Credited with discovering the force of gravity, he is still considered by many to be the “greatest and most influential scientist that has ever lived.” French chemist and biologist Louis Pasteur is best known for creating the method of pasteurization to keep milk and wine from spoiling in addition to creat- ing vaccines for a number of diseases including rabies. Oddly enough, when Pasteur was in school, his teachers considered him to only be mediocre at chemistry. • All coffee fanatics have Melitta Bentz to thank. Bentz was a typical German housewife that went on to invent the coffee filter, 300 years after coffee had been discov- ered. She revolutionized the idea of using paper to filter out the unwanted residues. Through their discoveries, research and inventions, scientists from across the globe have made countless improvements to education, medicine, physics, chemis-try and many other fi elds. Learn more about some of the most prominent scientists from around the world.• One of the most recognized fi gures in history, Ger-man-born Albert Einstein was born with an unyielding curiosity and thirst for knowledge. •Before he made his contributions to our knowledge about space (as well as creating his many inventions), Italian born Galileo Galilei wanted to be a musician. His father insisted that he go to medical school, yet Galilei never received his degree from the University of Pisa. He did, however, go on to publish “The Starry Messen-ger,” presenting among many other findings that Earth was not the center of the universe. • Although he might have found proof for the Earth not being the center of the universe, Galilei was not the first to introduce this concept. Mathematician and astronomer Nicholas Copernicus first claimed that the sun was the stationary object that Earth revolved around. His idea was disregarded by most, but he is credited as the initia-tor of the Scientific Revolution. • German chemist Robert Bunsen is famous for the Bunsen burner, although he never actually invented the iconic scientific tool; he merely improved it. •Although most scientists get their start in universities, it is only appropriate that Laszlo Jozsef Biro, inventor of the ball point pen, began as a journalist and editor. His brilliant idea stemmed from his annoyance at writing with a fountain pen.•Changing forever the music industry, German immi-grant Emile Berliner revolutionized sound recording by being the first person to start recording on flat disks

Did you know that the first records were made of glass long before they switched to plastic?•Marie Curie, one of the most famous female scientists, is celebrated for her discovery of the mysterious ele-ment radium. She completely altered the way scientists thought about matter and energy and paved the way for the treatment of many diseases.•Glorified for his work with atomic theory, England native John Dalton achieved his findings due to his high interest in meteorology. He kept weather records until his death and published a book titled “Meteoro-logical Observations.” He later went on to explain his conclusions about atoms in “New System of Chemical Philosophy.”• Scottish scientist James Watt was considered a “delicate” child and spent a great deal of his child-hood homeschooled by his mother and was considered slow in many academic areas — except for math. Watt eventually invented the steam engine, and after Parlia-ment granted him a patent that prevented anyone else from making a similar machine, Watt went on to control a steam engine dynasty. • Known as the Father of Geometry, ancient Greek Mathematician Euclid published his ideas in “The Ele-ments,” and his teachings influenced Western mathemat-ics for more than 2,000 years. Since it is estimated that he lived from 325 BC-265 BC, little is known about his life.• Born into a prominent family of wealth, Italian scien-tist Amedeo Avogadro followed in his family’s footsteps to practice law but couldn’t shake his interest in the natural sciences. He studied physics and math in private for years before he published his hypothesis about mol-ecules that was eventually labeled Avogadro’s Law.•Immensely famous for his printing press, Johannes Gutenberg began as a goldsmith and businessman before making his contributions as a scientist and inven-tor. Gutenberg forever altered the method and speed by which books were distributed to the public.• German physicist Wilhelm Rontgen is known for dis-covering X-rays and received great recognition for his findings, including streets named in his honor, countless awards and the Nobel Prize in Physics.

Hurry Up and WaitToo many veterans have waited far too long for mental-health care.The Office of the Inspector General at the Department of Veterans Affairs was asked to look at whether the Veterans Health Administration is accurately recording the wait times for mental-health services for both exist-ing and new patients.Policy states that if a veteran calls in and asks for help, he or she is to be seen within 24 hours.If after the initial evaluation the veteran is not immedi-ately given services (hospitalization or outpatient care), a more-comprehensive evaluation must take place within 14 days. This would include a diagnostic and treatment plan.VHA is to calculate wait times by figuring the days from the desired date of care to the date of the actual appointment. This assumes, of course, that the right date is entered into the system.The VAOIG determined that: 1) VHA doesn’t have a reliable way to determine whether it’s giving services

