HARVEST & DRY The grapes are hand-harvested and laid out on straw mats to dry for up to 120 days. They
lose about 40% of their water content. Raisins, anyone?
Step 2
A SLOWFERMENTATIONThe dried grapes are then slowly fermented at low temperature
for up to 50 days.
Step 3
TIME TO REST, AGAIN
The wine is then transferred to oak or chestnut barrels and aged from
two to four years depending upon the style.
Expect bold aromas of cherry liqueur, black fig, carob, cinnamon, plum
sauce, and chocolate. The older the wine the more it will offer flavors of brown sugar, molasses, and fig.
