wafers in cupcake papers. Bake

for 15 minutes or until set. Cool. Top with chocolate chips, caramel sauce, or fruit pie

fi lling of your choice.

CHEESECAKE CUPS

Directions:

Line cookie sheet with parchment paper and

set aside. Place sugar, milk, cocoa powder

and butter into a large heavy saucepan. Stir

over medium heat until well combined. Turn

heat to high and boil rapidly for 1 minute

and take off heat.

Add vanilla, rolled oats, coconut and marsh-

mallows. Stir until marshmallows are melted.

Drop using a tablespoon on cookie sheet,

rough shaped into a round cookie. Chill in

refrigerator for at least 1 hour, remove

from sheet and store them back in the

EASY IDEAS FOR HOLIDAY WREATHS

Bake it

Merry

Wreaths are synonymous with the holiday season, and

they can range from intricate to simple to fl ashy to

rustic. Creating festive wreaths does not

necessarily require a lot of skill, and wreaths can be

fashioned from a variety of different materials.

The fi rst step to crafting wreaths is to gather the

foundation pieces. This usually involves a sturdy

material that will serve as the wreath round. It can

be vine, foam, branches, or even wire. You’ll also

need decorative items that fi t the theme of your

wreath. These may be berries, ornaments, ribbons,

bows, and other trinkets that will be attached to the

wreath. Florist wire and tape can be used to attach the

ornaments to the wreath.

“Say cheese” wreath

Purchase a premade evergreen wreath or wrap

boughs of pine around a wreath frame to make your

own. Glue or tie on small wooden frames with photos

of the family to the wreath. Fill in the barren spots

with small bows and ornaments.

Fruitful wreath

Instead of an evergreen wreath, create something

festive and edible. Fruit and vegetables in vibrant

colors can be used to fashion a wreath. Use picks or

wire to attach oranges, lemons, limes, clementines,

and any other produce desired to a foam wreath. Use

leaves to fi ll in sparse areas and a thick ribbon to hang

the wreath.

Holly vine wreath

Purchase a plain grapevine wreath and decorate it

with sprigs of holly leaves and stems with berries.

Simple and festive, this wreath should take

only a few minutes to make and then hang.

Metallic wreath

Add a glamorous touch to an evergreen wreath

with faux fruit and pine cones that you paint with

glimmering metallic colors. Intersperse items in gold,

copper and silver for an eye-catching piece that can

adorn any spot in your home. Add a few twinkling

lights to refl ect off of the metallic elements to add

even more appeal.

Bells or glass ornament wreath

Use fl exible wire to string a wreath of metal bells or

glass ornaments together in a ring shape. Bells not

only look nice but also lend a gentle twinkling sound

anytime the door is opened.

Floral wreath

Make a fresh fl ower wreath from a fl orist’s wreath

and fresh blooms. Soak the foam wreath in water

according to the packaged directions. Trim fl ower

stems (carnations are durable) and insert the stems

into the wreath. Attach a bow to the bottom of the

wreath and then hang. This is one wreath that is best

displayed the day of the festivities because it has a

short shelf life.

Cinnamon wreath

This wreath looks beautiful and gives off that

quintessential holiday aroma. Begin with a foam

wreath and wrap with a two-inch wide ribbon to

cover. Use hot glue to secure cinnamon sticks all

around the wreath. For more color, add sprigs of

holly, bows or mistletoe.

INGREDIENTS:

4 cups fl our

1 cup icing sugar

2 cups butter, softened

1/4 teaspoon salt

SHORTBREAD COOKIES

Wishing a wonderful holiday season to our

MINT MERINGUES

INGREDIENTS:

2 egg whites

1/4 teaspoon cream of tartar

1/8 teaspoons salt

1/2 cup sugar

1/4 teaspoon mint extract

Green sprinkles (optional)

DIRECTIONS:

Heat oven to 200. Grease 2 large cookie sheets, set aside. Combine egg whites,

cream of tartar and salt in medium bowl. Beat until foamy. Add sugar 1 table-

spoon at a time, beating until egg whites are very stiff and

glossy and sugar is dissolved. Beat in mint extract and food

colouring. Fit in decorator bag with a large star tip. Spoon

meringue into bag. Pipe meringue in 1 inch puffs on prepared

cookie sheets. Sprinkle with coloured sprinkles if desired.

Place cookie sheet on centre rack of preheated oven. Bake for

2 hours. Remove from cookie sheet immediately,

cool completely on wire rack. Makes 4 dozen

DIRECTIONS:

Mix all ingredients together and roll (should look like a long

sausage). Cut into circles and place on baking sheet. Pre-

heat oven to 350 and bake for 10 minutes. If not totally

baked, bake for another 10 minutes. Makes 4 dozen

Holiday decorating is a big part of the holiday

season. Bins are taken out of the attic or garage,

and decorations are once again given their

opportunity to shine for several weeks before being

packed away again.

