Operation varies, depending on the type of ice. Cube ice machines, sometimes referred to as batch ice makers, freeze water over a period of time. Within the cuber, or vertical evaporator, operators can choose from small, medium and large units. Cube machines represent the most common type of ice maker because of their versatility. These units harvest and dispense clear, rhomboid- shaped cubes one at a time.
Flake and nugget machines produce ice continuously with no lag time between batches. These systems tend to use less water and electricity compared with cube machines. Nugget continues to grow in popularity. Because it is 70 percent to 80 percent water, nugget ice tends to be easier to chew than other forms. Flake ice is even softer than the nugget type. Because of the extremely high water content, operators primarily use this ice for display purposes and with grab-and-go food, rather than in beverages.
A newer category of gourmet ice has emerged due to the growth in craft spirits. Some units in this category pro- duce a large 60-gram cube that melts more slowly for use in exotic liquors that are spiced, aged or flavored.
In terms of capacity, ice machines produce between 500 to 3,300 pounds per day or 24-hour period. The most popular capacity is between 300 to 1,000 pounds per day. Operators frequently use smaller units as auxiliary ice machines, while hotels and convention centers use high-volume units.
Ice machines use one of four different condenser types. The most popular is the air-cooled version, which sits on the machine’s exterior. Air from the environment is drawn over the condenser to cool the refrigeration system.
Water-cooled systems draw water in from a separate chilled water loop to cool the unit. Because these units require separate plumbing hookups, they tend to be more common for larger operations, including schools or hospitals.
The third option is a remote version where the condenser is an auxiliary or separate unit placed on a roof top or in an area separate from the ice machine. A fourth condenser option has both the compressor and condenser located remotely. This removes both heat and noise from the kitchen and is ideal for front of house use. Small ice makers tend to be self-contained, while larger units are more likely to use remote condensers.
Ice machines generally measure 22, 30 or 48 inches wide, which allow operators to stack them on top of beverage dispensers. Modular units for use atop ice storage bins represent another option. Self-contained ice machines, also referred to as undercounter units, include built-in bins.
A newer feature in the ice machine world is the ability to produce ice and deliver it through a tube to a dispenser up to 75 feet away. This removes the heat, noise and bulk of the machine from the kitchen and provides easier access for cleaning.
Some models allow operators to flush more or less water through the system, which increases efficiency and reduces scale build up. It has become more common for manufacturers to treat plastic inside the food zone with an antibacterial coating. Auto cleaning systems connect to the unit for cleaning and sanitizing the evaporator.Batch-type ice makers save on average about 1,200 kWh and 6,300 gallons of water per year. These units are approximately 15 percent more energy efficient and 23 percent more water efficient than traditional units.

SPECIFYING CONSIDERATIONS FOR ICE MACHINES
Foodservice operators can choose from three basic types of ice machines: modular, undercounter and countertop.Generally the easiest option to install, undercounter or self-contained units combine the ice maker and bin into one small, compact machine. Modular units allow opera- tors to purchase and install an independent bin to the unit.In addition to cubes, nuggets and flakes, some machines form other ice types, including fullsize square cubes, octagon-shaped cubes and crushed ice.
Here, James Camacho, principal at Atlanta-based Camacho Associates, Inc., provides details on what operators need to know to properly specify this equipment.◊ Decide what type of ice the foodservice operation requires, be it crushed, hard cubes, extruded or a combination. Upscale bar operations typically specify specialty ice, or bigger cubes.◊ Operators need to decide if water- or air-cooled or remote condensing systems are best. Self-contained air-cooled condensing systems are located on top of ice makers, with the air cooling the system. Water- cooled condensers utilize chilled water that recirculates through the compressor and condensing units, similar to residential refrigerators. Remote systems are located outside of the kitchen, typically on the building’s roof or other outdoor space. This type is for operations looking to take the heat and noise out of the room.◊ The quantity of ice being used should be determined. A general rule of thumb is between ½ to 1 pound per person, depending on the project. While a sit-down restaurant will utilize ½ pound of ice per person, a resort that has a high volume bar and beverage operation may require 1 pound of ice per person.◊ Depending on the amount of space available, it may make sense to purchase 2 ice makers that produce 800 pounds each of ice per day, rather than 1 unit that provides 1,500 pounds of ice. This way, if 1 unit is down, there is still ice being generated.◊ It’s common for a fast-casual restaurant to have one 1,600-pound unit atop a 1,200-pound bin so there is spare ice in case service is interrupted. It’s best to upsize the bin; for example, specify a 1,400 pound capacity instead of 1,000 pounds, just in case.◊ Maintenance is another consideration when purchasing an ice maker. Units should be easy to clean, delime and descale. Antibacterial coatings also are preferable.◊ Along with quick and easy access to air filters, operators should think about the type of water filters needed. This will depend on water quality, such as whether it’s soft or hard, and mineral and chlorine content.
Continuous-type ice makers have average yearly savings of about 1,500 kWh and are on average 15 percent more energy efficient than other models.A new ruling published by the U.S. Department of Energy in January 2015 sets stricter energy efficiency guidelines for all ice machines sold in the U.S. Effective January 2018, all ice machines must meet a minimum energy consumption rate.

SERVICE Q&A: MIKE DELL, HEAD OF PREVENTATIVE MAINTENANCE, CLARK SERVICE GROUP, SMOKETOWN, PAFE&S: Do these units require an extensive cleaning regimen?
MD: This depends on the water conditions, but most units are sealed well and there is not a lot of maintenance aside from wiping the outside of the unit and cleaning the condensing coils. Because these are located on the back of the ice machine, coils are easy to overlook. Brush- ing or vacuuming this area once a month is typically sufficient. A service agent will blow out and chemically clean washable filters when units are serviced.
FE&S: Should operators attempt to clean ice bins themselves?
MD: As these are typically always filled with ice, bins can be a challenge to clean. Service agents will typically take care of this during their twice a year service calls. For operators looking to do this themselves, it’s important to use NSF-approved sanitizers and avoid cleaners that leave a residue.

MD: A regular delimer cannot be used to clean nickel- coated evaporator plates or the coating will be stripped off. Nickel-safe cleaner is required for this component.
FE&S: What are the signs an ice maker will soon need replacing?
MD: These units typically last between 8 and 12 years. Even when using the correct cleaner, the evaporator plate eventually loses its nickel coating and needs replacement at some point. Also, any leakage can produce rust, which will cause a problem during health inspections.
FE&S: What is the rule of thumb when deciding to retire an ice machine?
MD: Ice makers lose production over time. Also, compressors will get noisier before failing. Older machines also are inefficient in terms of energy usage, especially at the end of the service life. If a unit is eight or more years old and repair costs equal half the price of a new unit, the ice maker should be replaced.
FE&S: Are there any other factors that impact an ice machine’s service life?
MD: One of the big things we see is lack of proper water treatment. Operators who are purchasing a new ice maker should consider water conditioning, as mineral deposits are very difficult to remove. A quick water test will deter- mine the hardness of the water and mineral content. We’ll typically specify a standard water filter and move to a more comprehensive type if needed. Using the correct water filter can add years onto the service life of an ice machine.
