BELCH POD SUPPORTS LOCAL CHARITIES The weather was just right for chili on Saturday, January 13, at the Tri-State Open Chili Championship benefiting the Make-A-Wish Foundation of the Texas Plains in Amarillo, Texas. Well, it could have been a little better for our cooks who live out of town. It was cold and icy with a little snow on top. But the public didn’t mind; they came out anyway. This is the first time that we have had this kind of weather in many years. We did have several die hard chili cooks that made the trip. The out- of-town cooks who came were Glyn & JoAnn Gaines, Roy Huston, Kevin & Mary Lee Wooster, Kyle Adams, Greg & Sherry Muhlbauer (all of Wichita Falls), Bruce & Dru Stewart, Budda & Suzie Manske, Kenny Cotter and family (all of the Dallas area), Mike Parker of Colorado, some from New Mexico, and some from Oklahoma. Kevin and Tony, corporate chefs from Bruce Foods in Louisiana, also braved the weather. They drove 12 hours to get here and it was their first time in weather like this. They not only cooked up about 50 lbs. of chili, they also cooked up a big pot of Louisiana gumbo and was it good! The public must have liked the chili and gumbo because Kevin and Tony gave it all away. Kevin also entered the cookoff - his first. On Friday night we had the Tall In Texas Pod Cookoff, so they both were final judges. With the weather being not so good (actually really bad), we still had 114 chilis turned in and 20 corporate cooks participating. Out of the 114 chili cooks, there were 25 new cooks cooking for the first time which really excited us. We are hoping that some of these will start cooking with us more. BELCH POD SUPPORTS LOCAL CHARITIES

The weather was just right for chili on Saturday, January 13, at theTri-State Open Chili Championship benefiting the Make-A-Wish Foundationof the Texas Plains in Amarillo, Texas. Well, it could have been a little betterfor our cooks who live out of town. It was cold and icy with a little snow ontop. But the public didn’t mind; they came out anyway. This is the first timethat we have had this kind of weather in many years.

We did have several die hard chili cooks that made the trip. The out-of-town cooks who came were Glyn & JoAnn Gaines, Roy Huston, Kevin &

Mary Lee Wooster, Kyle Adams, Greg & Sherry Muhlbauer (all of Wichita Falls),Bruce & Dru Stewart, Budda & Suzie Manske, Kenny Cotter and family (all of theDallas area), Mike Parker of Colorado, some from New Mexico, and some fromOklahoma.

Kevin and Tony, corporate chefs from Bruce Foods in Louisiana, also bravedthe weather. They drove 12 hours to get here and it was their first time in weather likethis. They not only cooked up about 50 lbs. of chili, they also cooked up a big pot ofLouisiana gumbo and was it good! The public must have liked the chili and gumbobecause Kevin and Tony gave it all away. Kevin also entered the cookoff - his first.On Friday night we had the Tall In Texas Pod Cookoff, so they both were finaljudges.

ED Ponderings______Before we get to the rules this month, I want to

start with a plea for help. Keeping up to date withcontact information for CASI officials has become afull-time task. We’re all using technology a lot more,switching cell phone providers and numbers, giving upland lines for cell phones, changing email addresses,etc. When these changes are made by Referees andGreat Peppers, we need to know about them in order tokeep our system of communication working smoothly.Please notify us whenever you make any changes so we

can update our lists, the CASI website, and the CIS. Thanks.Now, I’d like to go back and revisit rules issues from recent columns in order

