Taylor Wallace is Founder and Principal Consultant at the Think Healthy Group and an Affiliate Professor in the Department of Nutrition and Food Studies at George Mason University. Previously, he served as the Sr. Dir. of Science Policy and Govt. Relations at the National Osteoporosis Foundation and the Sr. Dir. of Scientific Programs at the National Bone Health Alliance. He has experience in comprehensive and evidence-based scientific, policy and legislative programs in nutrition and food science. His research interests are nutritional interventions promoting health and preventing chronic disease. He has edited four textbooks and authored over 30 peer-reviewed manuscripts. Susan Mayne is the director of the Center for Food Safety and Applied Nutrition (CFSAN) at the Food and Drug Administration (FDA). In this position, Susan leads the center’s development and implementation of programs and policies related to the composition, quality, safety, and labeling of foods, food and color additives, and cosmetics. She comes to the FDA from Yale University, where she was the Charles-Edward Amory Winslow Professor of Epidemiology. Her distinguished career there includes two leadership positions: chair of the Department of Chronic Disease Epidemiology and associate director of the Yale Cancer Center. Susan has conducted extensive research into the complex role of food, nutrition, and other health behaviors as determinants of chronic disease risk. She completed two terms on the Food and Nutrition Board of the National Academy of Sciences, and a five-year term on the Board of Scientific Counselors for the U.S. National Cancer Institute.

Ricardo Carvajal is a director at Hyman, Phelps & McNamara, PC, a law firm based in Washington DC that specializes in FDA and related regulatory matters. From 2002 to 2007, he served as an Associate Chief Counsel at FDA, where he counseled the agency on a variety of food-related enforcement and rulemaking activities. Ricardo now counsels clients on managing inspections, responding to warning letters, resolving import detentions, and conducting product recalls. Shirley Blakely is a Nutritional Consultant working in nutrition and health promotion. She recently retired from the Food and Drug Administration (FDA) where she served as a Nutrition Policy Advisor, Strategic Manager and Researcher. She is a Captain (CAPT, retired) in the U.S. Public Health Service. Shirley worked on the development of the 2010 Dietary Guidelines for Americans, nutrition and food labeling consumer education materials, and conducted workshops on food and nutrition regulatory policies. Obesity and dietary fatty acids, fructose, and carotenoids have been the focus of her scientific research.

Rachel Edelstein became the Deputy Assistant Administrator for the Food Safety and Inspection Service’s (FSIS) Office of Policy and Program Development (OPPD) in 2012. Rachel and the staff she leads are responsible for supporting six of the eight FSIS Strategic Goals. One of which is “Implementing Effective Policies to Respond to Existing and Emerging Risks.” To do this, her team reviews and approves new technologies and ingredients in meat, poultry, and egg products. Ms. Edelstein’s policy work covers a range of issues that are important to consumers and industry. She finalized policy declaring certain non-O157 Shiga toxin-producing E. coli to be adulterants in non-intact raw beef products and directed development of related sampling instructions for inspectors. Following outbreaks, Ms. Edelstein promoted stronger food safety protections through policy requiring establishments to reassess their Hazard Analysis and Critical Control Points (HACCP) plan for ground and comminuted poultry products.

Paula Trumbo leads the nutrition science review team at FDA where she oversees the premarket nutrition science review for and publication of various regulations and policies, including health claims. She is a member of the Health and Human Services Senior Biomedical Research Service and served as the US Delegate for the Codex Committee on Nutrition and Foods for Special Dietary Uses (2012-2014). From 1998 to 2003, Paula was a Senior Program Officer at the Institute of Medicine (IOM) where she directed expert study panels, including those that set Dietary Reference Intakes for micronutrients (IOM, 2001), macronutrients (IOM, 2002), and electrolytes and water (IOM, 2005). She was Associate Director of the Human Nutrition Institute at the International Life Sciences Institute from 1994 to 1998. Prior to this, Paula was Associate Professor of nutritional biochemistry at Purdue University.

