A time has emerged in modern culture that has pushed families away from the sacred American dinner table. Less than a generation ago, homemade balanced meals were a part of everyday life. All foods were considered “organic” and “non-GMO.” Today, more parents rely on fast food establishments for meals. Spending less time in the kitchen cooking and teaching their children this important life skill. The Center for Disease Control said, “ Childhood obesity has more than doubled in children and quadrupled in adolescents in the past 30 years.” The CDC also reported in 2012 that, “more than one third of children and adolescents were overweight or obese.”

The Kids Cooking Connection was born out of the idea that given a chance, kids would not only enjoy learning to cook, but learning this valuable skill would create an opportunity for families to once again spend more time at the family dinner table. Sharing their passion with not only their family, but their peers as well.

5 Life Skills Learned Through Cooking:

1. Academics - Cooking covers all the academic bases in every class. Chefs in training use math every time they measure an ingredient or double a recipe. They become scientists as they experiment with ingredients and witness reactions that create the perfect dish. Kids practice reading and sequencing as they follow the directions of a recipe. Although, the kids are learning a great deal, it goes unnoticed in class because they are engaged and having so much fun.

2. Confidence - The most rewarding part of teaching young chefs, is watching their confidence grow as they master a skill. Letting kids have the freedom to “create with guidance,” as we do in our “Chopped” inspired classes, is exciting. Their faces beam as they describe their culinary delight, they hungrily wait with anticipation to hear the critique of the instructor. Time and time again, kids present creative and tasty concoctions, that not even a seasoned chef would think to put together.

3. Healthy Eating - When kids contribute in the kitchen, there is a willingness to try new foods, including the healthy ones. They become excited at the store as they learn how to choose the perfect produce. In KCC classes, kids are encouraged to try fresh herbs and spices as well as everything they cook, even if they think they will not like it. They also develop a more sophisticated palette as they are exposed to healthy international foods that are not usually a part of the traditional American diet that contributes heavily to the obesity problem in our country.

4. Focus and Responsibility - In KCC classes kids are taught about the importance of kitchen safety. They become very focused, as they go through the process of getting organized before cooking. They learn that making a mess is okay but they must be responsible and clean as they go along as well as when they are finished.

5. Relationship Building - Whether in class or at home, strong bonds can be made as kids work cooperatively together in the kitchen. In class, there is a focus on sharing tasks, listening to ideas with an open mind, encouraging everyone to contribute. Through this process, relationships are strengthened and often friendships blossom.

For centuries, the kitchen has always been known as the heart of the home. Food, not only nourishes our bodies but it nourishes our soul. As you can see, there are so many great reasons to give your kids the opportunity to learn one of the most important life skills. center at UCF is supporting over 11,000 individuals with autism. The centers are funded by the Florida State Legislature through the state’s Department of Education. The program initiated due to the hard work of devoted parents lobbying in Tallahassee with a desire to have better outcomes for their children with autism spectrum disorders (ASD) in the state of Florida. UCF CARD provides support for residents in Brevard, Lake, Orange, Osceola, Seminole, Sumter and Volusia counties. The primary purpose of CARD is to enhance the lives of the individuals they serve by helping them become valued members of their communities. CARD offers supports within the natural contexts of homes, residences, child care programs, schools, and communities at no charge.

According to the Children’s Development Center (CDC) Autism spectrum disor-der (ASD) is a group of developmental disabilities, now occurring in 1 out of 68 children, which can cause significant social, communication and behavioral challenges. Previously, the term “ASD” collectively referred to the following three conditions that were diagnosed separately: autistic disorder, pervasive devel-opmental disorder not otherwise specified (PDD-NOS), and Asperger disorder.

ASD now encompasses a single diagnosis of “autism spectrum disorder”. The term “spectrum” in ASD means that each per-son can be affected in different ways, and symptoms can range from mild to severe. People with ASD share some similar symptoms, such as difficulties with social interaction, difficulties with communication, and highly focused interests and/or repetitive activities. How the

symptoms affect a person’s functioning depends on the severity and combination of those symptoms. Screening, evaluating, and diagnosing children with ASD as early as possible is important for ensuring that these children access the services and support they need. At this time, there is no medical test, such as a blood test or brain scan, to diagnose ASD. Instead, ASD is diagnosed by qualified professionals who conduct comprehensive psychological and behavioral evaluations. cdc.gov/ncbddd/autism

The Center for Autism & Related Disabilities (CARD), can help. The CARD cen-ters were founded in 1993. At that time there was one center for the state located at FSU. Today there are seven, located at the state Universities. UCF’s center opened in 1999 with 230 constituents. Today, in 2016, the

Referrals are accepted from parents, legal guardians, medical professionals, schools and community agencies. Consent to obtain and review records will be necessary.

