INGREDIENTS9 Eggs whites only

540 g Caster Sugar1 tsp Cornflour

1 tsp Vanilla Essence1 tsp White Wine Vinegar

DECORATION500 ml Fresh Cream very lightly whipped750 g SuperValu Strawberries washed and cut into quarters

METHODPreheat oven to 120°C/240°F/Gas Mark ½

When making a meringue it is important that the egg whites reach maximum vol-ume. To ensure this, make sure that your mixing bowl and whisk are free of grease. Put the egg whites into the mixing bowl and beat using an electric whisk until they form soft peaks.

Reduce the speed of the whisk and slowly add the sugar, tablespoon by tablespoon. The sugar needs to completely dissolve into the egg whites. You can check this by rubbing a little of the mixture between your thumb and index finger. If gritty it is not quite ready and needs further beating.

When all the sugar has been incorporated, add the vanilla essence, cornflour and vinegar. This will give the pavlova a dry and crisp crust, with a marshmallow like centre.

When ready, the mixture should be glossy. When the bowl is turned upside down the mixture should remain stationary in the bowl.

Meanwhile prepare your baking tray.

Line two oblong baking trays (13 x 9 inches) with parchment paper.

Divide the mixture between the two. Be approximate and try to ensure that your base is larger than your top layer of meringue.

You can use either a wooden spoon or a piping bag to spread the mixture out on the baking sheets.

Bake in the oven for 1 hour until the meringue mixture is very firm to touch but still soft in the middle. I normally leave mine to cool in the oven with the door ajar.

When cold, transfer to a serving platter and decorate with some freshly whipped cream.

Pile the strawberries on top of the cream.

Repeat this process to create a double layered pavlova.Serve immediately.

Midlands Air Ambulance serves the largest air ambulance region in the UK. This includes the communities of Gloucestershire, Herefordshire, Shropshire, Staffordshire, West Midlands and Worcestershire; representing a population in excess of 6 million. Since flying its first mission in 1991, the Charity now responds to an average of 3,000 missions each year making Midlands Air Ambulance one of the longest established and busiest air ambulance operators in the UK.

The Midlands Air Ambulance’s famous red helicopter is often a familiar sight across the Herefordshire skies, but how much do you really know about the charity that covers our great county?

The vital life saving service, which covers six counties including Herefordshire, needs in excess of £6 million each year to remain operational and is solely reliant on donations from the public and local businesses. It can make up to three visits a day to Herefordshire, attending a variety of missions such as road traffic accidents, horse riding falls, sporting injuries and incidents in remote areas where land ambulances just can’t reach.

The charity is always looking for ways to improve patient care across Herefordshire and thanks to the generosity of the local community and as a further commitment to patient care, the service has extended the operating hours of its fleet of three air ambulances.

The helicopters which are strategically located at airbases at the Strensham Services in Worcestershire, Tatenhill in Staffordshire and RAF Cosford in Shropshire, already operate in daylight hours across a shift

pattern that ensures there is always availability of an aircraft during daylight hours.

The announcement will ensure that all three of aircraft will be available across all airbases for extended hours throughout the summer months.

Hanna Sebright, CEO for Midlands Air Ambulance Charity, said: “This demonstrates our commitment to patient care and the Helicopter Emergency Response Service (HEMS). The decision was taken after working with air operations to better understand patient outcomes from

the previous 12 months data on Midlands Air Ambulance life saving missions. After assessing these outcomes it was agreed that extended flying hours would have a positive impact on saving lives thereby improving patient outcomes.”

Hanna added: “This represents an additional operating cost of £50,000 for Midlands Air Ambulance Charity, which would not be possible without the generous support of public and local businesses.“

CULTURAL The Waterworks Museum –

Hereford is a 150-year time-capsule of working machinery and social history which

tells the story of drinking water supplies.

The Waterworks Museum is open on Tuesdays and is in-steam with engines working on 18 days during the summer season but also welcomes group visits and school visits (by prior arrangement) throughout the year. Group prices are

governed by the size of the group. School visits are free of charge.

Bioshock Infinite is the third in the Bioshock series, and puts a brand new spin on the much-loved classics. From the dark, ominous areas of its predecessors, Infinite takes to the skies in the floating city of Colombia. From there on, the most interesting feature is the gameplay; you follow a set path, but there are enough variations, secret areas and personal monorails to keep things interesting.

Dynamic Combat: 8/10The combat is smooth and flowing, with many possible ways to beat enemies. There is enough to do to keep it entertaining, but death is very common on anything above easy (with hard mode being almost impossible to complete). There are many weapons, but some are a little too similar to justify their usefulness.