to help keep us out of trouble at our cookoffs. First, I’d like to further discuss rules addressed in January 2007 and July2006. What if a chili was turned in at 2:10 and judging had begun at 2:05? The chiliwould be disqualified by the head judge according to CASI Rule II.E.2. What if thedisqualified cook claimed he was unaware of the exact time and location of turn-in?What if he sent a protest to the Rules Committee because there was no cooks’meeting informing him of the time and place of turn-in? The rule clearly states,“Contestants must be notified at the cooks’ meeting of the turn in time.” Does that rulesound pretty clear to you? How would you rule on that? I’ve continued to observe cookoffs held without cooks’ meetings. I’vewitnessed cookoff officials scoff at the idea of holding a cooks’ meeting. Would you likeyour cookoff to be in jeopardy of disciplinary action because of not following this rule?Please, everyone, hold at least a brief meeting. It can be very short - where to turn in,what time to turn in, and how much to fill the judging cup. It could save you a lot ofembarrassment. I’d also like to follow up on the December 2006 column. Many years ago, whentable monitors gave seminars in chili to the judges, there were detailed descriptions of thecriteria and how good chili fit into them. One of the descriptions was about red color,the varieties of red or, in some cases, the proper shade of red. However, there wasjustified concern that these lectures pointed the judges toward particular chilis. CASI haslong ago changed its position and we demand monitors state the criteria exactly as theyare written on the judging sheet, without elaboration and definition, in order to help assurethe judging is unbiased. More than once, a rules change has been proposed to change the criterion from“red color” to “color.” This proposal has been solidly defeated by the delegates at theGreat Peppers Meeting each time it has come to the floor. The democratic process hasworked. The majority have spoken. The correct judging criterion is “red color.”

There are those who continue to instruct their judges to judge on “color,” not “redcolor.” Again, let’s consider a protest, filed on behalf of a cook, attributed to the monitor,because they did not state the proper criteria. The claim would be the judging was notbased on the proper CASI judging criteria and the chilis were therefore scored improperly.How would you rule? Is there any defense when the monitor has not followed the rules?

If you are a head judge or a monitor, please follow the rules and save all of usheadaches and embarrassment after the fact. Our judging system works well to protectfair competition. Let’s all work together to portray an image that speaks well of ourintegrity.

Pam Matheson won 1st, and 2nd went to Kenny Cotter of Lewisville,Texas, and 3rd to qualify was Millie Bingham. Kenny has cooked for 24 years andnever qualified for Terlingua, so we were real happy for him.

Kenny has family from here, and also around here, as well as some fromTulsa, Oklahoma, who have been meeting here at the cookoff for the last few yearsfor the Cotter family reunion. His kids used to cook with us in the Junior Cookoffs(when we had them) and now they are cooking in the Open with us. It’s nice to seekids grow up and continue to cook. We need the younger ones.

We are sorry for those who were unable to make the cookoff. Put this oneon your calendar for next year! It’s a good one and we have a lot of public thatcomes out.

Holdinga cookoff at a location that does not have insurance, andbasically sharing the CASI insurance for their liability, couldhave catastrophic consequences to our insurance and abilityto continue holding cookoffs.

The purpose of CASI insurance is to protect CASI and isnot to protect those too foolish to protect themselves.

Murmurs from MamaIt is a very cold, dismal day here in the

country. Temp is supposed to be below freezingtonight. The Farmer, out of pity, took a bale of hayto the cows and donkey boys up on the hill. Theyhave pretty much stayed right there in the rain andmud and cold and munched on that hay. Haveseen a lot of birds coming in eating all the bird seedsand one or two squirrels keep fighting over the

corn.We are so very excited for Carolyn and Bucky, as they start on their travels

after selling their business and retiring last week. They plan to travel here and thereand come back to their country home in Fredericksburg from time to time. We willmiss them but want them to go and have fun.

Had a warm and wonderful visit with Ralph and Dee Hay this past weekat The American Legion in Bastrop. They brought me a publication insert from thePasadena paper. On the cover was our current champ, Dana Hay Plocheck. I wasbrought to tears, as they wanted her other Mama to have a copy.

I told Dee she needed to continue writing a column for the Trails. I laughedand laughed over her article about the naked chicken. John showed me an ad lastnight for a hairless cat that was being sold. I told him I needed to call Dee and seeif she would make it a dress. We had more laughs that afternoon. I can’t wait toread Louis’ response to Dee’s column.

We continue to go to as many cookoffs as we can. One of us needs points;he doesn’t. It was a pleasure meeting Tracy Ashman, Deb and Steve’s daughter.She had to leave Saturday for Alaska where she is a school counselor. It was a joybeing there to see Leticia Smith, Doyle and Melodie’s daughter, get her first chilipoint with her first pot of chili. Later, I was surprised to see Steve Lisherness,another chili son, whom I had not seen in a long time. I was just beaming the wholeday; further enjoyed the company of Renee, Mayo, Dave, Keith, Michael, Earl, andSherrie, all from Houston way.