UNITED STATES OF SCIENCEThe United States has been home to a great deal of renowned scientists over the years, each offering their own unique expertise and contributions to society. Below are some of the most famous American scientists and their accomplishments. • Perhaps one of the most famous American scientists and inventors, Benjamin Franklin is credited with discover-ing electricity, and his inventions include the bifocal lens, lightning rod, carriage odometer and more.• A brilliant scientist and businessman, Thomas Edison is best known for inventing the electric light bulb. Other inventions include the motion picture camera and phonograph.• Research chemist Percy Lavon Julian was a pioneer in the medical field for his work with medicinal drugs syn-thesized from plants and for producing hormones such as testosterone and progesterone from plant sterols.• Most famous for concocting the recipe for peanut butter, George Washington Carver had a fruitful career in im-proving and/or inventing products such as axle grease, instant coffee, adhesives, buttermilk, bleach, metal polish, plastic and more.• Portland, Oregon, native Linus Pauling was an expert in molecular structure and chemical bonds. He has au-thored more than 350 publications in his field and was named the Humanist of the Year in 1961. He was awarded the Nobel Peace Prize in 1963.• Famous for his contributions to the space program, Carl Sagan served as an advisor for NASA and solved many space exploration mysteries surrounding planets including Venus and Mars in addition to briefing astronauts be-fore they journeyed to the moon. Sagan received numerous NASA awards including the Exceptional Scientific Achievement Award, Apollo Achievement Award and Distinguished Public Service Award. He also authored numerous best sellers and was awarded the Pulitzer Prize. • American rocketry pioneer Robert Goddard, considered the father of modern rocket propulsion, built the first rocket to use liquid fuel. It wasn’t until 14 years after he died in 1945 that he was awarded a gold medal by Con-gress. It is said that his first thoughts of rockets came to him while pruning cherry trees as a boy.• Nobel Prize winner Barbara McClintock is one of the most famous American female scientists in the world. She is most recognized for her work and discoveries with chromosomes and genes. She was the first woman to win an unshared Nobel Prize, which she was awarded in 1983 in Physiology or Medicine.• Mesmerized by the stars as a young boy, Clyde Tombaugh first decided to build a telescope because he was dissatisfied with the one he owned. Although he built more than 30 telescopes in his lifetime, Tombaugh is most famous for discovering Pluto.• Although Clyde Tombaugh is credited with discovering Pluto, Astronomer Percival Lowell paved the way for him. Lowell predicted the existence of a planet beyond the orbit of Neptune. He’s also received recognition for his extensive studies on Mars and Uranus.• Before he became a world-class astronomer and mathematician, Benjamin Banneker’s first great feat was build-ing the first striking wooden clock made completely in America. After teaching himself astronomy and advanced math, he went on to publish his almanac, which became an instant best seller.

Don’t Wait Until Fall to Get Chimney Cleaned

Q: I told my neighbor I was thinking of hiring a fire-place cleaner -- a chimney sweep, I guess -- this month, and he said I was crazy to schedule one at this time of year because they’ll charge me an arm and a leg. He said I should wait until fall when they’re busier. What do you think? -- Janice C., Syracuse, N.Y.

A: I think you should go ahead and schedule the fire-place cleaning. Worrying about the possibility that the cleaning company will charge you more than usual is silly when you can get a written estimate before they start the work, and compare it to other services in town.Plus, June is a slower season for chimney and fireplace cleaners, compared to fall when homeowners are in a

hurry to get their fireplaces ready for the cold weather. The benefit to you is that you can have greater choice of the day and time you want them to come in and service the chimney. They also should be able to spend more time checking your fireplace, chimney and flue for potential dangers, rather than rushing off to the next service call.Some chimney and fireplace service technicians offer discounts at this time of year. Check their website or call the company to ask about any specials they’re running. Again, you have control over how much you’re willing to pay for chimney cleaning service. Ask for a writ-ten estimate up front, before allowing any work to be performed. If the chimney cleaner detects a problem, ask for a revised estimate, and don’t let the additional work done until you have agreed on the work and the price.

HOME TIP: Help prevent a dangerous buildup of creo-sote in your chimney by burning hotter, cleaner fires. Use well-aged hardwood and crack a window in the room to draw in more oxygen.

