DM Welcomes
Executive Chef
Please join
us in welcoming Matt McLinn as he will oversee all culinary operations at DMC. For more than 25 years, Matt has enjoyed an illustrious career in the restaurant industry ap-prenticing and cooking alongside some of the culinary world’s most recognized names.
Matt graduated from the Culi-nary Academy in San Francisco and moved to Phx to hone his culinary skills under the tutelage of James Beard award winners Chef Christopher Gross and Chef Vincent Guerithault. After 3 yrs. in Phx, he spent a summer in Europe cooking with world-famous chef Alain Ducasse of the Michelin three-stared restaurant Le Louis XV of the Hotel Paris in Monte Carlo. Then, he moved to LA and worked with mentor and James Beard award-winner, Joachim Splichal from the world famous Patina in Los Angeles. Together, they opened Pinot Hollywood which earned a Best New Restaurant designation from the LA
Times. Additional experience in CA includes opening Polo Grille at Beverly Hills Hotel and Jiraffe in Santa Monica with Chef Josiah Citron and two years as chef at Arnold Schwarzenegger's Schatzi on Main. McLinn then returned to San Francisco to work with award-winning Chef Julian Serrano at Masas. During his time in the Bay Area, he was of-fered Executive Chef position at Stars Restaurant with Chef Jeremiah Tower. This was a significant accomplishment and McLinn was extremely honored, but declined and went to work with Kimpton Hotel & Restaurants as Cor-porate Chef. The following summer, he returned to Europe to study side-by-side with Dominique Bouchet of the Michelin three-starred restaurant, Les Ambassadeurs, located in Paris. Dur-ing this trip, he also had an opportunity to work at the Michelin two-starred Le Hotel Carlton in Cannes, France and Michelin one-starred Le Maison du Seignuer in Brussels, Belgium. In 2006, he opened his own restaurant, Méthode Bistro to rave reviews. Three years later, Méthode Bistro closed and McLinn was selected by Laurent Tourondel in NYC to open his BLT Steak at the 5 star 5 diamond Camelback Inn in Scottsdale.
In 2009, McLinn’s talents were tapped again, when he was se-lected as Executive Chef and General Manager of The Grind. Here, he has combined his Old World European techniques with modern day favorites using a custom designed coal-fired oven that burns at over 1000 degrees.

We are in the pro-cess of ordering all of the equipment, technology and sup-plies for the new Per-formance Center. We need a lot of equipment from more than 20 dif-ferent vendors. Lisa has volunteered to help organize this process and help the golf in-struction staff with the paper work and
communication with the Accounting Depart-ment. Lisa has written purchase orders, re-searched back up ma-terials, gotten bids for each item, the proper signatures, kept all of this organized, run effi-ciently and has stayed late or come in early when needed for this project. Her help has been invaluable. ————Dale Abraham, Dale Abraham, Dale Abraham, Dale Abraham, Dir of Instruction Dir of Instruction Dir of Instruction Dir of Instruction
I feel that Desert Mountain and all of its members are ex-tremely lucky to
have an employee like Jose. He is one of the friendliest people I have ever had the opportuni-
ty to meet and he truly knows how to lead a team. One would be hard pressed to find a problem that Jose can't fix and in a timely manner, with a smile. It is a pleasure working with him everyday. Thanks Jo-se! —Drew Leeland,
