Food for thought - Red, White, and Blue Potato Salad Recipe Ingredients: 2 cups finger ling potatoes, halved lengthwise (about 10 ounces),

2 cups small red potatoes, quartered (about 10 ounces), 2 cups small blue

potatoes, halved lengthwise (about 10 ounces), 1/4 cup finely chopped red onion,

2 tablespoons chopped fresh parsley, 1 tablespoon chopped fresh dill, 1

tablespoon chopped fresh chives, 3 hard-cooked large eggs, finely chopped, 1/4

cup red wine vinegar, 2 tablespoons olive oil, 1 1/4 teaspoons salt, 2 teaspoons

Dijon mustard, 1/2 teaspoon freshly ground black pepper, 1 garlic clove, minced

Instructions

1. Place fingerling and red potatoes in a saucepan; cover with water. Bring to

a boil. Reduce heat; simmer 15 minutes or until tender. Drain; cool

slightly. Place potatoes in a large bowl.

2. Place blue potatoes in a saucepan; cover with water. Bring to a boil.

Reduce heat; simmer 10 minutes or until

tender. Drain; cool slightly. Add blue potatoes, onion, parsley, dill, chives, and eggs to bowl; toss gently.

3. Combine vinegar and remaining ingredients. Pour over potato mixture; toss gently to combine. Serve warm, at

room temperature, or chilled.

4. Note: Blue potatoes are starchier than the others and tend to bleed, so cook them separately. If you need to,

prepare this dish a day ahead, but add the blue potatoes just before serving. If your potatoes are larger than the

ones we call for, cut them to a uniform size.

Conway Recreation Center Success Story - Heather Burke “Hi my name is Heather Burke, and I am proud to

be a part of the Conway Recreation Center “Fit

Family”- I had the opportunity to feature my

weight loss journey in July 2013. My actual FIT

journey began in January 2012. To date I have

lost a total of 220 pounds!!!! I could not have been

as successful with my weight loss goals on my

own. The CRC offered me such encouragement

and help with reaching my personal best!!!

Since my first feature in the July 2013 Newsletter I

have lost an additional 45lbs!! I have earned each

pound of weight loss with much determination and

SWEAT!!! I love to attend my favorite fitness clas-

ses with : Jennifer Sautter, Victoria Lambert, Cas-

sie Weir, Ade Mubarak, Liz Wood, Chasity Samu-

els and Ashley McMullen. I have added some new classes that have been added to the group fitness schedule: PiYo,

Spontaneous Combustion, Indoor Cycle, and Turbo/Cardio Kick . I encourage anyone to join these classes at any-

time, they are filled with fun and challenge!!!

Within the past year I have also been a participant in three 5k runs with great friends I have met at the CRC. I have

a goal for a local 5k in November of this year. The CRC is my second home, I have far surpassed my initial weight

loss goal, and now I am focusing on my strength. Most importantly I am focusing on MAINTAINING my HEALTHY

lifestyle with my “Fit Family” at the Conway Recreation Center!!!!!!!!!

Fitness Class Spotlight - Outdoor Bootcamp Make fitness your reality by participating in this one-hour, HIGH INTENSITY class is designed to help you reach beyond your fitness limits.

Mixing traditional callisthenic and body weight exercises with interval training and strength training “Outdoor Bootcamp” will PUSH your

further than you normally would alone. This class will meet at the cardio room for a brief 10 minute warm-up/stretch, and then move to out-

door areas of the facility.

*Please come prepared with the following for this outdoor class: proper summer attire including light clothing, sunscreen, sunglasses,

hats; Inhalers, epinephrine pens or other reactive medications if applicable; lots of water (before, during and after) and a towel.*

Day of Week: Wednesday

Time: Start time at 6:30pm

Location: Meet in the Cardio Room

aspartame, it will break down into two (2) amino acids and methanol

that equals formic acid (formaldehyde is in diet sodas).

High fructose corn syrup is a concentrated form of sugar, fructose

derived from corn. It increases body fat, cholesterol and triglycerides

and it also makes you hungry.

Potassium Benzoate = preservative that can be broken down to ben-

zene in your body. Keep your soda in the sun and benzene =

Carcinogen.

Food Dyes = impaired brain function, hyperactive behavior, difficulty

focusing , and lack of impulse control.