The Nets Have Left New Jersey

People saw it coming for years. The two were never really head over heels over one another to begin with -- it seemed to be more a marriage of convenience after the ABA folded and Dr. J moved on to Philadelphia. The Nets became a team that seemed to be going through the motions in the Meadowlands, hidden behind a pay chan-nel called “SportsChannel” that nobody wanted to watch (Devils owner John McMullen once famously said he didn’t “think SportsChannel [was] the most popular channel in the state.”)The Nets were basically the NBA’s version of “Brenda and Eddie,” and now New Jersey is waving Brenda and Eddie goodbye.The franchise’s move from the swamps of Seacau-cus across the river to Brooklyn, N.Y., is firmly set in brownstone. It is perhaps the crowning achievement in the decades-long revitalization of the borough that until recent times considered a three-second clip from the opening credits of “Welcome Back Kotter” and the loss of the Dodgers to California as its primary claims to fame.Times have changed.Brooklyn, for the better part of this century, has been booming. The old blue-collar canneries and sweatshops

Fruity peppers like the Aji Amarillo Chili, the Mexican Mirasol Pepper or the Yellow Peruvian Chile (which is a deep yellow, sometimes orange, 4 to 5 inches long) have an intense spice with a fruity flavor. A Mustard Habanero pepper retains the heat found in many Habanero varieties but has fruity overtones. This pepper is dark-yellow with hints of orange and a pointed tip.Chile peppers like poblano, New Mexico or Anaheim are a mix of fruity, mild and spicy. Certain types of peppers like the Caribbean Red Pepper and Scotch Bonnets add to the hot sauce the heat that will make your Dad’s mouth water, his ears pop and his body temperature rise. Combining different types of peppers with vegetables will add sweet, fruity and flavorful notes to your homemade hot sauce. HOT STUFF HOT SAUCE3 tablespoons extra-virgin olive oil1 large yellow onion, sliced2 teaspoons salt2 large jalapeno peppers, diced2 medium chile peppers, such as poblano, New Mexico or Anaheim, diced (see Tip below)2-4 habanero or other small, hot chile peppers, stemmed, halved and seeded (see Tip)4 cloves garlic, diced1 large carrot, tip and root end removed, chopped1 pound tomatoes, diced (about 3 cups) or 1 (28 ounce) can fire-roasted diced tomatoes1-3 teaspoons sugar or stevia1 cup distilled white vinegar or apple-cider vinegar

1. Heat oil in a large saucepan over medium-high heat. Add onions and salt, and cook for 3 to 5 minutes, until onions begin to soften. Add in peppers, garlic and car-rots. Cook, stirring, until onion begins to brown, about 3 to 4 minutes. (Note: This should be done in a very well-ventilated area! The fumes from the cooking pep-pers are strong, so do not lean over the pot, or you may inhale the acrid steam.)2. Reduce heat to medium. Add tomatoes and sugar or stevia. Bring mixture to a boil, then return heat to me-dium. Continue to cook, stirring occasionally, until the tomatoes begin to break down, about 15 to 20 minutes. 3. Remove from heat and allow mixture to steep until it comes to room temperature. Carefully transfer pepper mixture to a food processor or blender. (Use cau-tion when pureeing hot ingredients.) If you’re using a blender, place the lid on loosely and cover it with a dishcloth to allow any steam to escape. Puree mixture for 15 seconds. With food processor or blender running, add vinegar through the feed tube or opening in the lid in a steady stream.4. Puree until smooth. Set a fine-mesh sieve over a me-dium bowl; pour the pureed mixture through the sieve, gently pushing on the solids with a wooden spoon to extract all the liquid. (Discard solids.) Let the sauce cool to room temperature, about 1 1/2 hours. Taste and season with more salt, if necessary.5. Transfer hot sauce to a sterilized, pint glass jar or bottle and secure with airtight lid. Refrigerate. The hot sauce tastes best when aged at least 2 weeks. Shake bottle to recombine the liquid before using. Can be stored in refrigerator up to 6 months. Makes 1 pint.Tip: The membranes that hold the seeds are the spiciest part of chile peppers (that’s where the capsaicin is). The seeds pick up some spiciness by association. You can adjust the heat of the peppers and the spiciness of the hot sauce by using some or all of the seeds along with the flesh of the peppers. Be sure to wash your hands thoroughly after chopping hot peppers, or wear rubber gloves.

Salmon Sliders

This recipe is a fun and creative way to use up leftover wine. These bite-sized sandwiches also make a great party snack to complement your favorite bottle.