CARD can…

• Provide information about an individual’s disability• Refer families to federal, state and local service agencies• Help families find support groups• Support families in planning for the future• Provide training sessions on how to work effectively with individuals with autism and related disabilities• Provide consultation to caregivers and professionals on how best to work with an individual with a disability, in order to:

o teach new skills

o understand and resolve challenging behavior

o include individuals with autism and related disabilities in typical school and community settings

o develop meaningful communication skills

o help individuals wi th aut ism and related disabilities become more socially competent members of society

UCF CARD has a local non-profit that helps support the constituents registered at UCF CARD and their families called Providing Autism Links & Support (PALS). PALS offers extensive programs, that the CARD center is not able to do, for the families and individuals located throughout the seven central Florida counties. PALS offers therapeutic programs at extreme low cost, summer and seasonal programs, community social programs for individuals with ASD of all ages, inclusive family programs and events, and much more.

Meet Maggi and Milo Hi! I’m Maggi and this is Milo.

Milo is my very best friend, and he’s also a Border Collie which makes him a super smart dog. His favorite thing to eat is green beans (isn’t that funny)! I kind of like green beans, but I really don’t like broccoli.

My favorite things are: jumping in puddles, making up songs, running, exploring, eating ice cream cones with sprinkles on top, and lions.

My favorite word is INDEED! I like to answer my mom by saying, “indeed”...like when she says, “Maggi, do you want to go to the zoo?” I always say, “Indeed!” (I LOVE the zoo!)

And my favorite day is Tuesday.

This time of year is a busy one for Flor-ida families. The school year is in full swing, and your children are taking on the academic challenges necessary to prepare them for not just the next grade level but college and a successful ca-reer. Extracurricular sports and activi-ties are keeping your family busy after school and on weekends.

This also happens to be the season for Florida Prepaid College Board’s Open Enrollment, the only time each year that families can purchase one of the Florida Prepaid College Board’s five prepaid tuition plans and prepaid dor-mitory plans. Open Enrollment began October 15, 2016 and runs through February 28, 2017. Prices this year start as low as $47 a month.

The Florida Prepaid College Board en-courages families to take these weeks to learn more about college costs – and the options available to start sav-ing now and avoid debt later.

Here are a few important statistics to consider:

•Childrenwithaslittleas$499des-ignated for college are 2.5 times more likely to enroll in and graduate from college.

• The Federal Reserve reported lastyear that student debt across the U.S. has reached about $1.2 trillion. Mean-while, more than two-thirds of new alumni have debt, at an average of $35,000 per graduate.

•Astudentwithabachelor’sdegreecan earn $1.6 million more in their life-time than a student with only a high school diploma.

• According to projections, 59 per-cent of all jobs in Florida will require postsecondary education by 2018, but only 43 percent of Floridians are projected to hold a college degree by 2025, leaving the state with a signifi-cant “skills gap.”

The Florida Prepaid College Board makes the process of saving for college more affordable by allowing families to prepay, on a monthly or lump-sum basis, the future cost of college tuition and specified fees. The younger your child, the more years you have to save, and the lower the monthly payments. This year, families can purchase a 4-Year Florida University Plan for a newborn for as low as $187 a month, a 2 + 2 Florida Plan for under $148 a month or a 4-Year Florida College Plan

for less than $117 a month. The 1-Year Florida University Plan for a newborn starts as low as $47 per month and covers 30 university credit hours. Mul-tiple family members can purchase a 1-Year Florida University Plan for the same beneficiary, effectively sharing in the cost of a university degree.

If a child attends an out-of-state college or private college, Prepaid Plans will pay the same amount as they would pay at a public college or university in Florida. Also, if a child receives a scholarship, Plan purchasers can get a refund for the same amount as the plan would pay a public college or univer-sity in Florida. Every Prepaid Plan is guaranteed by the State of Florida.

