k don’t freak out, but we’re going to talk about Christmas. Not the stressful crowded malls and
last-minute gifts kind of Christmas, but the Christmas filled with music, decorations and endless food and drink. That’s Christmas at the Fairmont Jasper Park Lodge. And it’s in November. And you could be going for free.
Sunterra and Soleterra d’Italia are proud to sponsor the 28th annual Christmas in November, and we’re going to send one Fresh Rewards member to the ultimate culinary mountain getaway! You and a guest will be absolutely pampered during a three-night stay in the rustic elegance of Jasper Park Lodge, with incredible mountain views, heated outdoor pool, spa and walking trails around beautiful Lac Beauvert.
Spend the first night at a welcome reception featuring Soleterra d’Italia meats, along with table after table of extravagant offerings including cheese boards, pastas, seafood, cocktails, more cheese, wine and desserts. You’ll want to wear loose clothing (we’re speaking from experience). Oh, and wear your ugliest Christmas sweater
– this is a full blown holiday soiree, complete with carolers, a 20-foot Christmas tree and even Santa himself.
Over the next couple days, meet celebrity chefs and attend their demonstration classes. Take lots of pictures, ask them questions and most importantly, taste their amazing food! Where else can you eat food prepared by Mark McEwan, Vikram Vij, Anna and Michael Olson and Laura Calder in the same day? There are also wonderful local chefs like Paul Shufelt, owner of Workshop Eatery in Edmonton, Liana Robberecht, executive chef at Winsport in Calgary and Jan Hansen, executive chef at Hotel Arts Group in Calgary. No matter the sessions you attend, you’ll leave Christmas in November with a book full of recipes to prepare you for the season ahead.
In addition to chef classes, you can also attend décor, gardening and flair bartending sessions, or check out the Man Cabin (ladies welcome). Inside you’ll find plenty of Soleterra d’Italia snacks, scotch tastings, pool tables and even a cigar room.

Apple Cranberry
Galette
Core the apples and slice them thinly. You can peel them
or leave the skin on. Toss apples in a bowl with lemon juice, cinnamon and orange
rind. Cover with plastic wrap and set aside.
Trim the puff pastries to make them round. Place on a lined
sheet tray. In a small bowl, whip the cream cheese into a
smooth consistency. Spread onto the pastries, leaving an
inch around the edge.
Fan the sliced apples in a concentric circle on top of
the cream cheese. Sprinkle the cranberries and sugar
evenly over the apples and then dot with small cubes
of butter. Fold the edges of the pastry over on top of the
filling. Brush the pastry lightly with a beaten egg. Bake in a
preheated oven at 375F for 25 to 35 minutes till the apples are tender and the pastry is
golden brown.
4 Granny Smith apples
2 tsp lemon juice
1 tsp cinnamon, ground
½tsp orange rind, zested
4 6x6 inch puff pastry squares
½ cup cream cheese
¼ cup fresh cranberries, roughly chopped
½ cup sugar
3 tbsp butter, cubed
1 egg, beaten
