Learn to Brew!!!!! NEW Open Brew Days!!!
Don’t have the equipment and or knowledge? Just want hang out and brew beer. What are you
waiting for? Brew with Thorolf at the Vincog brewery, on the Baroness's estate, 417 Free State Dr., Shirley, NY, 11967. Kettle fire at noon. Check baronial calendar for dates all. Please RSVP with Thorolf, [email protected] or 631-258-
3576. No calls after 9:00pm. Contact Thorolf at same for more information. Email preferred text discouraged. Anyone emailing me on the
subject will be added to Google calendar and receive automatic updates as they become available. Dates may be canceled without notice if
no one RSVP's and the quantity of wort being prepared is based upon RSVP's.
One must contribute to the production costs and participate in the brewing process to be eligible for wort. Once the yeast is pitched its beer
and I can’t sell beer. One must also provide ones own transport container or packaging, ie Primaries or carboys for wort . Estimated material
cost is $4.00-$5.00 per gallon of wort. Supplies might be limited. If you need a yeast pinch let Thorolf know when you RSVP so one can be
arranged.
Every month we will try to do something different: style, ingredient, technique etc or explore in depth some basic technique of the process.
April 18- 2 weeks to crown, plenty of time to brew an all grain hefeweizen, the first summer beer of the year. This will have a very simple
grain bill, half malted wheat and half malted barley, with a protein rest for the wheat to aid in it's utilization.
May 23 & 25- Finally a long weekend but barley long enough for a sour mash Berliner weisse. Saturday we will start a sour mash with the
wheat portion of the Berliner weisse that we will brew on the Monday holiday. the sour mash will also serve as the protein rest for the
malted wheat.
Looking for suggestions for 2015. June-August it's Kölsch yeast. In autumn were going back to English ale yeast and English and autumn
beers in including another unspiced Pumpkin or squash beer. At some point we will have to do braggot, meads, and a wine in the fall, if
there is interest.
NEW!!! Baronial Bardic Circle!!!
Come and be welcome! I, Lady Saruke thugater Elmanos, do call to all who would care to laugh, sing, dance, tell
stories, and in general be merry! On the second and fourth Saturday of each month there will be a Bardic Circle in
Ronkonkoma, NY at my home. Please feel free to come even if you do not wish to perform (we need people to listen/
watch our silliness). It will be open from 4-8:30pm with a food break somewhere (bring food if you want, we'll order
out if not), but you only need stay for as long as you can. We will be discussing anything that comes up and throwing
around some new and not-so-new songs/stories to learn and laugh about. Discrete drinking is fine, but I ask that there
not be intense drunkenness for my housemates' sake. Who: Everyone!
What: Bardic Circle

To The Populace of An Dubhaigeainn: Greetings. I had the privilege of running our annual Spring Schola this weekend and it
was a resounding success. This could not have happened without the efforts of many
people whom I would like to recognize here.
First, my Deputy Autocrat Lord Nikolai Wegner, and my Deputy Castellian Kaalos Dymas
for their endless assistance before during and after; Nikolai made the scroll site tokens,
Kaalos sat troll with me, they both helped with the pricing and running of the garb sale,
as well as each teaching a class or two.
Next my Feastocrat, Lady Vetra, and Kitchen Staff, “The A Team” who taught and
created the dayboard and feast. It was all yummy and very nicely done. No one left
hungry, and there was something for everyone.
Next my Instructors; The Baron & The Baroness, Jenna Childslayer, Kaalos, Akos,
Douggmore Dumore, Stefanie Gangone, Eanraig MacEanraig, Lady Lada, Connor, Diana,
Angelica, Laurie Ann, Kerry Skadl, Colleen Skadl, Pete Boullianne, Nikolai, Harry Menke,
Michele Chang, Jordana Urbik, Linda Gunderson, Countess Brekke, Purple, Vittorio, Richard the Poor, Norman the Norman, Ateño, and especially Colin MacKenzie, Arnbiorg
Nials dottir, John the Bear, Ettore Dandolo. Those last four were supposed to teach
outdoor classes which were cancelled due to weather, but came out and held discussion
groups instead. You have really earned my gratitude (and a squirrel.) My apologies for mixing mundane & society names.
There were those who arrived early and/or stayed late to help me with set up and clean
up: Pete who brought, unloaded reloaded & returned the trailer as well as helping with set up, break down and safety issues before feast, Doug Kassner & Sheree Fuller, Diane
Angus & Maria Velasquez, Milo Teplin & Cat Wegner, Matt McCoy & Thomas Cordero,
Jessica Donohue & David Fishman, and Scott Petritsch.
Sheri Witty & Brett Kessler who also helped at Troll.
I also want to express my gratitude to all of you who braved the weather to come out
and join us. Those who showed up, paid the troll and learned something; had fun,
socialized and enjoyed food; displayed an A&S project, performed in the Bardic
Championship, or sat quietly to listen. You are the ones for whom we put on this event, the ones who make it fun, the ones who ensure the strength and growth of our Barony,
our Kingdom and our Society.
Lastly, my family. Scott and Joel here at home & Amanda from afar at school, have helped me and sustained my efforts to grow in Society and as a person, and I am
forever grateful for their continuing love and support.
Yours in Service & humbly grateful
Lady Sláine Baen Ronáin / Pamela Petritsch

Unto the populace of An Dubhaigeainn, do your
Baron and Baroness send greetings!
We hope with the close of March we can finally say goodbye to all the
snow and cold.
In March the Barony held its Spring Schola – during which a new A&S
Champion was chosen; congratulations to Genvieve Velleman for her
lovely pewter casting.
With sadness and joy there were no competitors for the Bardic Champion
despite the many performers. The sadness is that we could not pick a
new Champion, the joy is that we were able to extend Eanraig the
Bonesetter’s tenure as our Champion. We hope that those with bardic
tendencies will prepare for next year.
We would also like to congratulate and thanks Lady Michele the Ubiquitous for her work which earned her
a Silver Feather.
So now bring on the spring and the new beginnings.
Those new beginning include the Coronation of Their Highnesses Omega and Etheldreda an April 11, and
Crown Tournament for Their Heirs, which the Barony will be hosting on May 2nd. Anyone interested in
working on or being involved in the event to contact the autocrat ([email protected]). Many
hands make light work. Let’s show the Kingdom what An Dubhaigeainn can do.
Currently the following events are on the horizon in addition to the above Royal progresses: April 18,
Ostgardr’s Day of Champions; June 5th through 7th we must Find Hungry Samurai; June 13, K&Q Rattan
Champions/Iron Bog Baronial Investiture and on the 27th will be Potted Arms, where the next Fencing and
Thrown weapons champions will be chosen. Check Kingdom events calendar for more details.
With a new season of events both within the Barony and beyond we are looking for individuals who want to
learn how to be retainers. The job is not hard, and can be entertaining. It’s a great way for a new member to
better understand how the Barony and the SCA works. All interested parties should contact the Baroness.
We look forward to see the members of the populace to take advantage of the many opportunities to
participate and enjoy the activities in the Barony.
David and Suzanne