Ann Yaktine is Director of the Food and Nutrition Board (FNB) of the National Academies of Sciences, Engineering, and Medicine. The FNB applies scientific knowledge to advise the nation on policies related to food, nutrition, and food safety, and their roles in health maintenance and disease prevention. In her role as Director, she is responsible for developing, implementing, and managing the board’s activities, as well as engaging FNB members in strategic planning to identify important and emerging issues in nutrition and food sciences, and food safety. Anne is a 2008 recipient of the Institute of Medicine’s Cecil Award. In 2009 she participated in the Korea-U.S. Symposium on the Science of Food Safety Assessment. She has published journal reports on nutrition and cancer, nutrients and contaminants in foods, and nutrition assistance programs. Ann is also a member of the Academy of Nutrition and Dietetics and the American Society for Nutrition.

Elizabeth (Beth) Johnson founded Food Directions, LLC in February 2010. Beth’s unique skill set helps clients gain valuable insight into the U.S. Department of Agriculture (USDA), Food and Drug Administration (FDA), Centers for Disease Control and Prevention (CDC) and Capitol Hill. Previously, Beth served as Executive Vice President for Public Affairs for the National Restaurant Association. In 2008, Beth was named Acting Under Secretary for Food Safety at USDA where she lead and oversaw the Food Safety and Inspection Service (FSIS), USDA’s public health agency. Additionally, Beth was deputy chief of staff and senior advisor for the Secretary of Agriculture at USDA. Paul Coates directs the Office of Dietary Supplements (ODS) at the National Institutes of Health in its mission to strengthen knowledge and understanding of dietary supplements to the public. Through a range of initiatives, he established ODS as a strong, authoritative voice for rigorous science in dietary supplements and related areas of nutrition. In 2011, Paul received the Conrad A. Elvehjem Award from the American Society for Nutrition (ASN) for public service in nutrition. In 2013, he became a Fellow of the ASN and serves on its Board of Directors. He is lead editor of the Encyclopedia of Dietary Supplements and associate editor of the American Journal of Clinical Nutrition. Prior to NIH, he was on the faculty of the Children's Hospital of Philadelphia and the University of Pennsylvania School of Medicine.

Maureen Storey is Principal of Maureen Storey, LLC, specializing in the translation of nutrition science into working strategies in collaboration with consumer packaged goods companies, agricultural commodity groups and trade associations. Previously, Maureen was the first President and CEO of the startup organization, Alliance for Potato Research and Education where she continued to publish research on vegetable and fruit consumption and nutrient intake using NHANES. She has served as Senior Vice President for Science Policy at the American Beverage Association. Maureen was also interim director of JIFSAN and was selected as a nutrition advisor to HHS Secretary Tommy Thompson and his U.S. delegation at the World Health Assembly in Geneva, Switzerland. During her career at the Kellogg Company, Maureen held several diverse executive positions. She is a member of the American Society for Nutrition, the Academy of Nutrition and Dietetics and the Institute for Food Technologists.

Mary Christ-Erwin leads Porter Novelli’s Nutriton & Food Policy discipline. Translation of science and the evolving nutrition landscape into influencer and consumer communications is a hallmark of Mary’s work. Currently, she is deeply involved in developing strategies designed to address the issues related to health and wellness from a proactive standpoint as well as managing related issues. A frequent speaker on development and communication of food/nutrition-related messages, Mary is an advisor to the annual Consumer Federation of America Food Policy Conference. She is a member of the ASN Transition Team as well as the Joint Task Force of the IFT, ASN, and the Academy of Nutrition and IFIC. In 2009, the then American Dietetic Association granted Mary the highest honor for non-members – honorary membership in the Academy of Nutrition and Dietetics – in recognition of her contribution to the advancement of the profession. Martin Hahn uses his background in food technology and his understanding of the laws governing the food industry to navigate clients through the regulatory and business issues impacting the industry from farm to table. Whether the issue involves obtaining the authorization of a new food or dietary ingredient, complying with manufacturing requirements, labeling or advertising, product recalls, or enforcement, Martin serves as an effective advisor and advocate. He helps clients anticipate new trends and develop the data that is needed to distinguish their products from others on the market. Martin also provides assistance in obtaining regulatory authorizations to market new food ingredients, food packaging materials, and dietary ingredients. Martin grew up on a farm and worked in food processing plants before going to law school. He understands Hazard Analysis Critical Control Point (HACCP) and the regulations under the Food Safety Modernization Act (FSMA).

