Tis step provides better portioncontrol or students and minimizes theamount o ood waste that is created dur-ing each meal while conserving a mindboggling amount o water, soap and manhours in the process. An automatic compostsystem breaks down what little ood wasteis created and repurposes it or use at theChico State University Farm to enhance soilcontent, thereby providing healthier pro-duce which again, will eed students in the
uture. Large batch cooking cauldrons allow immense volumes o soup and similar oodsto be created and ash chilled, decreasing
the amount o time and energy needed toeed such a large group o students.
Te basement houses multiple reezerand re rigerator rooms, mirroring the up-stairs layout and providing continuous stor-age or ood; a huge shi t rom the previ-ous dining hall that required ve or more
ood deliveries per week to only two per week this upcoming semester. An entireroom in the basement level o the buildingis also dedicated to beverage supply or theentire ca eteria, mixing each beverage avor within the room and using carbon dioxideto not only carbonate the beverage but pushit into the machines as well, saving count-less deliveries that would be necessary oth-erwise.
Finally, no building o this magnitude would be without an extra eather in itscap, and Sutter Hall is no exception. Sittingin the belly o this building lies a massivespace ull o ducting and air scrubbers thattake the particulate matter released into theexhaust hoods rom the kitchen production
areas, scrub the air ree o these particland associated odors, and releases the airback into open environment and throughthe top o the building. Te result? Contin-uous operation o the dining hall withoutat all altering the scent o the environmentaround the building, and as anyone whosever passed by a high-production restaurantknows, the lack o this scent alone can beenough to help students make better deci-sions in their day-to-day eating habits.
CSUC is currently putting Sutter Hallsmeal program to task, utilizing local pro-duce and ingredients whenever possible.Tey are currently working on repurposingthe oil used in their kitchen to help uel bio-diesel vehicles and utilizing all o these greadvances in sustainability to help teach cur-rent and uture students how to lead a moresustainable li estyle. residents, recent changes at the acility in-clude various implementations and a namechange rom the Neal Road Land ll to theNeal Road Recycling & Waste Facility. Tisre ects the communitys intensi ying ocuson sustainability. New services include card-board recycling and nalizing plans to createthe means or recycling construction and de-molition materials. Yard debris is gatheredin the amount o approximately 4,520 tonsper year and is processed then sent away to
be utilized in electricity generation. Asiderom the other waste at the acility, we have
diverted and recycled 248 tons o e-waste(electronic waste) and 138 tons o tires dur-ing a 12-month period.
Nonetheless, in spite o our conserva-tion eforts so ar, our waste levels necessi-tate an expansion o the acility. An unusedsection o land on site is currently beingexcavated in preparation or harboring our waste storage that comes at a price o be-tween $400,000-$500,000 per acre. Tis
is a process that occurs every time that anexcavated section (i.e. waste cell) gets lledup. Within the next 6 years, existing septagesettling ponds (currently accepting about16,900 tons in a 12-month period) will needto be removed to make room or the burialo more waste.
Mr. Mannel highlights the importanceo environmental awareness: Our land llhas an extensive monitoring network, withgroundwater monitoring wells and land llgas detection probes installed on the prop-erty boundaries and within the land ll oot-
print. In the near uture, plans are to de-velop a trans er station at the acility which will allow or acility staf to recover many more materials or recycling and other ben-e cial uses. Monitoring and transactionsare all computerized, aiding in the collectiono gasses (such as methane) generated withinthe land ll. A acility to convert these gassesinto energy is currently being constructed with hope to be operational by Spring 2012.
Certainly, the third step is to consider what we want to buy be ore we make the
purchase. Is it environmentally- riendly, durable, long-lasting, and timeless? Or will wbe sending it to the land ll when it breaks wears out, or simply goes out o ashion?seems best to send as little to the land ll apossible.
In the meantime, the Neal Road Re-cycling & Waste acility welcomes our caegorized re use as its treasure. AccordingMr. Mannel, What was once trash is nowconsidered a commodity. Instead o buryinmany items that used to be considered garbage, there is competition or these items a
a eedstock or recycling or renewable eneprojects. In the next twenty years, there wibe continued ocus on zero waste and wastto-energy projects. Butte County Public Works is already looking down the road andmaking preparations accordingly.