Quest System: 7/10The objectives are descriptive, and dynamic when needed, but they don’t feel like they truly reflect the hero’s goals. The guiding system means they’re always possible to find, but the arrows it provides are erratic and sometimes unhelpful.

Magic equivalent: 9/10The vigor system is varied, but easy to use and feels very natural. Press the button once to use the vigors, hold it to set a trap; they are all unique but somehow feel a little repetitive. Later in the game, they become a lot more complex and can be used in odd combinations to achieve certain tasks, and the Salts meter balances power with cost.

Items: 8/10There are three types of item: those that change health; those that change salts and ammunition. Each type of gun takes different bullets, but at times it feels clunky and makes little sense - that said, there is a weapon for every occasion. Items are implemented well overall, and logical for the most part (alcohol in bars, hot dogs from vendors and so on).

Companion: 9/10From a very early point in the game, a girl named Elizabeth accompanies the player on their travels. Both a character and a plot device, she has the unique power to bring objects and items through from other dimensions on command. This is the main feature of the game, and if used well can make a big difference. The only issue with Elizabeth is that she doesn’t quite do all she was intended to; her ability to find items for the player is somewhat wasted in certain parts of the game.

Environment: 9/10Stunning graphics and a very good game engine lead to a truly beautiful scene. It not only looks good but feels real; it’s very easy to get sucked in to the game.

Story: 8/10At times it doesn’t make much sense, but that’s the only issue with it. The story is engaging and captures the hearts of players.

Drama: 8/10 Realism: 9/10 Uniqueness: 9/10

We often read stories in the press about tragic events and people who have died. There are always those who are left behind who will be grieving the loss of loved ones. 25 years ago a small group of volunteers felt the need to support local people who had been bereaved and a local group of the bereavement charity, Cruse was set up.

The name Cruse is derived from a story about the widow’s cruse, or jar of oil, which never ran out, thus signifying that support would be given as long as it was needed and there would always be a drop of comfort available. Volunteers aim to provide help and support to bereaved people as long as it is required.

In Herefordshire we have a group of trained volunteers who see people regularly and provide one to one counselling. Anyone can come to Cruse and will not be charged for the service we provide. But there are costs for administration, training, travelling and hire of rooms. We need to meet these costs through fund-raising and all donations – large and small are always welcome. Over the last 25 years we have helped many people and we want to continue to offer this help to those who need us. On average the cost of supporting each client is around £170.

To mark this 25th Anniversary we are launching a scheme asking individuals and groups if they could raise £25 to help our funds. Will you help? Could you hold a Tea Party or Coffee Morning and invite everyone to donate some

money? Sell things at a Car Boot or Table Top sale? Do something spectacular and be sponsored to raise money? Or you may have other ideas. Please use your imagination!

One of the most popular areas at Smiths saleroom for private buyers to cluster around is the jewellery cabinet where many of our customers like to browse for something a little sparkly as a gift or a special treat. So this month I thought I would discuss some hints and factors to consider when buying jewellery at auction.

The first golden rule is to carefully inspect the condition – this is essential with all auction purchases as there is no come back if you later discover an item is damaged.

Check for chips in stones, broken clasps and wobbly or insecure mounts as well as wear to the back of rings etc.

When buying seriously priced jewellery as an investment it is important to look at the quality of the item – a cheap item may seem a bargain but the piece will be of little intrinsic value. As a general guide it can be a good idea to buy 18 carat gold or platinum set pieces if you can afford them, as this is an easy indication of quality.

It is also essential to look carefully at the stones for flaws – especially of course in the case of diamonds. Diamonds should be clear, white and without flaws unless one is buying antique ‘old cut’ stones in which case they are ‘allowed’ not be up to the modern standards. An eye glass is really useful to look at jewellery and can easily borrowed from the saleroom if you wish to have a better look at a stone.

Fashion is also a pertinent factor when considering a purchase – for example beads,

natural pearls and amber are all very trendy at present as well as bolder styled costume jewellery. This means that many diamond and semi-precious rings and pendants make a very good buy at present. However large diamonds are always in fashion and will always make top prices especially if of good colour and clarity.

Another interesting hint is that sometimes pieces do not look as good on as one might think or they may look better on than off. Some rings may look lovely in the cabinet but just do not sit right on the finger and some necklaces do not hang quite as they should when worn. It is therefore a good idea to try jewellery on before you buy and have a look in a mirror – this can be a good way to help make up your mind – if it look fabulous on then obviously you will have to have it. !!!