Among the many decorations families use to deck

the halls are ornaments that were made by hand.

This year creating homemade ornaments can be a

crafty project that helps families make new holiday

memories.

Christmas tree ornaments come in all shapes

and sizes and often tell the stories of holiday

traditions. There are several different ways to create

personalized, do-it-yourself ornaments and leave

the cheap, easily broken ornaments from the dollar

stores behind.

Photo ornaments

Fun photo ornaments showcase how a family has

changed and grown over the years. Experiment

with different ways to create these ornaments. You

can glue a photo to a ceramic ornament and cover

it with decoupage glaze to set it permanently. Try

purchasing clear, glass ornaments, then remove the

top of the ornament, which is usually spring-loaded,

before slipping a photo inside and replacing the top.

You also can laminate a photo, punch a hole in the

top and affi x a ribbon.

Ceramic ornaments

The popularity of paint-it-yourself pottery has led

to an increase in ceramic and crafts shops across the

country. During the holiday season such shops offer

many holiday items that can be painted. Often the

store will then fi re the pieces after they are painted

so that they are shiny and hardened for display.

Those who want to do their painting at home can

visit their local craft or hobby shop, where typically

there are unfi nished ceramic ornaments that can be

painted with acrylic paints found right in the next

aisle. A fi nishing coat of clear glaze will help protect

the ornaments from year to year.

Wood crafts

Many of today’s craft centers have expanded to

include sections devoted to unfi nished wood items.

Everything from letters to animal cutouts to boxes

and rocking horses can be purchased and fi nished.

Turn keepsake boxes into painted and ribbon-

adorned gift boxes. Stain a treasure chest that can

be used to store reindeer snacks for Santa’s crew.

Turn small decorative pieces into ornaments for

the tree. Paint and affi x wood initials onto stocking

holders to identify to whom each stocking belongs.

Crafty individuals also can turn plain wood plaques

into signs with clever sayings, such as “Park your

sleigh here.”

Scavenge around the house

Young children can use any medium for making

ornaments. Garlands made of macaroni or

popcorn are traditional. Fabric scraps can be

sewn and stuffed with potpourri for homemade

scent satchels. Hand-drawn pictures can be

made and laminated and hung on the tree.

The only obstacle with regard to DIY

ornaments is a limited imagination.

Homemade items can add whimsy and a

personal touch to the holiday season.

INGREDIENTS:

7oz unbleached all-purpose fl our

1 1/2oz unsweetened natural cocoa powder

1/2tsp baking soda

6oz unsalted butter with 82 percent

butterfat, at room temperature

3 1/2oz granulated cane sugar

4 1/2oz dark brown cane sugar

1/2tsp pure vanilla extract

1/2 Tahitian vanilla bean, split horizontally

1/2tsp salt

3oz milk chocolate, roughly chopped

3oz 65% chocolate, roughly chopped

DIRECTIONS:

To make the dough:

Sift the fl our, cocoa and baking soda together

in a bowl. Set aside.

Put the butter in the bowl of a stand mixer

fi tted with the paddle attachment. Beat on

medium speed until creamy. Add both sugars

and the vanilla extract. Scrape the seeds from

the vanilla bean into the bowl. Sprinkle the salt

over the top. Beat on medium speed just until

combined.

Reduce the speed to low. Add the dry

ingredients in three additions, pulsing the mixer

to incorporate each addition before adding

the next one. Pulse just until a crumbly dough

TRIPLE CHOCOLATE COOKIES

forms. Add both chopped chocolates and mix on low speed just until incorporated.

Turn the dough out onto a lightly fl oured work surface. Knead a few times to incorporate any

crumbs.

Divide the dough in half. Roll each half into a log about 11/4 inches in diameter and 12 inches

long. As you roll, gently push the ends toward the center occasionally to prevent air pockets

from forming and to keep the logs at an even thickness.

Wrap the logs in plastic wrap and refrigerate until fi rm, at least three hours or up to three

days.To bake the cookies:

Preheat the oven to 325 F. Line the bottoms of two 12-by-18 inch sheet pans with

parchment paper.

Remove the logs from the refrigerator and unwrap them. Using a ruler to guide you and

a sharp knife, cut each log into rounds 1/2-inch thick. If the dough crumbles as you cut it,

reshape each slice. Place the rounds on the prepared pans, spacing them 11/2 inches apart.

Bake on the middle shelves of the oven, rotating the pans 180 degrees halfway through

the baking time, until set but soft enough to hold a slight indentation when pressed with

a fi ngertip, about 14 minutes. Let cool completely on the pans on wire racks.

