It’s hard for us to imagine, in this age of technology and modern conveniences,not having refrigeration; but, for our ancestors that was a way of life. They hadto get creative in order to cool and preserve their food. The seasonal harvestingof snow and ice was a regular practice in most ancient cultures. Ice and snowwere stored in caves or holes lined with straw or other insulating materials.
In America, before the days of mechanical refrigeration, it was common practice to "put up" ice in the winter. Almost every farmer had a pondand also a building to use for an ice house. During the 19th and early 20th
century ice harvesting became big business in America. And that was espe-cially true in New York’s Hudson Valley. New Englander Frederic Tudor, who became known as the “Ice King” developed better insulation products to shipice long distances.

mon goal of continued growth and prosperity for the Club.
I would like to take this opportunityto thank the Board members and allof the Officers of the Club for their commitment of their time and energyto the governance of the Club. It has been a difficult year. I’m happy toreport that we are still here and at the present time we hope to be in opera-tion for the near future. The Board
has developed some great ideas to pay our bills and keep the Club oper-ating in the Black.
I would like to thank our outgoing board member Bill Ross. He hascontributed immensely to our contin-ued success during these difficulttimes. Bill is a long time Club mem- ber and Past President. His guidanceand expertise will be especiallymissed. It also goes without sayingthat without the help of John Hess,our Club Manager, and the supportstaff we would not have had the suc-cess that we have had. We shouldalso recognize our quality wait staff,kitchen help and our terrific chef for making us all feel at home in theclub.
It should be noted that the member-ship since the 2011 Annual Meetinghas increased from 170 to 172. Thisvery small increase is significantsince it shows your commitment tokeeping our club in operation. If weare to continue in operation into2013 we really need to recruit newmembers.
The Club continues to host manyspecial events each month. The en-tertainment committee continues tocome up with events that we hopewill be of interest to a wide varietyof our members. A special word of thanks should be made to our VicePresident, Colleen Ryan, for plan-ning and developing many of theseevents.
I’d like to remind everyone that our second annual “Pinkster Day Cele- bration” will be held Friday June 1st.
On June 1st we will welcome Pulitzer Prize Winning Author William Ken-nedy. A portion of the proceeds will benefit the Foundation, which is ex-tremely important to the repair andupkeep of this historic building. Ihope that as many of you as possiblewill be able to attend this event.