CARE OF YOUR CHILD’S TEETH

Begin daily brushing as soon as the child’s first tooth erupts. A pea size amount of fluoride toothpaste can be used after the child is old enough not to swallow it. By age 4 or 5, children should be able to brush their own teeth twice a day with supervi-sion until about age seven to make sure they are doing a thorough job. However, each child is different. Your dentist can help you determine whether the child has the skill level to brush properly.

Proper brushing removes plaque from the inner, outer and chewing surfaces. When teaching children to brush, place toothbrush at a 45- degree angle; start along gum line with a soft bristle brush in a gentle circular motion. Brush the outer surfaces of each tooth, upper and lower. Repeat the same method on the inside sur-faces and chewing surfaces of all the teeth. Finish by brushing the tongue to help freshen breath and remove bacteria.

Flossing removes plaque between the teeth, where a toothbrush can’t reach. Flossing should begin when any two teeth touch. You should floss the child’s teeth until he or she can do it alone. Use about 18 inches of floss, winding most of it around the middle fingers of both hands. Hold the floss lightly between the thumbs and forefingers. Use a gentle, back-and-forth motion to guide the floss be-tween the teeth. Curve the floss into a C-shape and slide it into the space between the gum and tooth until you feel resistance. Gently scrape the floss against the side of the tooth. Repeat this procedure on each tooth. Don’t forget the backs of the last four teeth.

GOOD DIET = HEALTHY TEETH

Healthy eating habits lead to healthy teeth. Like the rest of the body, the teeth, bones and the soft tissues of the mouth need a well-balanced diet. Children should eat a variety of foods from the five major food groups. Most snacks that children eat can lead to cavity formation. The more frequently a child snacks, the greater the chance for tooth decay. How long food re-mains in the mouth also plays a role. For example, hard candy and breath mints stay in the mouth a long time, which cause longer acid attacks on tooth enamel. If your child must snack, choose nutritious foods such as vegetables, low-fat yogurt, and low-fat cheese, which are health-ier and better for children’s teeth.

FACTOIDSWHAT IS A PEDIATRIC DENTIST?

The pediatric dentist has an extra two to three years of specialized training after dental school, and is dedicated to the oral health of children from infancy through the teenage years. The very young, pre-teens, and teen-agers all need different approaches in dealing with their behavior, guiding their dental growth and development, and helping them avoid future dental problems. The pediatric dentist is best qualified to meet these needs.

YOUR CHILD’S FIRST DENTAL VISIT - ESTABLISHING A “DENTAL HOME”

The American Academy of Pediatrics (AAP), the American Dental Association

(ADA), and the American Academy of Pediatric Dentistry (AAPD) all recommend establishing a “Dental Home” for your child by one year of age. Children who have a dental home are more likely to receive ap-propriate preventive and routine oral health care.

You can make the first visit to the dentist enjoyable and positive. If old enough, your child should be informed of the visit and told that the dentist and their staff will explain all procedures and answer any questions. The less to-do concerning the visit, the better.

It is best if you refrain from using words around your child that might cause unnecessary fear, such as needle, pull, drill or hurt. Pediatric dental offices make a practice of using words that convey the same message, but are pleasant and non-frightening to the child.

FROSTED FRESH GRAPES1 pounds seedless grapes 1 egg white slightly beaten 1 package Jell-O Gelatin (any flavor)

Cut bunches of grapes into small clusters. Dip clusters one at a time into beaten egg white. Hold to let the excess egg white white drain, then sprinkle with gelatin. Freeze on tray covered with wax paper for about three hours.

1 cup raisins

2 cups dried apricots, sliced

1 1/2 cups dried pineapple chunks

1 1/2 cups dried papaya

1 cup shredded coconut

2 cups banana chips

2 cups brazil nuts

1 cup chopped pecans

1 cup peanuts

2 tsps. salt

You can whip together most of these recipes in less time than it would take to race to the store for a pre-packaged snack. Try them for quick after school snacks or quick bites between sports and activities.

APPLE FONDUE

1/2 cup low-sugar, low-fat

chunky peanut butter,

almond butter or soy butter

1/4 cup crispy or

chocolate rice cereal

1/8 cup raisins

2 green apples cut into wedges

CARROT COOKIES

1 cup shortening

3/4 cup sugar

1 egg

1 cup mashed cooked carrots, cooled

1 tsp. vanilla

2 cups flour

2 tsps. baking powder

1/2 tsp. salt

Preheat oven to 350. Cream shortening and sugar

and beat in egg. Add carrots and vanilla and con-

tinue to mix. In a separate mixing bowl, sift flour,

baking powder, and salt and stir into batter.