6 hot dog buns, toasted1 pound skinless salmon, cut into chunks2 green onions, chopped3/4 cup wine2 tablespoons mayonnaise1/3 cup mayonnaise, for sauce1/4 teaspoon salt1/4 teaspoon pepper

1. In food processor, pulse 2 toasted hot dog buns into crumbs; transfer to bowl. Pulse salmon until chopped.2. Mix with crumbs, green onions, 1/4 cup wine, 2 tablespoons mayonnaise, salt and pepper. Form into 12 patties.3. Bake on foil-lined pan in 425 F oven 10 min-utes or until cooked through. In saucepan, boil 1/2 cup wine on high until reduced by half, stirring; chill slightly.4. Toast 4 more buns, cut into thirds. Whisk wine into 1/3 cup mayonnaise; serve with patties on buns. Makes 12 sliders.

DEAR DR. DONOHUE: I am an 80-year-old male whose annual physical exam was good. My wife and I have a good sex life. We’ve been married 61 years.However, my PSA rose to 5.7. My family doctor sent me to a urologist, who suggested a biopsy. The urologist said my prostate gland is normal for my age and had no hard spots or lumps. My dad died at 87 due, in part, to prostate cancer. A brother also had difficulties. I read that at my age, I should enjoy life without such procedures. Your opinion, please. -- B.M.

ANSWER: What to do when the prostate specific antigen (PSA) blood test is higher than normal is a controversial subject. Every year, about 192,000 men are diagnosed with prostate cancer. Close to 70 percent of those cancers are low-grade, meaning they don’t pose a serious threat to life. Such cancers, depending on the man’s age and his health, may not require any treatment other than scheduled monitoring.One of the ingredients that goes into the mix for making a decision for “active surveillance” is what’s seen on the biopsy. The pathologist examining the prostate tissue discovers if any cancer is present and assesses the cancer’s stage and its potential to be an aggressive cancer. If the cancer is in its early stages and if its appearance is one that’s not threatening, then the decision for treatment is something that can be discussed with the doctor. Quality of life is as important as extension of life. However, I believe you should have the biopsy. It has some rare complications, but it provides information not obtainable in any other way.You are a very young 80-year-old. You have no other health problems that might shorten your life. You have a family history of prostate cancer. If the biopsy shows a low-grade cancer, then talk to the doctor about your wishes. One of those wishes could be active surveillance.The booklet on the prostate gland discusses gland enlargement and cancer. ANSWER: This discussion should start with your family doctor. The doctor can, after talking with you, decide if the problem is physical or psychological. Both are possible causes. Anxiety, depression and prostate gland inflammation are examples of things that can lead to your problem.Sometimes simply starting and stopping and then restarting relations will solve the problem. A numbing agent like the combination of lidocaine and prilocaine cream might be helpful. A condom should be worn so that your partner isn’t affected by the cream. Fluoxetine, paroxetine and sertraline are medicines that have been successful for some men. Vitamins or supplements are not likely to help.

DEAR PAW’S CORNER: Recently, my cat “Clark Gable” got very ill -- vomiting frequently and lethargic. I had no idea what was wrong, so I called my veterinarian. The vet’s assistant talked me through some important steps that I didn’t know and wouldn’t have been able to accomplish in my panicked state, such as looking at what C.G. was vomiting up and looking for possible sources of poisoning in my apartment. She advised me to bring him in immediately along with a sample of the vomit (gross, right?) and a couple of possible items he could have eaten.The vet was able to quickly treat C.G., who has made a complete recovery. But I’ve become much more aware that I need to learn when my cat is in distress and how to prevent him getting into dangerous things -- like the houseplant leaves he ingested. • To clean out your coffee grinder in order to use it for spices, add about a half-cup of white rice, then pulverize it. Repeat until scent is gone and rice powder comes out clean.

• It’s food-smart to separate utensils and cutting boards used for veggies, meats, poultry, etc. Here’s a handy chef’s trick: Color code. Paint a different color stripe down the edge of cutting boards and around the handle of utensils for each variety: green for veggies, yellow for poultry and red for beef.

• Line the bottom of your dog’s food dish (underside) with silicone caulk. Use a crisscross pattern in the cen-ter. This will keep the dish from sliding around when your pet eats.

• “If you are painting your ceiling and are bothered by drips, try protecting your eyes with an old pair of swimming goggles. They will keep your eyes safe from drips and splatters, and fumes will be much less bothersome.” -- E.G. in Virginia
