Joe said he learnt a lot at Gidleigh Park where he stayed for three years, it was his first taste of working in a Michelin
starred restaurant. From there, with some valuable experience under his belt, Joe has since worked a number of
different Michelin starred restaurants overseas and in the UK and made the move to Sweden about a year and a half
ago to work for Mathias Dahlgren where he stayed for a year before taking on his new role at Oaxen Krog which is a
two Michelin starred restaurant in Stockholm. Joe told us:
I run the cold section at the moment, meaning all of the cold courses on the ten course tasting menu are my
responsibility, including langoustine tartar with fermented pears, horseradish and grilled juniper.
Joe enjoyed his time at Truro School and recalls loving being part of all the sports teams, mainly of course rugby, and
recalls when fellow classmate Sam Hodge ran into the glass door of the Wilkes building as The best day of my life.
When we asked Joe what he thought of Truro School opening up its own cookery school he said:
I am delighted about the news of the cookery school opening; I think it was only a matter of time!

Chef at the two Michelin starred restaurant in Stockholm
When Joe Left Truro School he moved straight to London
to play in the London Wasps Rugby Academy, Joe was a
keen Rugby player at School and enjoyed this opportunity
greatly. On Joe’s return to Cornwall he re-started his
education undertaking A levels but soon realised that
further academic study wasn’t for him and left after a year.
Joe was unsure what it was that he really wanted to do
and it was about a year later that Joe, quite randomly he
told us, started work at the Driftwood Spars Hotel in St
Agnes. This was Joe’s first experience working in a
kitchen, and cooking food for guests and customers and
he loved it. Joe had found his passion and after a summer
of working hard and enjoying life in his hometown he got a
new job in the two Michelin starred Gidleigh Park in
Devon.

A Chef’s life in Norway

Dave took a job as a Sous Chef in a start-up Norwegian restaurant in the heart of what Dave describes as Norway’s
hipster land: Grunnlokker. After working there for six months he was offered the sous chef position at a hotel on the
historical Norwegian island fortress- Oscarsborg. A couple of months into this new role Dave was approached and
asked to represent Norway as a chef at the international Green Week (IGM) In Berlin, which is the second biggest food
fair in the world. After this Dave was offered a head chef position at the Old Freemason haunt Handverkerstuene in the
centre of Oslo where Dave worked a Christmas season cooking classic Norwegian Christmas food from Scratch.
Once the Christmas season was over, in January this year, Dave took a job AS Sous Chef for the third biggest Hotel in
Norway- Thorn Hotel Opera which is directly opposite the Norwegian opera house. He has been there ever since and
on a chance encounter with the owner, Dave has been offered the Head Chef position at the hotel which he starts at the
beginning of August.
We asked Dave what his future plans were, and what he thought of the new cookery facilities at Truro School:
I do picture myself staying in Norway, though my next and current goal is to get myself into a position, that I am able to
take an executive chef job for a western hotel chain somewhere on the coast of west Africa. Truro school had fantastic
amenities and awesome opportunities whilst I attended the school, though we did not have anything along the lines of
home economics, I believe that a school, having such an outstanding academic record also being able to offer training
of a more vocational path can only be a good thing. Whether it be for a child who wishes to become a chef or just to
help equip young people with a fantastic life skill.
In the end Dave decided that University
wasn’t for him after-all so he took a
volunteer placement for EDP in Ghana. The
Development Office reported on this
exciting project at the time.
When Dave returned from his placement he
went back to Norway and reconnected with
his friends in the country and busied himself
by rebuilding an 1890’s log house just
outside of Oslo. During this time Dave met
a lady and decided that he would stay in
Norway and put his skills as a chef to use,
having always enjoyed working in a kitchen
before he thought he would give that career
path a proper try.
Dave left school after his GCSE’s in 2006 and went straight into working in kitchens, starting out in Truro, Dave
enjoyed a few years of earning money and spending time with his friends. In 2011 he decided to further his education
and completed a foundation degree in Biology and Chemistry and then later completed an access to higher education
course in maths and Physics and received a partial scholarship to study maths at Queen’s University Belfast. Dave
then took a six-month trip to Norway in 2015 to run a large café in the centre of Voss, the extreme sports capital of
Scandinavia.
Toby Parkins (CO93)
Co-Founder of Software Company Headforwards
After Toby completed his ‘A’ Levels in 1993 Toby read Physics at Nottingham University, he then combined some
climbing accidents with a couple of years out and switched to Mathematics and Education at Exeter University. Toby
went on to teach Maths at Richard Lander school back in Truro, from 1999 until 2001. After this Toby then set up a
technical focused web agency in St Agnes that continued until 2015 when it was merged into his next company.
Toby co-founded an outsource software development company, Headforwards in 2011 and this has now become the
largest and fastest growing software company in Cornwall and one of the leading technology companies in the South
West. In 2018 the company now employs over 100 software specialists and is located in two sets of offices in Pool.
Headforwards has created a different business model for outsourcing that combines being able to attract talented
people to Cornwall, with high quality, knowledge intensive, long term projects. Toby tells us that recruitment is the
most serious challenge to IT organisations in London and the South East, but side by side recruitment campaigns
have shown it’s easier and faster to recruit in Cornwall due to there being less competition from other companies.
Toby went on to tell us more about working in Cornwall:
Fibre broadband is often talked about as unlocking the potential to work in remote places but many people still
struggle to realise this. With improving air links and a reliable Sleeper train Cornwall has potential although it ’s still a
few hours longer than many would like from London.
He told us: We prefer to consider ourselves 6 milliseconds from London on a fibre Internet connection, and only 80
from Tokyo where some of our key clients are based.

