The national flower of Thailand is the orchid. Around 1,500 orchid species can be found growing wild in Thai forest. There’s a reason why Thailand is one of the world’s largest

The Durian, a fruit of Thailand, is so pungent it’s banned in many public places. However, the fruit itself is similar to marshmallow and whipped cream, making it a popular ingredient

in many Thai desserts.

Thailand is home to the world’s 9th tallest statue, The Great Buddha of Thailand, at the Wat Muang Monastery in Ang Thong province. It also has the world's highest stupa - Phra

Pathom Chedi - at 127 metres.

One of the country’s most unusual festivals is the annual Monkey Buffet, held in front of the Pra Prang Sam Yot temple in Lopburi province. More than 600 monkeys are invited to feast on over two tonnes of grilled sausage, fresh fruit,

ice cream and other treats.

Due to the country’s varied landscape, Thailand is home to numerous plants and animal species. An estimated 10% of all animal

species in the world are found in Thailand.

CHIANG MAI TEMPLES

A wonderful attraction for visitors, the old town of Chiang Mai is home to the most honoured temples and tranquil Buddhist sanctuaries. Wat Chiang Mai is the oldest temple while Wat Chedi Luang boasts a gigantic chedi ruin said to be the tallest structure in the old town. Be sure to take in Wat Umong whose main feature is a system of maze-like tunnels.

AYUTTHAYA

The former capital of Siam, and at one time one of the largest cities in the world, Ayutthaya still retains many of the enormous structures it once boasted. Many of the ruins have now been designated a UNESCO World Heritage Site and there is plenty to see across this 2,556-square kilometre city. Take one of the multiple buses from Bangkok to see this fascinating sight and experience some of the wondrous ancient history of Siam.

TEMPLE OF THE RECLINING BUDDHA

Adjacent to the Royal Grand Palace, Wat Pho is Bangkok’s oldest, largest and most famous temple. The grounds contain over 1,000 statues of Buddha while the temple houses one of the most impressive sights, the Reclining Buddha. This 48m long and 15m high statue is gold-plated and inlaid with mother of pearl. In the 19th century, Wat Pho became a centre of learning and is considered the birthplace of the traditional Thai massage. Visitors today can still have a massage and learn about the ancient art of Thai Medicine.

PHANG NGA BAY

This popular holiday spot is characterised by sheer limestone cliffs that jut vertically out of the emerald green water below. There is a fascinating collection of 3,500 islands (mostly uninhabited) which are unique in that they feature collapsed cave systems with hidden realms of flora and fauna. Many can only be reached by inflatable kayak which makes exploring the bay even more exciting. The most popular of the islands is James Bond Island, named for having been where the movie The Man with the Golden Gun was filmed.

Traditional Pad ThaiWant to recreate authentic Thai flavours at home? We’ve got the perfect recipe for you. Pad Thai is a stir fried rice noodle dish commonly served as street food and at most restaurants

in Thailand; it packs all the delicious Thai flavours you would expect.

INGREDIENTS

• 1 tbsp dried shrimps (optional)

• 100g dried rice stick noodles

• 3 tbsp vegetable oil

• 2 eggs, lightly beaten

• 2 garlic cloves, smashed

• 200g small fresh prawns, peeled

• 100g bean sprouts, rinsed

• 2 spring onion greens, chopped into 3cm/1in lengths

• 3 tbsp Thai fish sauce (nam pla)

• 1 tbsp tomato ketchup

• 2 tbsp lime juice

• ½ tsp dried chilli flakes or cayenne

• 1 tbsp palm or brown sugar

• 2 tbsp roasted peanuts, lightly crushed

• 2 tbsp coriander sprigs

• 1 lime, quartered

METHOD

1. Grind the dried shrimps to a fluffy powder in an electric coffee grinder (you can clean out the grinder by whizzing raw rice in it).

2. Cover the noodles with boiling water and leave for 15 minutes or until al dente. Rinse in cold water and drain well, then use 1 tsp of oil to coat your hands and run them through the noodles to help prevent sticking.

