Recounting about the best of culinary, pastry, and Italian products in a day: this is the mission that CAST Alimenti - the Italian school for all culinary and pastry arts (www.castalimenti.it) - is intended to pursue on Tuesday April 26, while featuring the Celebration Day “Italian Food and Pastry” hosted by the most important culinary college in the United States, the Culinary Institute of America (CIA - www. ciachef.edu). e School Director Vittorio Santoro and his staff will be in the lead of a delegation comprising many Italian companies manufacturing produces and equipment of excellence, as well as six distinctive ambassadors of the finest Made in Italy – namely Master Iginio Massari; the world champions Emmanuel Forcone, Francesco Boccia, and Fabrizio Donatone; and Chefs Nicola Michieletto and Beppe Maffioli. During a many-voices masterclass, students and the CIA guests will enjoy the confections that won the Coupe du Monde of Pâtisserie in Lyon in 2015, learn about the secrets of Panettone, the endless pasta shapes and processing techniques, and the equally endless food combinations made possible by the assortments of regional Italian foodstuffs. “Narrating Italy to our US colleagues - Director Vittorio Santoro says - “is a great honor to us. We have been working hard and for many months to bring the fineness of different Italian regions and the best of our culinary culture to this important culinary institution. We consider this event as a unique opportunity to foster the quality of Made in Italy overseas”. At that time, the CIA and CAST Alimenti set grounds to work together to bring to the US specialists, savors, and awareness about the authentic Italian cuisine. “I was able to experience the professionalism of CAST Alimenti staff and the quality of its didactic methods”, said the CIA Dean of Pastry and Bakery Mr.Tom Vaccaro during his visit. “In the future, I will be willing to work together with CAST Alimenti to share know-how and experience, and to develop new teaching approaches to encourage our students’ mutual exchanges.”The first actual opportunity is coming this spring. The Celebration Day “Italian Food and Pastry” is going to be a unique and thrilling educational event, and will include an exciting ending on the legendary bond between Italy and USA: the story of Spaghetti alla Carbonara, served at first by its creator the chef Renato Gualandi to celebrate an American General in 1944, combining the only ingredients available at that time: English bacon, Italian pasta, and freeze-dried yolk provided by US troops. CAST Alimenti was honored to recently host and celebrate Chef Gualandi’s 95th birthday at its headquarters in Brescia. Performing chefs will serve attendees with his famous Italian dish, a typical example of fusion cuisine, a story that speaks of Italy, United States, combination, and tradition.