Life After A levels at Truro School
Lucy Jupp, head of lower sixth at Truro School, said: “The week’s enrichment programme has allowed our students to
focus on life after Truro School and we have been delighted to welcome some excellent speakers and visitors to the
school.”
The Life After A-Levels programme culminated with a visit from headline act Guy Richardson, the former Scotland rugby
manager, who delivered an inspirational talk on leadership and the skills required to build strong teams and raising
performance. The Development team wish all our leavers the very best of luck with their next steps.
Recently Martin Wilmshurst (CO64) got in touch with the Development team in the hope that we could help.
Martin and his family now live in Australia and have done for many years, now, however his daughter Isabel
wishes to return to the UK and Martin has reached out to his school and the wonderful Truro School
Community hoping to get Isabel settled into her new endeavour, and find a job here in the Duchy.
Isabel fell in love with Cornwall when she visited Truro School with Martin when she was younger, she recalls
the visit a highlight of her childhood and remembers the Hogwarts-like Castles and incredible scenery.
Martin is incredibly proud of Isabell and watched her graduate recently as Bachelor of Business, majoring in both Sport Management and Event Management. Isabel has also been fortunate to work as Deputy Venue Logistics Manager for the 2018 Gold Coast Commonwealth Games. Now that the games have come to an end Isabel is has turned her attention to global opportunities in the sports and event sector, so if anyone in our vast Truro School community can help, or knows of any opportunities that might be of interest to Isabel, then please get in touch with Katy at [email protected]

Finding work in the UK for his daughter Isabel
This programme seeks to help students prepare for
the next step in their lives, supporting them in
carefully hand-picking the right career choice at the
first time of asking, while also improving employability
and leadership skills.
Students started the programme with a variety of
workshops and heard from such business leaders as
Cornwall Chamber CEO and school governor, Kim
Conchie, and Paul Trudgian of Fish for Thought, who
ran a session on starting up a business.

TSFPA private viewing report
It was a pleasure to attend the TSFPA Private View event at the Heseltine Gallery on 25th July. We welcomed back former
pupils of different vintages, many of whom had not been back since their own school days and there was much talk of the
venue's previous incarnation as the school gym or sixth form centre. It is no exaggeration to say that everyone present was
blown away by the quality of work in such a varied display from current members of the school ranging from Nursery to A
level.
The committee and I are very keen to provide a range of events to suit the tastes of all former pupils. If you have an idea

Former Pupils VS School Cricket match
We are delighted that the traditional former pupils
VS school speech day Cricket match was
reinstated this year thanks to former pupil Tim
Manhire (CO82).
The game was held this year the evening before
speech day and was a great success, the full
report will feature in the Truronian magazine that
will reach you all in September, we hope you are