I continue to take the TLS pink shirts with me in the motor home. And youladies continue to try them on and send in your entries. It would really help us (forthose who have computers), if you would pull up James’ website jmblxix.com andprint out your entry form and then mail in with your $30.00. It would really save onour postage later when James mails out entry forms. You can check out the sizesthat have been sent in to help determine your size, if you have not tried on the shirt.I will have them with me at every cookoff and will have blank forms. I just don’twant anyone disappointed should they not get their entry in on time. Thank you.

Has Apathy Become theRallying Cry

for the Future of CASI?We are very fortunate to have a Board of

Directors who has served CASI in a very stellar way.They have looked after our money and property in avery professional manner. They have also receivedmany disparaging comments.

When something is done at the Ranch, thereare more often bad comments than good. But such isthe politics of CASI. When the Board has madedecisions concerning most ideas, there are morenegative comments. Comments of, “the Board can doanything they wish; the members have no say concerningthe operation of CASI” are made. This is a truestatement!! The ByLaws of CASI are set up torestrict the operations of CASI. I feel this is a goodway for CASI to be controlled.

I believe that if the membership of CASI werenot so niggardly with their input of ideas forimprovements, concerning the future of CASI, wecould move forward in a more productive way.

When I wrote an article concerning the idea ofdoing away with 15 cook events, there were only acouple of responses. None of which provided anythoughts for making CASI a better organization.Another article concerned a different way of qualifyingto cook. Again, there were only a couple of responses. Noneof which offered any suggestions to make things better.

The two articles were diametrically opposed to oneanother. Does anyone care that we have become our ownenemy? Are we condemned to continue doing the samething again and again but expecting a different outcome?

Until the membership becomes involved andprovides new ideas and projects, things will only continuethe way they have been. IT IS TIME TO STOPCOMPLAINING AND START ACTING! Without yourpersonal involvement in the future, you are giving up yourright to disagree with the way the future of CASI is handled.

Stop talking and start putting your ideas on paperwith how you would change things. Along with these ideas,you need to give specific ways to implement the changes.

Your Great Pepper has a voice and a vote. Requirehim or her to bring forward the wishes of your Pod membershipat the GP meeting or in direct mail or contact with a Director.All Directors have email. Let them know how you feel.Individual members should also contact the Directors.

In this article, I used the word niggardly. It hasnothing to do with race or color. It only has to do with one’sown way of sharing.

NOBODY TOLD MEI’d like to say “Happy New Year!” but we’re

already over four months into the New Chili Year. So,it’s time to get on with the Year of Chili.

It looks like this Chili Year will be prettycalm, with very few big discussions. We’ll have theusual light hearted discussions of 6-point states versus12-point states, and maybe a little bit of talk about cutmeat versus ground meat, but mostly, the heavy

disagreements seem to be minimal this year. I could be wrong and anything canchange, but it looks like a good year.

There isn’t much doubt that ground meat will be more popular this year; nowthat Dana Plocheck has shown us that good chili can indeed be made with groundmeat. I always suspected that it was possible, but I couldn’t prove it. Several people,mostly Judges, have tried to tell me that I can’t make good chili with any kind of meat,but I keep trying. This year, I’m going to try to learn how to make passable chili withground meat. Any advice would be welcome.

Maybe I’ll go to Houston and cook with Dana Plocheck, and maybe I canpick up a hint. It’s only about 800 miles, and that’s not too far for good chili. I knowthat there are no secrets in cooking chili, but maybe there are some techniques thatcan help. Maybe if I add a pork chop, or a prune, or maybe a couple of bay leaves.Maybe a ball of pork sausage or more cayenne pepper will do the trick. Maybe Ishould go to New Orleans and talk to Marie Laveau or maybe get a potion.

Whatever it takes, I’ve got to learn to make good ground meat chili (just incase I have to make ground meat chili sometime). I’m sure that there will be morechili-grind-only contests, and I am sure that more people will be using ground meat.I feel like I’m just starting out again. It’s exciting!

