S tudents in Cindy Roberts’ popular cooking classes would never guess that her first foray into cooking began with a failure.

When she was in kindergarten, a teacher asked her to put differ-ent activities into one of two categories: work or play. Mowing the lawn was work. Riding a bike was play. But what was cooking?

For Roberts that was a no-brainer. Inspired by her Easy Bake Oven, she marked that cooking was play. Her kindergarten teacher, possibly embittered by years of bad cooking experiences, marked that answer wrong.

But to the benefit of local home chefs, the Palo Alto resident didn’t let that discourage her. Now she teaches cooking tricks, tips and techniques in classes such as “Sensational Summer Des-serts” and “Mediterranean by the Sea” through Palo Alto Adult School.

This month, Roberts, now 45, will teach students how to use seasonal ingredients to spice up summer picnics in her new class, “Picnic in the Park.” Students will learn how to make dishes such as “Marinated Zucchini,” “Baguette Sandwich with Roasted Egg-plant” and “Spicy Chicken Noodles.”

Driven by her life-long love of cooking, Roberts has taken more than 100 cooking classes, including one at Le Cordon Bleu in France and several classes with Bay Area chocolatiers. But three years ago, Roberts decided to supplement her software career by taking her cooking to a higher level.

“I wanted to take my hobby, which was cooking, and turn it into more of a profession,” she said.

said. Students also get to taste-test different ingredients — per-

haps different kinds of olive oil, rice or salt. One lucky class even got to taste-test 15 varieties of chocolate. “Picnic in the Park” students will sample and discuss different varieties of eggplant, including Chinese and Japanese.

These taste-testings reflect Roberts’ emphasis on fresh, sea-sonal and high-quality ingredients. She hopes that students leave her classes with an appreciation of the huge difference that even minor ingredients can make in the final meal.

“A recipe is only as good as what you put in it,” Roberts said.

With that perspective, Roberts likes to experiment with un-usual ingredients such as galangal, an Asian plant that is simi-lar to ginger. Roberts’ husband is Malaysian, so Asian foods and ingredients often make an appearance in her cooking. This year, she’s also teaching a Malaysian cooking class for the first time that features a tasting of many different kinds of rice.

Roberts takes sharing her passion for culinary arts very se-riously. She says that cooking classes often attract an older demographic of students, but she hopes to encourage people of all generations to fall in love with cooking.

Serves eightPrep time: 30 minutes

Ingredients:1 lb. boneless, skinless chicken breast12 oz. spaghetti noodles2 t. sesame oilSalt1/2 C. tahini (sesame paste) (or peanut butter)6 T. water2 T. hot chili oil6 T. soy sauce4 T. red wine vinegar2 T. sesame oil1/2 C. peanut oil4 T. minced garlic (about six cloves)1/4 C. cilantro leaves6 scallions

Special equipment:Small food processor

Instructions:Preheat oven to 350 degrees.Place chicken in a baking dish. Cook in the

oven until cooked through, about 20 minutes for very thinly sliced chicken, 40 minutes for thicker. Let cool. When cool, shred chicken into small strips.

While chicken is cooking, bring a large pot of water with 1 t. of salt to a boil. Cook the noodles until al dente, about seven minutes. Drain the noodles and rinse to cool. Toss with 2 t. of sesame oil.

Smash garlic with the side of a chef’s knife and remove skins. Mince garlic in the food processor. Chop cilantro and scallions.

Mix together garlic, water, vinegar, soy sauce and remaining oils until thoroughly blended.

Toss together chicken, tahini mixture, noo-dles, cilantro and scallions. Serve at room temperature.

W hile green design and construction are finally start-

ing to get a lot of press and people are building longer-lasting, more efficient struc-tures, there is an important aspect of sustainable design that is being conspicuously overlooked — how today’s active homeowners will have to adjust their surroundings as their physical abilities change or decline with time and age.

Since the heart of green building focuses on saving energy and materials in construction, and most people have no intention of leaving their homes in their later years, it seems that integrating the universal design principles of “equal access for all,” “low physical ef-fort” and “size and space accommodations” from the onset is the most practical and green thing to do.

As baby boomers age in increasingly large numbers, universal design (also known as accessible design) is going to be in greater demand than the design com-munity is actively addressing. And while homeowners don’t seem to be asking for it widely now (most of my baby-boomer friends and acquaintances seem to think they are immortal), many friends, including my own family, are having aging parents and in-laws either visit often or move in permanently.

Those who live in a one-story home innocently think that there will be no issues related to having guests over with any disability since there is only one floor to deal with. However, some of these one-story homes have a step down into their den or living room, several steps up or down from the sidewalk to their front door, or a step into their house from the garage.

Many of these homes have long, narrow hallways with very small bathrooms, neither of which could comfortably accommodate a wheelchair. The guest bath usually has a tub/shower combination without any grab bars or a place to sit down and a shower head that is in a fixed position almost seven feet high. All these elements can pose very real challenges to those who are of smaller stature, physically impaired or sim-ply too weak to stand on their own for long periods of time.

I became particularly sensitive to this issue when my younger brother, a bachelor, was temporarily in a wheelchair due to operations on his feet. Coming home to his fairly new one-story house in Nevada, he could not manage the entrance step and he was too woozy to be on crutches.

And at 6’6” tall with a very large build, no one could carry him into his home. Since the hospital had not given him a wheelchair and we hadn’t prepared a ramp to clear the 4-inch step, my poor woozy brother had to crawl into his home on his hands and knees right after the operation.

When my older brother (affectionately called Nurse No. 1) finally got a wheelchair and built a ramp that

afternoon, a major crisis of self-sufficiency was averted ... we thought.

What else could my brother not do for the few weeks he was in a wheelchair in his one-story home?

He could not get into the bathtub or the shower. He could only reach the upper cabinets’ lowest shelf. He had to go down the long, narrow hall to the bedroom slowly so as not to skin his knuckles as he was turning the wheels of his wheelchair. One of the most frustrat-ing things was he could not pick up his daily newspa-per or retrieve his mail, as both required maneuvering down yet another 4-inch drop and a dangerously steep driveway.

As much as I would have liked to, I (Nurse No. 2) could not bring him to my house because my two-story house had three steps to enter from the driveway and a guest room that was downstairs. That was two years ago. I am now about to move back into my own remod-eled home after twelve months of major renovations that have included every green element I could think of, including lots of universal design features.

Today, as I fill out my application from Build It Green, I have a warm and fuzzy feeling while I check off the accessibility section of the GreenPoint rating system.
