W hat do you think of when you hear the words “Japanese food”? If you’re like most Americans, you probably think sushi and teriyaki and tempura. Toshio and Keiko Sakuma decided several years ago to do their part to broaden that defini- tion, at least in the minds of Pen- insula diners. After owning and operating a successful sushi bar in Menlo Park for nine years, they changed course in 2004. “We knew we were going against the flow, but we wanted to let people know there’s more to Japanese food than sushi,” Keiko Sakuma says. As their Kaygetsu restaurant celebrates the third anniversary, this month, of its opening in the Sharon Heights Shopping Center in Menlo Park, the Sakumas are basking in a glow of success they couldn’t have imagined possible when they made the decision to buck the trend and introduce local diners to elegant, traditional kaiseki cuisine. Just in the last four months, Kaygetsu: Won a rating of 28 out of 30 from the influential Zagat Survey. (To give an idea of Zagat’s stan- dards: Alice Waters’ Chez Panisse is rated 28; Thomas Keller’s French Laundry is rated 29.) — usually seven to nine courses — that features premium sea-sonal ingredients. The carefully ordered presentation of the food on serving ware of ceramic, bam-boo, lacquer and other material is an essential feature of the cui-sine: The food must delight the eyes as well as the palate. Samples of some courses on Kaygetsu’s menu, which changes every six weeks, are: scallop and shrimp, wrapped with cher-ry leaf and deep-fried, served with green tea salt; grilled ocean trout, topped with sake lees, with Brussels sprouts and orange salad; and sliced duck, cooked with egg, served over rice, with clear soup with fish somen noodles. The seven-course kaiseki meal served at Kaygetsu is not as formal as the original tea ceremony-based kaiseki, says Toshio Sakuma. There aren’t the strict rules to follow, and rather than tea, diners often drink sake. “Here, you enjoy time, enjoy drinking sake, enjoy food,” he says.

Artists inthe kitchen The thrill of exploring an unfamiliar cuisine and tradition is surely a factor in fans’ enthu-siasm for Kaygetsu. But it doesn’t explain the raves the restaurant is receiving among food critics and demand-ing diners. Beautifully sculpted food aestheti-cally arranged on a plate would be merely a target of ridicule if it tasted bad. Not much chance of that at Kaygetsu. Chefs Katsuhiro Yamasaki and

Shinichi Aoki call upon the skills learned while studying the art of kaiseki in Kyoto, its birth-place. Mr. Yamasaki worked for Kitcho in Kyoto, a restaurant famous for its kaiseki; Mr. Aoki

also began his chef ’s career in Kyoto, then worked for a Japa-nese restaurant in New York for five years before coming to the West Coast. Both men worked for the Sakumas when they owned Toshi’s on El Camino Real in Menlo Park, putting their kaise-

ki skills on hold while working in the kitchen with Mr. Sakuma, a Tokyo-trained sushi chef. When the Sakumas decided they wanted to try something different after nine years of operating Toshi’s, the choice of kaiseki was made even easier by the fact that two kaiseki chefs were already in their midst.

A risky enterprise Because kaiseki was almost unheard of in this country, the Sakumas realized they were taking a risk with their new endeavor. “But there were too many res-taurants going fusion, and there were a lot of sushi restaurants, so we wanted to have a restau-rant with more authentic food, food in the traditional form,” Ms. Sakuma says. “We thought people would be interested in real Japanese food.” One reason the Sakumas were

ready for a change was that the work at the small, popular Toshi’s was physically demand-ing, Ms. Sakuma explains. They thought operating a kaiseki res-taurant would mean that the pace would be slower, and the stress, lower, she says. But developing a base of patrons was a slow process. “It was kind of scary at first,” Ms. Sakuma says. Now, although the physical demands are fewer, operating Kay-getsu has been “men-tally demanding,” she says. The high praise and Zagat rating have upped the pressure for the couple. “We have to meet people’s expecta-tions, and pay attention

A leisurely experience Reservations are needed for a kaiseki meal at Kaygetsu. Dinner there is a two-hour experience — there’s no rushed service, no push to clear tables. The spring menu costs $95 per person, with a 16 percent service charge added. Sake pairing with the meal is $34 per person. For diners who want sushi or other more familiar dishes, there’s a separate menu. Toshio Sakuma, who supervises the kitchen in general, prepares the meals for those ordering from that menu. The restaurant also serves lunch, with a menu offering sushi, sashimi, various tempura dishes and other items. A

Like most people, I enjoy going out to dinner. Yet one moment always gives

me grief — deciding on the tip, especially when wine is included in the bill. It’s customary to tip 15 to 20 percent at restaurants, but I often wonder if wine requires a change to that equation. Call me etiquette-challenged. Nothing generates more con-troversy and confusion than the subject of tipping on wine. It is the cause of anxiety for many restaurant patrons. Craig Gleason of Los Gatos admits, “I finally decided that the uncer-tainty it caused me was not worth the amount I saved.”

