Infused liquor adds a level of flavor complexity not found within ‘raw’ liquor. The alcohol draws out flavors quickly and effortlessly. Ingredients left in the ‘Infuser’ have a finite steeping time before all their flavor is extracted, however some flavors are so strong that steeping needs to be very quick. Others impart flavor slowly and help add richness and complexity to the raw liquor. A chili steeped for 5 minutes will impart a strong spicy flavor. A cinnamon stick will take longer.

‘The TASTEMAKER’ will steep up to 9fl.oz or approximately 250ml. This volume was found to be ideal when making a couple of cocktails and preparing shots. 1.5 oz. is a regular shot so you can taste a few, or make a couple of fantastic cocktails.

Some typical- ‘infused’ cocktails might be:

Gin and Tonic (Gin-add cucumber and jalapeño)

Vodka and Tonic (Vodka-add limes and cilantro)

Tequila infused with roasted pineapple

Alternatively, utilizing the infusion spirals to infuse an oak flavor into the liquor, transforms inexpensive and cheerful booze into soft, well-rounded spirits and wines, making them taste like expensive bottles. A Johnny Walker Red tastes like the premium Blue, overnight!

Making Too Much: There is no need to use a whole 750ml bottle for an infusion. You can make just 1 cup of tarragon-infused vodka or cucumber-infused gin if that’s all you want. With liqueurs, you’ll have to make a little more since there’s also sugar and water involved, but you can start with as little as a cup* of spirits. If your project turns out so delicious that you want more, you can go ahead and make a whole bottle or even a gallon. But it’s worth testing before you invest in pricey booze! Whether you’re following a precise recipe from a trusted source or making it all up on the fly, every DIY infusion is an experiment. And there’s no scientific or culinary reason that you have to risk a whole bottle of booze.

Steeping For Too Long: Alcohol is very good at extracting flavors from herbs, vegetables, spices, and fruits. It takes a lot less time than you might think for an ingredient to flavor a spirit. A longer infusion is not necessarily going to taste better: Leave cardamom in rye too long and it’ll blast your mouth out with bitterness. I once forgot about a strawberry vodka I had steeping. After 2 weeks it tasted more like perfume than fruit. Some ingredients, like hot peppers or tea, need less than 5 minutes.

Not Straining Well Enough: If you know you’re going to use up your infusion quickly, then a fine-mesh does the trick. If you’re planning to store it for more than a week, though, it’s important to filter out as many stray bits as possible because over time they can create off flavors in your infusion.

Not Storing Properly: Just because something has alcohol in it, doesn’t mean that it’s preserved perfectly forever and ever. Air, heat, and little bits of produce are the enemy. Room temperature is fine for most things, but if you’re concerned (or just like cold beverages), keep your homemade infusion in the fridge.

Not Documenting: Be sure to write down those tweaks and substitutions. I once made the perfect apple-cinnamon bourbon. I’ll never know exactly what I did, because I got lazy about writing down the adjustments I made during steeping. I swore I would remember what I did, because it was so obvious. Three years later, it is not obvious and none of my apple-cinnamon bourbons quite live up to the memory of That Perfect One.

Tips & Tricks for the Tastemaker infuser:

When topping up through the Pouring Spout, tilt the Tastemaker over a few degrees. This ensures the liquid doesn’t just sit on top of the Filter.

After cleaning and upon reassembly, ensure the Weighted Plug is properly assembled into its correct orientation. The two holes in the Weighted Plug wings fit over the two posts in the Base Housing.

To lock the Weighted Plug in place; rotate the Main Body clockwise this ensures that no liquid can enter or exit the Tastemaker Infusion Chamber.

Unlock the Tastemaker to allow liquid to enter the Infusion Chamber from your chosen liquor bottle.

Basic Simple syrup

• Equal parts sugar• Equal parts water

Bring water to a simmer to dissolve sugar. Transfer to a small container and let it cool.

NOTES:

Ginger Simple syrup

• Basic simple syrup• Ginger washed and sliced (with peel on)

Combine simple syrup and ginger into a pot. Bring to boil. Transfer to a small container and let it cool. Strain once desired flavor is reached.

Orange Simple syrup

• Basic simple syrup• Oranges zested, outside peel removed, flesh reserved

Place segmented orange, zest, and simple syrup into a pot. Bring to a boil. Transfer to a small container and let it cool. Strain once desired flavor is reached.
