here was a time – such as in the era ofAgatha Christie - when dining in hotels was

de rigeur. However this practice fell out of favour asthe 20th century wore on, possibly due to the culinary offerings of many British establishmentswhose menus barely changed whilst the rest of thecountry began to embrace cooking and cuisine fromfar flung places and then began to Anglicise it.

The balance slowly began to swing back to eating inhotel restaurants when the new breed of celebritychefs began to look into new ways of monetizing their‘brand’.

Menus regularly tweakedOf course, a chef can flip flop between different stylesto remain relevant and appealing - but must also giveeach and every menu a tweak, in order to keep us, thecustomers happy.

Micky Walker may not have his own TV show or seriesof bestsellers in bookshops across the UK - but theHoliday Inn Southend’s Head Chef deserves greaterawareness. The modest 52-year old is delighting customers with his take on Modern British Classicsand promises there is more to come:

“People do say that we’re serving the sort of food youwouldn’t expect in a hotel of this type. Although I’d saythe menu is designed for all tastes, we are cooking formore discerning customers. Recently, the 1935

“It’s definitely not ‘ping and ding’ cooking,” says Micky,“But there are times when you don’t want anythingtoo fancy, so I’ve balanced the menu to look after alltastes and moods. And if there’s something you re-ally want but can’t see on the menu, please don’t hes-itate to ask. We go out of our way to accommodate people. For example, we had one couple who wantedto have some oysters with their meal. They were quitespecific about the type and grade of the shellfish theywanted. We contacted our supplier and made anorder but were sent the wrong ones, so we sent themback and re-ordered. Again the wrong ones turnedup but rather than pass them off as the ones our customers wanted, we again rejected them. It tookseveral more goes before we got the required oys-ters but we got the right ones in the end and ourguests were delighted with them. That story and thenew menu sums up what the 1935 Restaurant is allabout; giving a better experience.”

The fully sound-proofed 1935 Rooftop Restaurant &Bar - a reference to the year that airport opened as amunicipal airport for the public - is open daily forbreakfast, lunch and dinner. To book a table, pleasecall 01702 543 001.

Our vegetables come from a farmer in Saffron Waldenand we’re always looking for new sources of great,local produce as the seasons progress. So in September, I’ll be re-introducing locally caught andshot game onto the menu.”

Heston BlumenthalWith British tastes becoming more demanding andadventurous, customers at the stylish 1935 RooftopRestaurant & Bar can also expect some of the techniques and theatre served up by the likes ofcelebrity chef, Heston Blumenthal. “95% of our food isabsolutely fresh and we’re investing in new kit thatmeans we can create foams for dishes, ice cream inseconds whilst at your table and our own, home-smoked food. That’s why our new menu will featureHome-Smoked Duck with Potato and Celeriac Rostiaccompanied by a Pear Puree and PomegranateDressing, plus our own Smoked Haddock served withSaffron Potato Salad, Crispy Quail Egg and HaddockChowder.”

Trio of DuckWalker’s particular love of duck is reflected by the addition of a Trio of Duck (the breast, leg and a confit)presented with Beetroot Mash, Cavalo Nero Cabbageand Berry Sauce. “We’re giving our customers three different types and styles of cooking with one type ofmeat. As a result, you can enjoy the different tastes anda better culinary experience from one dish.”

Lovers of fish will not only be delighted by the aforementioned Home-Smoked Haddock but also the1935’s Salmon Mousse Ballantine with Lime Leaf Jellyand Pea Shoots. For those who enjoy the delicateflavour of lamb, then the meltingly tender Duo ofLamb (slow braised belly and a roasted rack) withDauphinoise Potato, Courgettes and Mint Puree anda jus of Scallions and Rosemary will be well worth ordering.

n The material of the estuary facing surface of the wall was not specified.

n No provision was made for water trapped between the existing and proposed walls.

n No provision was made for the effects of the bund on land drainage.

n No provision was made to prevent vandalism on the beach huts, trappedbetween the walls, or the wall itself.

n No relationship was drawn between theeffect of the agreed lagoon plans and the sea defences.

n No consideration was given to the effectsof defective and bodged repairs to the walls at the Garrison/Gunners Park.

riends of Shoebury Common’s PeterLovett wrote last month about his

concerns over the proposed seawall to be builton Shoebury Common. He was, in fact, highlighting an injustice perpetrated by theformer Tory-led Council, which chose to holdback a scheme essentially ready for planningapproval last year until the eve of the localelections, in the belief that it would then be adone deal.

On behalf of the new flood forum, I attendedthe Development Control Committee meeting at which the scheme promoted bythe Tory Council was passed. It is commonpractice for the Council to approve its ownschemes, something that needs to be addressed, especially in the light of such public opposition to its plans. The ‘preferred’scheme to protect Shoebury was passed andhas since been described as ‘outline planningapproval’, although this is now denied by theHead of Planning, Peter Geraghty.

