• Heart disease is the most common cause of death in the Philippines (Pfizer Philippines, 2007)

• Caloric restriction is one of the most effective ways to prevent heart disease. However, this can heavily restrict one’s lifestyle.

• It has been noted that although there are high fat diets both in the Philippines and France, there is a significantly lower occurrence of heart diseases in France. This is known as the French Paradox
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 4
• The French Paradox is attributed to the high intake of red wine in the regular French diet.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 5
• Resveratrol, a compound found in grape skins, peanut sprouts and Sakhalin knotweed, is highly present in red wine. This compound is held responsible for the low occurrence of heart disease in France.

• An additional problem is the fact that not everyone drinks wine and not everyone eats grapes.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 7
• This problem is hopefully to be solved by the creation of a food additive which can be added to virtually any meal, without altering the taste and characteristics of the main meal.

• The first part of the research involves the establishment of the effectiveness of resveratrol on mice. This will be determined by the measurement of the change in heart rate.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 9
• It is expected that the average change of heart rate in mice with a resveratrol-enhanced diet would be significantly lower than those with the regular diets.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 10
• The change in heart rate will be determined after administering a vigorous exercise routine. Determining the right exercise routine is also part of the research.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 11
• After the effectiveness of resveratrol on mice has been established, the major part of the research includes food processing. Goals include easier consumption and the prevention of chemical deactivation.

• All tests will be repeated at least twice for consistency.

• Resveratrol, a phytoalexin, has shown anti-aging and anti-cancer properties when taken in the body.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 14
• Phytoalexins are produced by plants that are under attack. This is a short-term response , a part of their induced resistance.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 15
• The finished product would produce a significant aid against heart disease.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 16
• Resveratrol is a barely known compound. This research aims to establish resveratrol as an aid against heart disease. This research would also increase awareness about this compound and its properties.

• Procurement of fresh grapes and miceApproximately one kilogram of fresh grapes will be purchased from a market. Six mice will also be purchased.

• Skinning of grapesApproximately one kilogram of fresh grapes will be purchased from a market. Six mice will also be purchased.

• Feeding of miceAll six mice will be fed a regulated, medium-calorie diet. Two mice will receive grape skins weighing a certain percentage of their regular meal.
example: 0.500 kg regular meal, 0.500x kg additional grape skins
Another two will be fed grape skins weighing half of the specified percentage for the two mice in the first set-up
example: 0.500 kg regular meal, 0.500(x/2) kg additional grape skins
The remaining mice will be fed the regular diet, with no grape skins.

• Measurement of initial heart rateBefore the start of the exercise routine, which will be conducted about two or three weeks after the grape skin diet has been introduced, the heart rates of the mice will be measured.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 22
• Implementation of exercise routineThe exercise will mainly compose of running in a hamster wheel for a certain period of time, which will be determined according to the mice’s heart rate. Further research will be done on this.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 23
• Measurement of final heart rateAfter the exercise, the heart rate of the mice will be measured and recorded. This will allow for the computation in the change of heart rate. It has been proven to be generally lower for healthier circulatory systems.
04/13/23 Development of a grape skin based food additive for the reduction of heart disease risk 24
• Repetition of steps using processed grape skinsThe grape skins will be processed in different methods. This is also part of the research. The preceding steps will be repeated to ensure effectiveness of the processed grape skins.