Makes about 48 cookies

Here is a great gift for those hard to buy for people

Ingredients

1/2 cup water

3/4 cup fl our

3 tablespoons corn syrup

2 1/2 teaspoons unfl avored gelatin, such as Knox

4 cups birdseed

Directions

Measure out each ingredient before beginning. Spray each cookie cutter or mold with nonstick cooking

spray to stop the ornaments from sticking. Arrange the sprayed cookie cutters on the wax paper.

Add the water and corn syrup to the nonstick saucepan and bring to a boil. Reduce the heat to low and add

the gelatin, stirring or whisking it continually to dissolve. This will create a syrupy liquid that will bind the

ornaments together. Only heat this mixture until the gelatin has dissolved.

Transfer the syrup to your mixing bowl and add the fl our. Stir the mixture until it is well blended. If it is too

thick to stir easily, add additional hot water one tablespoon at a time until it is thinned. Or if the mixture is

too thin, add fl our one tablespoon at a time to reach the right consistency.

Add the birdseed and thoroughly mix it with the fl our batter to coat all the seed. This will be a thick, stiff

mixture, but it is important to blend it well otherwise the ornaments will fall apart.

Spray your hands thoroughly with nonstick cooking spray and fi ll each cookie cutter to the brim with

birdseed. Be sure to press seed into every corner of the mold, and press the seed as fi rmly as possible to

compact the ornaments – loose seed will fall apart more easily. The birdseed mixture can dry out quickly

so it is wise to have help with this step (great for kids!), or else cover the mixture in the bowl with plastic

wrap between each ornament.

Any extra birdseed mixture you have left after fi lling all your cookie cutters can be rolled into small balls

or patted into small, fi rm cakes without molds. These small shapes can be quickly added to a platform

feeder or used to fi ll a suet cage or similar wire or mesh feeder.

Use a lollipop stick here or skewer to create the holes for hanging each ornament, make sure the hole is

completely through each ornament. Place holes approximately one inch away from the ornament’s

edge to ensure a sturdy form, and wiggle the skewer around to be sure the hole is

large enough for your string or twine. Gently move the ornaments – still in the cookie

cutter molds – onto the wire cooling rack to dry. Do not remove them from the molds

or else they may loosen and collapse. If necessary, they can be left on the counter to

dry, but placing them on the wire rack will allow air to circulate under the ornaments

so they dry more quickly. Dry the ornaments for a minimum of 6-8 hours, but

preferably overnight or for a full day if possible. Thread the ribbon, string or twine

through the holes in each ornament and tie in a tight knot leaving an open loop for

hanging. If the holes are too tight, use the same skewer you formed the holes with

and poke it through again; the seed inside the holes may collapse slightly as the

ornaments dry, therefore restricting the hole size. Another option is to use a

wide-eyed tapestry needle to pull the ribbon or string through the hole.

Package the ornaments for gift giving or hang them from your tree.

* Ambrosia salad: Ambrosia is a variation on a traditional fruit salad. While the name references a food

ambrosia salad can have different variations, many recipes begin with a dairy base (pudding, sour cream

or yogurt) and then include different canned or fresh fruits, shredded coconut and mini-marshmallows.

Ambrosia salad is refreshing on a warm day and takes little time to prepare.

* Pudding trifl e: Trifl es are made by layering different ingredients to create a striated design. This dessert

may include a variety of ingredients, from cake to cookie crumbs to fruit. Trifl es also can be customized

to fi t a particular party theme. Patriotic parties may feature a trifl e made with berries, whipped cream and

cubes of vanilla pound cake. Match fl avors to cocktails or other food being served.

* Easy ice cream cake: Packaged ice cream sandwiches can be turned into a tasty and simple dessert. First,

purchase a box of ice cream sandwiches, then melt hot fudge and crumble cookies, like Oreos(R), into the

fudge. Spread the cookie and fudge layer on top of the sandwiches and then repeat the layers. Finish by

sealing everything with a thin coating of frozen whipped topping. Wrap in aluminum foil and allow to set

and harden in the freezer for a few hours.

* Fruit pizza: This is a refreshing and relatively healthy dessert to complement any occasion. Start by

making a graham cracker crust, either by mixing graham cracker crumbs with melted butter and a bit of

sugar and pressing into a pie dish or by simply buying one ready-made. (For a less healthy alternative,

and one that requires baking, use a sugar cookie dough to make a cookie crust.) Mix whipped cream

cheese with a bit of strawberry jam, marmalade or your favorite fruit fl avor. Spread over the crust. Place

slices of fruit on top of the cream cheese. Peaches, apples, grapes, sliced cherries, kiwi, and blueberries

can be used. For a professional-looking fi nish, a glaze made from cornstarch, water and sugar will give

the top of the fruit pizza an inviting sheen.