Drop by teaspoonfuls, tw

o inches apart, onto a

greased baking sheet. Bake for 20 minutes or until

done. Cool on rack. Makes about 30 cookies.

WALDORF SALAD IN A CONE1 cup grated carrot 1 cup chopped celery 1 cup chopped apple 1/2 cup chopped walnuts 1/2 cup raisins 2 to 3 tbsp. mayonnaise 1 tsp. lemon juice 4 ice cream cones

In a large mixing bowl, stir all ingredients well. Scoop into ice cream cones. Serves four.

Mix the peanut butter, cereal, and raisins in a small bowl.

Let the kids dip the apple wedges into the thick peanut

butter mixture. If you prefer to thin it, melt the peanut butter

in the microwave first, then add the cereal

and raisins and serve warm. Serves two.

Options: Try marshmallow crème or caramel

instead of the peanut butter.

4. Give a Gift: Sometime mid flight, give your child a small gift. It doesn’t have to be expensive just something new to explore and talk about. It could be a new book about travel, like A Day at the Airport by Richard Scary or the My Plane Trip coloring book, by Dover Coloring books.

When all is said and done, the best thing parents can do is enjoy the ride and make the travel to get there part of the adventure.

Playing I Spy or talking about all the fun ahead and taking pictures to capture the moments will make your trip one to remember for years to come.

T raveling with kids makes the journey both a joy and a lesson in patience for mom and dad. I remember, not too long ago, when my kids were in the 5-and-under set, watching their litle faces glow with excitement as they waited for the plane to blast off. At the time, Little Einsteins was at the height of popularity, and they would be tap, tap, tapping their little legs in a drum roll build-up until the plane took to the sky with a “Blast Off” finale. And turbulence, well turbulence is better than a ride at DisneyWorld, according to my then 3 year old who would shout “yippee” as we bounced up and down and the rest of the passengers grew pale. Of course, after the excitement of blasting off settles down, parents need the most patience to help their little travelers make the best of the journey.

Here are a few tips to make your journey a little more fun:

1. Backpack of Fun: Pack a backpack to be used for the sole purpose of entertainment. Include favorite books, finger puppets, Travel Magna Doodle, and the like. Think “quiet busy” with-out too many little pieces to retrieve when dropped on the floor of the plane.

2. Snacktime: Bring snacks, in a variety of packaging to keep little minds busy. Cereal, fruit chews, GoGo Squeez, and uncrustables (in the package to get through airport security) are some great on the go options.

3. Digital Fun: The go-to option of modern day parents – the iPad or tablet – pro-vides hours of entertainment through movies, and games. Snail Bob, Peekaboo Barn, ColorStudio HD, LEGO DUPLO Train and Petting Zoo are a few apps to check out.

DEVICE The biggest thing moving to the masses this holiday season may be VR. With the launch of Samsung Gear VR ($100), Sony PlayStation VR ($400), and Oculus Rift ($600), the next wave of gaming has hit. While the littlest of the little ones may not care too much for the devices, those with a older children may see these devices on their holiday lists. Each require a phone, console,

or computer to run the software and engage in the experience of virtual reality.

VR has come a long way from the days when 8-bit blocks used to

make us a little dizzy as our mind tried to adjust to the virtual part of that reality. These devices are at the forefront of what will take us to new places without leaving our living room. If enjoy the technology, stop by your local Best Buy or another technology store to check them out before you buy.

Choosing the right one may be easier

than you think. If you would like to ex-perience the

basics, have a Samsung phone,

and want to spend as little as possible, Google Cardboard or the Samsung Gear VR is the easiest entry point. If you have a PlayStation 4, the PlayStation VR is probably the best place to start.

There will probably be decent bundles out as the holidays approach and pass. Lastly, if your fam-ily is into the newest and greatest, Oculus Rift is your choice.

Of course, if you just want to see c r ea t u r e s i n everyday life, you can always just launch Pokémon Go and catch that Pikachu in your child’s cereal bowl. Enjoy the new toys as a family.
