Cashew Butter Shamrocks with Cream Cheese Frosting

IngredientsCookies• 2 c Pamela’s Ultimate Baking & Pancake Mix• 1/2 c Organic Valley No Salt Butter at room temperature • 1/2 c cashew butter• 1/2 c maple syrup • 1 lg. egg • 1 tsp. mint or almond extract • Shamrock shaped cookie cutter or other festive shape
Frosting• 8 oz pkg Organic Valley Cream Cheese• 2 Tbs. Organic Valley No Salt Butter at room temperature • 1/4 c honey or maple syrup• 2 tsp. green food coloring (optional)
DirectionsCookies1. In a large bowl, cream together butter and cashew butter with hand mixer until completely combined 2. Pour in maple syrup and continue to mix3. Add the egg and extract until combined 4. Add all of the flour and mix by hand to get it started -Then use mixer to fully combine, scraping down sides as needed5. Cover and put in refrigerator for 1+ hoursFrosting1. In medium sized bowl, combine cream cheese, butter, food coloring and maple or honey2. Use hand mixer to combine until soft and creamy - Set aside (do not refrigerate)Putting it all together• Preheat oven to 375 degrees• Line a baking sheet with parchment paper• Roll dough out to about 1/4 inch thick • Cut out shamrock shapes. Reroll scraps and continue until all the dough is gone• Place on cookie sheet about 1 inch apart • Bake for 10 minutes until firm to the touch and light golden brown - Let cool on cookie sheet for 5 minutes and then transfer to a wire rack to cool completely• Once they are cooled, frost cookies with desired amount of frosting ... Enjoy!

Vitamin K is Great for Bones!When supplementing with Vitamin D and calcium, it is also necessary to have adequate amounts of another fat-soluble vitamin, Vitamin K. Vitamin K is needed by the body for blood clotting and is also a key regulator of calcium in the body. Research shows that Vitamin K is involved in bone mineralization and plays a role in preventing soft tissue calcification. Vitamin K deficiency has been shown to increase the risk of osteoarthritis of the knee. In Japan, one form of Vitamin K2 (MK-4) has been used in high doses to successfully treat osteoporosis.Vitamin K1, or phylloquinone, is found in dark green leafy vegetables like kale, spinach, watercress and broccoli. Vitamin K2 is the form of Vitamin K produced by healthy gut bacteria residing in the colon. Vitamin K2 is also present in many fermented foods and foods rich in animal protein, such as meat, cheese and natto. Individuals with healthy gut bacteria who eat traditionally fermented foods and a diet rich in animal protein probably do not need to supplement with Vitamin K2; however, those who avoid these foods (such as vegans), and those with an imbalanced gut flora, may want to supplement with Vitamin K2.The average intake of Vitamin K for most adults in the U.S. is 70 to 80 micrograms (mcg) per day. The Daily Value for Vitamin K, an estimate of daily need, is 80 micrograms. One ½ cup serving per day of dark green leafy vegetables easily provides four to five times the daily value for Vitamin K.To consume the amount of Vitamin K associated with a decreased risk of hip fracture in the Framingham Heart Study (about 250 mcg/day), an individual would need to eat a little more than 1/2 cup of chopped broccoli or a large salad of mixed greens every day. You’ll find a delicious selection of dark leafy green vegetables as well as Vitamin K1 and K2 supplements at your local, independent natural foods store, so do your bones a favor and stop in today for some Vitamin K!
