The Right of Public AccessAllemansrätten – the Right of Public Access – gives everyone the right to enjoy Sweden’s outdoors. It allows the public to roam freely, even on private land, to camp overnight and to pick mushrooms and berries. The right also brings responsibilities – to treat flora and fauna and other people’s property with care. It can be summed up in the phrase ‘don’t disturb, don’t destroy’. The Right of Public Access is written into the Swedish constitution. But it is not a law as such, rather a custom or part of the cultural heritage that has evolved and become accepted over the years.(Sweden.se)

Filmjölk loaf with lingonberry

1 loaf

40 g rolled oats 50 g spelt flakes 120 g wholemeal flour 180 g plain flour 1 tsp salt 4 tsp baking powder 400 ml filmjölk, natural

yogurt or buttermilk 60 g lingonberries, fresh or frozen 65 g hazelnuts, coarsely chopped 1–2 tbs pumpkin seeds for decoration

1. Preheat the oven to 200°C. Place oven paper in a bread tin that holds about 1½ litres.

The paper should fall over the edges of the tin. 2. Mix all the dry ingredients. 3. Add the filmjölk and mix together. Fold in the

lingonberries and nuts. 4. Pour the mix into the tin and top with pumpkin seeds. 5. Bake for about 50 minutes. Leave to cool on

wire racks, under a cloth.

Quesadillas with smoked roast reindeerA perfect snack that once again exemplifies the successful mixture of local flavours with new trends. Mexican food is a popular starting point in Swedish kitchens, with less chilli and more reindeer. Game meat can work as an alternative if reindeer is a challenge to find.

16 pieces4 large flour tortillas 2 handfuls freshly grated Swedish Västerbotten cheese 200 g smoked roast reindeer, thinly sliced 30 g rocket Butter for frying1. Lay out two of the tortillas and sprinkle the cheese on top. 2. Add the roast reindeer and the rocket. Place the other two tortillas on top and press lightly together. 3. Heat up butter in a large pan and fry each double tortilla for about a minute on both sides. If you like, press lightly with a spatula so that the contents melt together. 4. Place on a chopping-board and cut each into eight pieces. (sweden.se)

Prinsesstårta – Princess Cake Surstromming

“Layers of yellow sponge cake lined with jam and vanilla custard, and then finished off with a heavy topping of whipped cream, the cake is carefully sealed with a thin layer of sugary sweet green marzipan…the third week of September is officially princess cake week, this popular cake is now eaten during special festivals and is used to mark many milestones in people’s lives.