So, I talked to Dana. Success certainly hasn’t gone to her head! I had notmet her before calling her for this article, and she was as pleasant as a can of coldbeer with a bowl of hot chili.

I asked her why she decided to cook chili grind at Terlingua, the home ofcut-meat chili. That takes a lot of courage and faith in yourself. In Dana’s case,she had been winning all year with ground meat, and she was already qualified forTICC 2007 with chili grind. So she had a pretty good streak going, and probablythought she had a pretty good chance to do well in Terlingua.

Nevertheless, she brought both kinds of meat with her, and didn’t reallydecide to cook grind until she got to Terlingua. I suspect that she spent a lot of timeagonizing over the decision, but she finally made the winning one.

Dana says that she uses the same recipe for ground meat that she uses forcut meat. I didn’t ask her for the recipe, but she did say that she didn’t do anythingdifferent. She cooked the same recipe in Terlingua that she cooked to win the 2005Texas Ladies State contest. She cooked that same recipe all year long in 2006, she’sstill cooking the same recipe, and it’s still winning everywhere she goes.

I’ve already mentioned that she was qualified for TICC 2007 when shecame to TICC 2006. That’s at least 12 points in the first four cookoffs in the 2007chili year. That’s an average of 2nd place in four consecutive cookoffs in the Stateof Texas! And those folks know how to cook chili! I don’t know how she didbetween the first of November and the middle of January, but she did manage to winthe cookoff at Blanco’s Bar & Grill on January 13.

She’s not trying to dominate the whole world of chili, she’s just having fun.Chili cookoffs are fun! Chili people are fun to be around. To non-chiliheads, it’srather odd to see cooks work so hard to make better chili than anyone else, and, atthe same time, try to help the other guy do better.

So, congratulations to Dana for winning inTerlingua, and thank you for being willing to help therest of us.

Why I Started Cooking inChili Cookoffs

From time-to-time, I have had the questionposed to me and I have posed it to others - Why doesanyone start cooking in chili cookoffs? For me, theanswer was simple – I was looking for a way to spendmy weekends and to meet new people. I think I morethan accomplished both!

In 1983, I decided I needed a hobby;something to give me an opportunity to meet new people and occupy my free time.I competed in the STAR Cookoff near Bastrop, Texas, in which the entrants hadto cook something that began with the letters S T A or R. My entries were smokedturkey, grilled rabbit, and squirrel stew; I simply couldn’t come up with somethingto cook that began with the letter A. My dad scrounged through his freezer andfound a couple of rabbits and some very freezer burned squirrel to contribute to myendeavor. Lo and behold, my squirrel stew won 2nd place.

Shortly after the STAR Cookoff, my sister called to say they were goingto Czhilispiel in Flatonia and asked if I wanted to go. Not knowing anything aboutCzhilispiel or even what they did there (other than drink a lot of beer), I went. Thiswas my first encounter with the 2nd largest chili cookoff; Chilympiad was the largestat the time. The whole Main Street was closed while folks stirred pots of chili anddid outrageously funny showmanship!

After I got home that weekend, I set out to find out more about the chilicookoffs. Now mind you, there was no internet at the time so I was forced to usethe telephone (and, no, I don’t mean a cell phone either). I knew nothing of any chiliorganization or chili publications.

My first call was to Chilympiad headquarters in San Marcos, who gave methe number for Jo Ann Horton, publisher of the Goat Gap Gazette. Jo Ann wasvery helpful and sent me a free copy of the GGG for my review. When I receivedit, I immediately began my quest to find a cookoff to attend; after all, I got 2nd placewith squirrel stew so who knew what I might do with a pot of chili.

I decided to attend a cookoff in early December 1983 at a bar somewherenorth of Houston (the name of the town escapes me). I arrived at the cookoff siteearly on the morning of the cookoff with my 10-gallon pot, 20 pounds of hamburgermeat, 15 gallons of water, 5 quarts of canned tomatoes, onions, bell peppers, andnumerous spices. I just knew I had the winning recipe, although I didn’t have anyrecipe at all.

