M E T H O D• Make the potato topping mix.• Add 100g of leeks per kilo of mash and mix.• Form the mixture into approx. 150g balls and

make a pocket in the centre with your thumb.• Add approx. 20g sliceable sauce into the

pocket, seal, mold into shape and chill.• Make the batter using cold water and

shake well.• Brush with batter and roll in schnitzel mix. • Wrap a slice of leek around the outside

and garnish.

M E T H O D• Make the potato topping mix.• Add 400g of flaked fish per kilo of mash.• Add parsley and mix gently.• Form the mixture into approx. 170g balls and

make a pocket in the centre with your thumb.• Add approx. 20g sliceable sauce into the

pocket, seal, mold into shape and chill.• Make the batter using cold water and

shake well.• Brush with batter and roll in schnitzel mix.

and wrap around the log.• Brush with world grill and dip each end of the

log in decoration mix.
