1 Carol was born in Kansas City, Missouri, but grew up in St. Louis. Her parents were Charles and Edith and they were originally from St. Louis. Carol has two sisters; one older and one younger. Carol graduated from Webster Groves High School and Southeast Missouri State College which she attended for two years for Business and Art. Carol has many fond memories growing up which involved lots of fun with her numerous relatives. Some even lived behind her. Carol recalls the wonderful gardens they had; most were vegetables, but they also had numerous fruit trees. In her earlier years she was involved in painting and refinishing furniture. She has lived and traveled many places around the world. Missouri, Nebraska, Russia, China, Turkey, Japan, Peru, Belize and London just to name a few. Before getting married, Carol had worked as a secretary in St. Louis, Kansas City and Japan. She met her late husband Fred at Camp Zama, Japan. He was a pharmacist. Their seven kids were raised in Omaha and now live all over from Omaha to Chicago to Tacoma to Baltimore, Dallas and Kansas City. Carol states when her kids were younger she was a “taxi driver” for them to and from their games. When asked of words of wisdom for raising children Carol said, “You won’t get any busier after three kids . You just do less.” She now has 15 grandchildren to enjoy. Carol has lived with us here since August of 2012. She enjoys the friendly atmosphere that Sunridge is known for along with the activities that are offered. She especially enjoys the socials, Bingo, art, playing Bridge and putting together many of the puzzles in the lounge. Carol considers herself a “Jack of all trades.” Carols favorite pasttime right now is reading a variety of books. We are fortunate that Carol chose Sunridge for her home. We threw a super cool and refreshing Summer Celebration in our beautiful dining room with a fantastic set up that welcomed summer as bright as the sun. Sunridge residents were greeted as they arrived for dinner with an array of beautiful butterflies and gorgeous bouquets of summer flowers throughout the dining room. On each table a stained glassed flower candle holder holding a lit tea light waited for them. Their drink order was taken and delivered in anticipation of the entertainment to come. Michael Lyon amused us with his multi talented way of singing and playing all of the best music we could ever ask for. His beautiful voice and medley of songs pleased everyone; he was incredible! He started playing as the residents were enjoying their choice of a perfect summer cocktail. The menu choices were a beef kabob with lemon orzo pasta or a refreshing, light-fare, strawberry, chicken, and pecan salad. The wide array of beverages offered included wine and beer, champagne cocktails, Call drinks and a variety of non-alcoholic beverages. We had a few of Sunridge’s favorites like Orange Spritzer Punch, Peach Bellini, and even the Chocó Wine. There was Champagne punch, a Sarasota Ade made with Moscato and raspberry lemonade as well as Sparkling Cider. No one drank Michael Lyon entertained the residents with his incredible music. A sweet selection of petite fours, mini cheese cakes, and Tiramisu bites was served.

too much, but everyone felt very happy. The night was as cool inside as it was hot outside!

The celebration didn’t end after dinner. It continued for some time with an extra special selection of desserts and Mr. Lyon’s lovely music. Sunridge had the desserts catered this particular evening with a sweet selection of assorted petite fours, a variety of mini cheese cakes and perfectly sized, flawless, individual tiramisu. No wonder we look forward to Summer time. We know how to welcome the warmer weather with refinement.

Recipe of the MonthThe Original Thunderbird SaladRecipe by Executive Chef Luis VillamonteThe Thunderbird Salad dates back to the 1960's when Executive Chef Luis Villamonte at the Happy Hollow Country Club served the salad to his patrons. His son, Steve Villamonte, also a certified executive chef, is the executive director of the Omaha Press Club.

Serving directions to make 4 servings.

Ingredients:4 cups packed iceberg & romaine lettuce2 tablespoons chives2 tablespoons real chopped bacon1/2 cup shredded mozzarella

Toss all ingredients together with 3 oz. of Thunderbird Salad dressing.Note: The Original Classic Thunderbird Salad Dressing is available at local Omaha Hy Vee stores.

1 tablespoon blue cheese crumble1/2 medium diced tomato(Optional) Top with diced avocadohome style croutons

Father's Day at SunridgeSunridge appreciates the men living at our beautiful community most definitely. Each year as Father’s Day arrives we welcome another opportunity to celebrate such great gentlemen. It was a unanimous feeling that all of our gentlemen residents, especially the fathers, should be invited to our special lunch in acknowledgment of this.

A month in advance invitations were sent out encouraging them to bring their significant guests to a delicious steak lunch prepared just for them. This superb lunch was held the Friday before Father’s Day in an effort to keep from disrupting family time otherwise. We had a great turn out and it was filled with plenty of fun and the making of great memories.

At the beginning of the event the men and their guest were welcomed and seated in our handsomely decorated dining room and was offered a variety of beer selected specifically for them. Each table had a hand-made gift bag that looked like a brand new men’s shirt folded neatly, complete with tie! The gift bags were filled with manly snacks and colognes for them to enjoy at another time, perhaps on Father’s Day. It was a perfect centerpiece for the luncheon. For this special lunch the guests enjoyed a big juicy tenderloin

steak, served with a tossed salad, warm bread, a baked potato and fresh-steamed vegetable blend. After the delicious lunch, freshly baked rhubarb pie ala mode was served.

Sunridge welcomed our guest speaker to start off the lunch. Kris Stewart, the Community Care Manager from Comper Care & Rehab, gave a beautiful tribute to fathers. Everyone related and benefitted from her witty accolade. It was such a nice occasion; everyone spontaneously felt the exceptional affection that afternoon.

To all the wonderful fathers, father figures, and male mentors out there who have touched the lives of others. Thank you for all that you do. Thank you for being you.