Janet Collins is executive vice president of science and regulatory affairs at CropLife America, the largest national trade organization representing developers, manufacturers, formulators and distributors of agricultural pesticides across the United States. In this role, Janet heads the association’s science and regulatory affairs efforts. Janet previously served as global biotechnology manager and senior manager of corporate regulatory affairs at E.I. du Pont de Nemours and Company. Before joining DuPont in 2005, Janet was the director and lead for global regulatory organizations for Monsanto Company, where she provided leadership to global regulatory and scientific affairs staff, external global organizations and U.S. government regulatory agencies on issues such as labeling, nutrition and risk analysis.

Jennifer McEntire is the Vice Presdient of Food Safety and Technology at United Fresh Produce Association. A food microbiologist by background, she has always worked in the Washington, DC area, bringing the scientific perspective to food safety regulatory issues. Jennifer was previously Vice President of Science Operations at the Grocery Manufacturers Association, overseeing the microbiology laboratory, process authority team, and claims laboratory. She has also had roles as VP and Chief Science Officer at The Acheson Group and as the Senior Staff Scientist and Director of Science & Technology Projects at the Institute of Food Technologists. She is a member of IFT where she serves as an advisory board member of the Global Food Traceability Center, and member of the Nominations and Elections Committee. Jennifer also belongs to the International Association for Food Protection, and serves on the board of Phi Tau Sigma, the food science honorary society.

Kasey Heintz is an Interdisciplinary Scientist in the Office of Food Additive Safety (OFAS), Center for Food Safety and Applied Nutrition at the U.S. Food and Drug Administration (FDA). In this position, Kasey leads the FDA sodium reduction team, coordinates with federal agencies, governments, and the food industry and provides input on related informatics efforts. Prior to joining FDA, Kasey was the Manager of Nutrition Programs at a boutique communications firm working with leading food and nutrition companies where she oversaw scientific program development implementing communications and strategic plans. She previously managed the growth of a molecular biology product line for an international bioresearch company and provided technical training to sales representatives nationally in addition to managing a lab at the National Institutes of Health. Throughout her career, she has written for various audiences, participated in specialized work groups, and overseen the purchase and use of large databases.

Jennifer Weber, MPH, RD Director, Healthy Way to Grow American Heart Association

Jennifer Weber joined the American Heart Association as the Director of Healthy Way to Grow in May 2013. She also serves as the Kids’ Market lead for AHA, leading development and implementation of the association-wide strategy for establishing a unified approach to improving kids’ health and establishing life-long engagement. Jennifer previously worked at Nemours, the Academy of Nutrition and Dietetics, and the Office of Disease Prevention and Health Promotion in the Department of Health and Human Services. Jennifer has been published in several journals including the Journal of the Academy of Nutrition and Dietetics, the Journal of Nutrition Education and Behavior and Nutrition Reviews. She co-authored the book chapter, Understanding Nutrition for the Public’s Health, in Essentials of Public Health Biology. She is also an Adjunct Professor at George Washington University.

Laura Shumow began her career at the National Confectioners Association in 2009. As VP of scientific & regulatory affairs, Laura works on regulatory issues related to labeling, ingredient safety, international standards and nutrition policy. She represents NCA before federal agencies such as the Food and Drug Administration and has served as the delegate of the International Confectioners Association to international regulatory bodies such as Codex Alimentarius. In addition, Laura oversees the development of health-related research and education about the role of candy in the diet and has authored numerous peer-reviewed scientific articles, as well as book chapters and presentations, at scientific conferences. She is an active member of several professional societies, including the American Association of Candy Technologists, the American Society for Nutrition and the Academy of Nutrition and Dietetics and holds a leadership role in the DC section of the Institute of Food Technologists.