Mr. Geraghty states the application was a ‘full’one and that ‘the application does not need toinclude finite detail’, which apparently meansthat the approval could be granted with thefollowing details not finalised and thereforebeyond the reach of the public for comment :-

n No mention was made of a proposedcontribution to the seawall construction costs.

n No evidence was provided for the siltnature of the cliff slip soil stored at GunnersPark, for use in constructing the bund. Asample I hold shows the material to be clay.

n No consideration was given to alternative schemes or public objection to theproposed scheme.

All this may now seem irrelevant in the light ofpublicity suggesting that the newly constituted Council will review the need forsuch defences, or at least re-visit the details.

But the matter still sits on a knife-edge and isfurther complicated by the rapidly submittedapplication from the Gunners Park/Garrisondeveloper for hundreds more houses to sell,with only a contribution towards the seawallon the table. No social housing, no infrastructure improvement and propertiesprobably not insurable when you consider thestandard questions prospective insurancecompanies would ask about local flood risksand defences.

The walls at this flood plain site further west inShoebury are in a lamentable condition, noplans exist to improve them and the liability of

a former Garrison developer to maintain themhas been bought off for the derisory sum of£120,000.

In the name of Great Wakering CouncillorBrian Efde, sadly deceased, The new floodforum is born to provide an over-view ofSouthend flood risk, not just at Shoebury Common, not just to utilise the clay from thecliff slip, but through-out the Borough. Consideration needs to be given to drainage,water table levels and the concreting of floodplain sites in order to make Southend safe.Last August should have been a wake-up call,we can consider ourselves lucky that forecaststorms died out before they reached Essex inJanuary, whilst Somerset floundered.

The new flood forum therefore asks all 51councillors to address the flood issues withoutbias or vested interests, through-out Southendand with serious consideration for the devastation potentially caused by a major incident. This is not a political football, butpeople’s lives, livelihoods and possessions,things that cannot be replaced by saying‘whoops, we got it wrong’!

Selecta DNAince 1st October 2013, Essex Police hasbeen running Operation Insight, which is

aimed at reducing burglary offences and apprehending those involved in this crime.

As a Neighbourhood Policing Team we have beenidentifying vulnerable premises and repeat victims,encouraging the use of crime reducing tools, suchas property scheduling and marking, Selecta DNAand increasing Neighbourhood Watch.

So far so weird. Thenthere’s a big fight with a dragon and Maleficent gets her wings back – hurraaah! Ifit sounds messy and incoherent, well, it is.

The supporting cast do their best but it’sreally the Angelina show – and there is nothing wrong with that. But $180,000,000??Really??

Karen started to develop and perfect techniques that enabled her to help herself. Shethen began to help her father who had beensuffering from Post-Traumatic Stress Disorderand arthritis. As she spread the word, and invitedmore people to Stride, it was clear she had invented a very real and very effective solution.

Roasted Rhubarb and Lemon Curd Pots

his is really just a simple dessertthat you assemble in minutes

once the rhubarb has been roasted. Thetangy orange rhubarb works really wellwith the creamy mascarpone and thelemon curd. All a bit of a cheat but then itis summer and you don’t want to spendtoo long in the kitchen.

Enjoy!

Roasted Rhubarb and Lemon Curd PotsServes 4

Ingredients :400g fresh forced rhubarb, cut into 4cmlengthsSmall knob of butterGrated zest and juice of 1 orange75g golden caster sugar380g jar good-quality lemon curd250g tub mascarpone4 stem ginger biscuits, crushedIcing sugar, for dusting

Method :1. Preheat the oven to 220°C/fan200°C/gas 7. Scatter the rhubarb in 1 layeron a baking tray. Dot with the butter, drizzle with the orange juice, sprinkle overthe sugar and zest and roast for 15 minutes, until just tender. Set aside untilcool.

2. Divide between 6 glasses or dishes. In a small bowl, roughly stir the lemoncurd into the mascarpone with a kitchenknife to form a ripple effect and spoon ontop of the rhubarb.

Scatter over the biscuit crumbs and servedusted with icing sugar. O

ou may have read in previous issues of theOracle that a group of ten lifelong friends

from Southend were planning to cycle from Land’sEnd to John O Groats (LEJOG), raising money forProstate Cancer UK. A year ago, some of them didn’teven own a bicycle and the prospect of having to ridethe length of the UK over 2 weeks was very daunting.

They completed their epic journey at 16:40 on Friday13th June, weary but elated, having ridden forfourteen consecutive days, covering a total of 1,082miles and climbing an astonishing 58,629feet!!!….there are not enough noughts to calculatehow many calories they collectively burnt!

Over £10,000 raised!They will have raised over £10,000 for Prostate CancerUK and this money will contribute to raising awareness and treatment for this disease. As men-tioned in these pages previously, prostate cancer killsmore men in the UK than any other and the recentMEN UTD campaign, fronted by the comedian BillBailey, is assisting in bringing a greater level of understanding of the disease into the public domain.Our cyclists, with a group average age of 54 years,considered this charity to be the most suitable recipient for all the generous contributions andpledges they have received and should you like to

All the riders arrived back in Southend safe andsound, enormously satisfied not just with their cycling accomplishments but also that they havebeen able to do their bit in fighting the terrible disease that is prostate cancer.