Throughout the course of the day, many “professional” chili cooks stoppedby to see what I was doing and give little tips of the trade. One even told me thatI had the best spaghetti sauce he’d ever tasted. Needless to say, I didn’t win thatday; I didn’t even place.

Was I discouraged? Certainly, but if it hadn’t been for the chili cooksoffering their encouragement and little tips for making a better pot of chili, I probablywouldn’t be cooking today! I try to never forget my first experience at a chilicookoff; I seek out the new cooks at every cookoff and do my best to encouragethem to come back.

I more than accomplished my initial goal in 1983, made life long friendships,certainly more than filled my spare time, and assisted with many worthwhile causes.If we all do our part, chili cookoffs will grow, the CASI membership will increase,and charities will benefit. Good morning once again from uncertain Lamar,Missouri. Well, we are preparing for the worst and hopingfor the best. The National Weather Service has placed allof Southwestern Missouri & Southeastern Kansas undera Severe Ice Storm Warning for all of this weekend, whichis Friday thru Sunday. The forecast is for 1 to 1 1/2 inchesof ice, turning to ice and snow pellets Sunday afternoon.

As a rule of thumb, the most severe weather that we will get a warning foris a tornado or thunderstorm and when a warning is issued the time to get ready is veryseldom is over 30 minutes. I guess now we can understand how it is when they warnthe people that live along the coast of approaching hurricanes. The Weather Servicestarted warning us around noon Thursday and it seems as time goes on this storm islooking like the worst. Harry and I have watched the news programs showing the Gulf residentsstocking up on water, batteries, food, etc. in wake of a storm. Now it’s our turn sowe are preparing for the worst and hoping that maybe the brunt of the storm won’thit us. In a tornado warning, you just don’t have time to do much but grab a fewvaluables and get the h*** out of Dodge.

I got 10 dozen things I am trying to get done and not doing justice to any ofthem, and Harry is not one bit of help this morning. He is more interested in watchingwhat all is going on down at Lamar International Airport in preparation for the storm.Since he is so occupied with the airport people getting the salt and sand trucks ready,I guess I am going to have to stop for a few minutes and make a fast trip to the grocerystore and filling station. Yes, I know and maybe I am old fashioned, but it is still a grocery store (andnot a supermarket), and I still take the truck to the filling station, not the gas station.

Made it back and what a wild trip! When I stopped at the filling station, I hadto wait in a line that was a block long of cars and pickups buying gas. Now that reallymakes a lot of sense; if we get 1 1/2 inches of ice on everything, it’s not going to befit conditions to be driving let alone be outdoors. Note: We have to be prepared to be out and on the go regardless of weatheror conditions with Emergency Services/Fire & Rescue. Harry has already warned methat when the ice hits I am under house arrest until everything clears off. He said Ihave had all the brakes I need for a while.

When I got to the grocery store, all 8 cash registers and the 2 expresscheckouts were open and backed up. About all the shopping baskets were full and alot of the contents were what the people would not normally buy. One good thing isthat if the storm is not as bad, they won’t have to go to the store for a month. I justbought fixins for a couple of gallons of chili.

Sort of nice being a chili cook at a time like this. Unpacked a couple of theColeman Stoves, have the Coleman lanterns ready to go in case we lose power, boughtsome batteries when I was at the store for the battery-powered television, and dug outthe old faithful power inverter so I can have power for the telephone. Looking moreand more like all this is going to come in handy; the misty rain is increasing and thetemperature is rapidly dropping.

We are not so worried about the electric lines in Lamar; it is the main powerline that supplies the town from Grand Lake in Oklahoma going down. Two big rigsof sand just went by the house headed for the airport and the granddaughter just calledfrom school telling Harry that they were dismissing early and to come get her. No way!

Harry already came up with the idea to go back to the store and get more chilistuff and we will have our own cookoff if it gets real bad. If I let him pick up Cheyene,it is liable to be 2 hours before he is back. You recall I have told you before that whenhe starts out somewhere he is liable to go all over town before he gets back home.

Well, the lights are starting to flicker and the battery pack keeps kicking in sobetter close this before I lose everything. Till we talk to you all next month remember: “To Start Slow & Then TaperOff.” Bess & Harry
