bean soup
Bean Soup is a traditional dish in Bulgarian cuisine, which is very
delicious and easy to prepare. The classic recipe includes beans,
vegetables (carrot, tomato, pepper, onion) and spices. There is
also a popular preparation option, in which sausage or similar
meat product is added to the soup - the so called “Bean Soup
Prepared the Monastery Way”. This dish, prepared according to
the classic recipe, is traditionally served on the holiday table on
Christmas Eve together will all the other meatless dishes, but it is
also prepared during the rest of the year.
In order to make the bean soup delicious, it is very important that
the beans is good, not too old, and to stay preliminarily in water
for a few hours, and then water must be removed. Some of the
most delicious soups are prepared by the so called Smilyan Beans
- a sort of beans, which is grown in the region of the Rhodope
village of Smilyan.

To make a bean soup, you need about 200 g beans, 1 carrot,
1 tomato, 1 red pepper, 1 onion, 1 tablespoon of mint, 1 tablespoon
of savory, 1/2 bunch of parsley, 4-5 tablespoons of sunflower oil,
paprika and salt according to your preferences.

1.Soak the beans in cold water
and leave it to grow in size.
Remove the water after a few
hours.
2.Fine chop the onion.
3.Chop the carrots in cubes.

4.Chop the tomatoes as well.
5.Put the beans to boil with the
onion.
6.Add the carrots.

7.Add a dried or a fresh pepper.
8.Finally add the tomatoes.
9.Spice with salt, savory and
mint.

10.Add some sunflower oil.
11.Dust with fine chopped parsley.
12.Stir and leave the pot to boil
for at least an hour, until the
beans become soft.