3. To make the omelette, heat 1 tbsp of the oil in a wok and swirl to coat the surface. Pour in the beaten eggs and swirl to make a very thin omelette. Run a knife around the edge, turn out, slice into strips and set aside.

4. To cook the noodles, add remaining oil to the wok and heat. Add the garlic and the prawns and toss over high heat. Set the prawns aside.

5. In turn, add the noodles, omelette strips, bean sprouts, spring onions, shrimp powder, fish sauce, ketchup, lime juice, chilli and sugar, tossing constantly over high heat.

6. To serve, scatter with crushed peanuts, coriander leaves and quartered limes.

The second biggest province in the South of Thailand, Nakhon Si Thammarat is an ancient city that played a huge part in Thailand’s expansive history. NAN

Nan is located in the most eastern part of Northern Thailand, surrounded by the spectacular misty mountains of Doi Phu Kha National Park bordering Laos. Nan is a place where tourists are rare, and you can truly experience the authentic Thai way of living. The town is home to hill-tribe villages in the high mountains, abundant waterfalls and no less than seven national parks.

SATUN

Satun has become an increasingly popular destination due its famous island, Koh Lipe. However, this small southern Thai province allows for the mingling of two distinct cultures due to its close proximity to Malaysia and has so much more to offer. Explore Thailand’s first UNESCO Global Geopark and the region’s interesting heritage; wander around the local night market; marvel at beautiful temples and mosques – you can do it all in Satun.

SUKHOTHAI

Meaning ‘the dawn of happiness’, Sukhothai (a UNESCO World Heritage City) sees a smaller number of visitors than its more popular counterpart Ayutthaya due to its more isolated location. Day 13: Chiang Mai departure Check out and transfer to Chiang Mai Airport for your onward flight.

Day 8: Boklua – Chiang Kham Set off around 7:00am to Chiang Kham in Phayao. Here, you’ll visit a local village and the Thai Leu weaving house. Observe the locals at work for the art of weaving. Proceed to visit Wat Nanthalam and Wat Phra That Doi Kham temples. Transfer to Phadaeng Bat Cave for a beautiful sunset and cave walk.

Day 11: Mae Chan – Chiang MaiDrive to view Wat Pa Archa Thong, the horse-riding monk temple, followed by a visit to small villages and hilltribes. After a short stop at the White Temple and the Black House, reach Chiang Mai by the afternoon. Enjoy an evening at the home of a local family.

Day 7: Nan This morning involves more sightseeing around Nan town. Continue to Wat Baan Phra Kerd for a tung (flag) workshop and give your flag to a monk for blessing. In the afternoon, take the two-hour journey to Boklua. Check in at your new resort with its lush views before a BBQ dinner under the stars.

Day 10: Chiang Kham Mae Chan Take the 2.5-hour drive to the Golden Triangle area, where the borders of Thailand, Myanmar and Laos meet. Visit the ancient Kingdom of Chiang Saen then embark on a long-tail boat trip on the mighty Mekong River before visiting the Hall of Opium. In the afternoon, transfer to Mae Chan.

Day 12: Chiang MaiRise early, arriving at the foot hill of Doi Suthep mountain in time to join the locals during the daily alms giving ceremony. Proceed to Wat Umong temple and experience your own private blessing ceremony. Visit the lively Waroros market and sample some local Thai sweets to finish off your trip.

Day 9: Chiang KhamDrive by the rice fields to Wat Phra Khaew, a 400-year old temple. Make a short stop at one of the biggest Bo trees in Chiang Kham and Thailand, then visit the Huai Sa Reservoir. From here, drive to visit the “Community Jungle”, where you will start the soft trekking for about 2 km while learning about this eco-friendly environment. Enjoy lunch at a local restaurant then head to Wat Phra Nang Din temple. Today’s trip then ends at a vegetable market at Ban Chayaphrom before you return to your resort.
