If you know the name of the person you are writing to, use it. Just use the surname. So for a man, write Mr. Smith, and for a woman, and Miss Smith . You can also write Mrs. Smith for a married woman, and Miss Smith for unmarried woman, but only if you know that this is how she prefers to be addressed.
If you don’t know the recipient’s name, write Dear Sir for a man, and Dear Madam for a woman, or Dear Sir or Madam if you are not sure of the person’ sex.
If you start a letter with Dear Mr./Ms. Smith, and with Sincerely, your signature, and your full name.
