THE MENUTOASTED QUINOA,LENTIL & POACHEDSALMON SALAD140g quinoa1 tsp olive oil400ml light vegetable stock (I used bouillon)250g asparagus, trimmed100g frozen soya beans140g broccoli, florets trimmed and halved (I used Tenderstem)zest and juice 1 lemon2 salmon fillets (about 150g each)½ garlic clove, crushed250g pack ready-cooked puy lentils6 spring onions, sliced on the diagonallarge handful mint and parsley, roughly chopped85g baby spinach leaves25g flaked almonds, toasted

1. Rinse the quinoa and tip into a large non-stick frying pan. Turn the heat to medium and dry out the grains, stir-ring to move them about the pan. Once all the liquid has evaporated, stir in the oil. Continue cooking the quinoa until it has turned a nutty brown and starts to ‘pop’ – this will take 10-15 mins. Pour over the stock and simmer for 15-20 mins until all the liquid has been absorbed.

2. Meanwhile, bring a large pan of water to the boil. Drop in the soya beans, asparagus and broccoli, and simmer for 2 mins. Remove plunge into a bowl of ice-cold water. Drain the vegetables.

3. Add 1 tsp of the lemon juice to the pan with the veg-etable water, then turn the heat down to a gentle simmer. Season the salmon fillets and submerge fully in the water. Poach for 6-8 mins until just cooked. Remove, allow to cool, then take off the skin and flake into large chunks.

4. Make a dressing by mixing together the garlic, most of the lemon zest and remaining lemon juice. Mix vegetables and dressing together in a large bowl, then season. Pile onto a serving plate, top with the salmon, then scatter over the almonds and remaining lemon zest.

STEP 1Take two slight diagonal forward partings above the occipital and isolate the back.

STEP 3Place comb in hair about an inch from the part with the teeth on the scalp, secure hair above the comb with your fingers and comb hair just below your fingers forward horizon-tally applying pressure. Continue the process to the end of the first wave, connecting the wave each time.

STEP 5Finish by combing hair lengths behind the ears and pinning into the isolated section.

STEP 2Apply gel to the scalp area on the hair that is going to be waved.

STEP 4Repeat same process in the opposite direction, alternating in each horizontal row leaving about 1 inch between each row.

STEP 6Twist hair and secure in to a bun with pins.

NOTESFROMBRUNOSomething that I am really proud of that the TONI&GUY family makes a priority is the education of our up-and-coming hairdressing talent, both in the Academies and on the floor. We work hard to prepare them for an absolutely brilliant career when they go out into the world – setting them up for success wherever their life takes them. To us, it isn’t just about teaching our students and staff how to cut, color and style – it is about creating the confidence to be their best.

We don’t want to just teach our students how to pass the cosmetology state board test, but expose them the art of hairdressing – salon work, session work, education, hair shows, photoshoots, videos, etc., making sure they know skills like how to articulate a step-by-step - putting them in front of the camera and training them how to deliver amazing content, alongside the amazing cut, color and styling techniques. We film our students doing a blow dry – so they can get used to being in front of the lens while taking us through the steps to help build their confidence in front of the camera as well as self esteem when working in the salon.

We also want to give our students and graduates opportunities to experience the hairdressing industry around the world…

This year, we are so excited to be working with students and graduates throughout 2014 providing incredible opportunities for them to get their hands in hair – and in this issue we sent TONI&GUY grad Dawson Sherman to NYFW to work backstage and at events all over the city. Dawson worked alongside TIGI Creative Director Nick Irwin, backstage at the Parkchoonmoo Runway show and front and center at the Lookbook.nu blogger event..

These opportunities will continue to be offered to our students as we follow their journeys of bringing the TONI&GUY brand to shows across the world. You never know what opportunities are going to come across our students’ paths – TV Show stylist, session work, film careers – we want you guys to be ready and excited, and most importantly have the confidence, to have everything you want in your future!

Kent Movchan Kent Movchan is the Vice President of Company Owned Academies. He graduated from the TONI&GUY Hairdressing Academy in Dallas in 2002. Kent went on to work for TONI&GUY Salons and found his home when he started as the Salon Director at the TONI&GUY North Park Salon. Kent fell in love with the T&G culture and knew that this was where he wanted to build his career. After hard work and dedication he became a Regional Salon Director in the DFW area. In 2007 Kent was offered the Academy Director position at the TONI&-GUY Hairdressing Academy in Dallas and currently oversees all company owned academies.