Financially flustered Purchasing wine can increase the tip considerably. Consider a dinner where food costs $50 and a bottle of wine is $50. Including wine in the tip calculation basi-cally doubles the tip. If you order an expensive bottle of wine for $200, is a $40 tip reasonable for having it served to you? Restaurant wines are priced at a significant markup to retail; consequently, tipping on the price of wine can add greatly to its expense. A wine costing $20 retail is marked up to $60 at a restaurant. Adding $5 for tax and $12 for tip makes the total

cost of the bottle $77. It’s no won-der that many people are bring-ing $50 wines to restaurants and willing to pay $20 for corkage.

Opinions of patrons “I include the cost of the wine in the tip calculation, but I’m not sure that’s a requirement, espe-cially when very expensive wines are included,” says JP Miller of Portola Valley. Alternatively, Bruce Zeiser of Menlo Park says: “I usually pay a tip of 15 to 20 percent of the total food and wine bill (basically double the sales tax) depending on quality of service. If the wine bill or corkage is large, then I drop down to the lower end of the range.” Since restaurants add signifi-cant markups on alcohol, many customers feel tipping on wine is an egregious expectation. Years ago, when I worked in New York City, an older New

Yorker advised me to never tip on alcohol. Some locals agree. Pardeep Singh of Belmont advis-es, “No tip on wines and alcohol purchased from the restaurant that you are having dinner at.”

Restaurateurs’ views John Sanders, wine director of Marche in Menlo Park, advo-cates tipping on the total bottle price. In addition, he advises, “Above anything, tip according to service. A lot of wait staff (think) that because they show up for work they should be tipped.” Jesse Cool, owner of the Flea Street Cafe in Menlo Park, rec-ommends: “Tip on the whole bottle (16-20 percent). Either tip nothing or generously — tend to the extremes.”

Check, please I recommend a solution that is similar to the restaurateurs’ advice. Tip 15 to 20 percent on the total bill where wines cost less than $100 per bottle. This should cover most situations. When wines are purchased that cost more than $100 per bottle, simply add a $20 tip per bottle, which is equivalent to a corkage fee. Keep in mind that the quality of the restaurant, the service, or the occasion may justify an increase or decrease in the final amount. A

A world premiere, two West Coast premieres, and a regional pre-miere are included in the Theatre-Works’ roster of eight productions for 2007-2008 season. The schedule was announced recently by TheatreWorks founding Artistic Director Robert Kelley and the new Managing Director Phil Santora. The West Coast premiere of “Theoph-ilus North” by Matthew Burnett, adapt-ed from the novel by Thornton Wilder,

will be presented July 18 through Aug. 12 at Lucie Stern Theatre. “Emma,” the world premiere musical by Broadway composer Paul Gordon, adapted from the novel by Jane Aus-ten, will play Aug. 22 to Sept. 16 at the Mountain View Center for the Perform-ing Arts. TheatreWorks will honor the compa-ny’s most-produced female playwright, the late Wendy Wasserstein, by produc-ing her final play, the comic drama,

“Third,” Jan. 16-Feb. 10, 2008. “Third” will be staged at the Mountain View Center for the Performing Arts. The West Coast premiere of “South-ern Comforts” by Kathleen Clark opens March 5, 2008, and continues through March 30 at Lucie Stern Theatre. The 2007-08 season will close with Tony Kushner’s musical, “Caroline, or Change,” April 2-27. The season will also include, later this year, a revival of Bernard Pomerance’s

VISIONARY EYEGLASSESThe future of bifocals may soon resemble the liquid

crystal displays (LCD) used in high-tech television sets. Scientists have pioneered lenses with varying electrical voltages that are applied to a thin sheet of liquid crystals between two layers of glass. The Planning Commission participates in the administration of the planning laws and policies of the Town. It is responsible for recommending ordinances and resolutions necessary to implement the General Plan to the Town Council. The Commission also conducts necessary public hearings to administer the planning laws and policies of the Town and acts upon applications for zoning amendments, conditional use permits, variances, subdivisions and other related functions as may be assigned by the Council.

The Commission makes recommendations to the Town Council regarding land use, reviews proposed development projects, and advises as to the overall development and maintenance of the General Plan of the Town.

The Planning Commission meets on the first and third Wednesday at 7:30 p.m.; Commissioners are appointed for a four-year term.

District 2 includes Cedar Acres, the area west of Albion Avenue to south of Olive Hill Lane, the Bear Gulch area, and the Kings Mountain Road area.
