into aphrodisiac food that is guaranteed to

and enjoy a dreamy star lit dinner at Kupu
Kupu barong Resort in Ubud (p38). While in

Alison is a travel writer and self confessed food-lover. She has spent many years traveling the globe, immersing herself in foreign cultures and sampling local cuisine, applying her motto ‘Everything should be tried at least once.’ Her heart has now been captured by bali where she is happily indulging her favourite things; writing, traveling and discovering new restaurants
Menur describes herself as a part-time food lover and a full-time food friend. She enjoyed her exposure to many different restaurants during her year teaching Indonesian Language and culture in Washington Dc. Now back in Indonesia she has discovered that her pleasure in trying new food has deepened and she hopes to one day open her own restaurant.
Eve is the newest member to join the Let’s Eat team and says her family’s motto has always been “live to eat,” rather than ‘eat to live.” Aside from eating she also loves to write, travel, design and cook (although, admittedly that also involves eating.)
Dewi admits to falling in love with writing andphotography. Her wandering feet have taken her travelling allaround the archipelago before finally settling in bali where she set to work capturing theauthenticity of the island in words and images.

Hello Miss World!Pan Pacific Nirwana Bali Resort proudly hosted all 129
gorgeous contestants of the Miss World pageant in
September. the stay at the expansive 103-hectare
integrated golf and spa resort was part of the lead up to the
grand finals which took place at the end of September. The
resort also hosted the Miss World 2013 Golf tournament at
their award-winning Greg Norman 18-hole championship
golf course with 120 entrants competing for the winner’s
trophy and seats at the 2013 Miss World opening ceremony.
South Kuta beach business Association (SKbbA) recently
launched their “be clean, Green and Lean” program as
part of their “All the Fun under the Sun Program” for the
year 2013/2014. American Express and bank Danamon
sponsored 67 bikes which are now located at each

contestants who attended a number of workshops and
activities, including serious encounters with the animals

their most recent gathering at Grand Istana Rama Hotel

Indonesian TreatsSituated near the entrance of Sunset Lippo Plaza is Warung Desa, an Indonesian restaurant. Desa, means village in Indonesian and is the best word to describe Indonesian food coming straight from the kitchen, served purely, honestly and deliciously.

We start our meal with a rich Indonesian lemongrass flavour
in the Sup Ayam Garang Asem. It reminds me of home-style
chicken soup with a slightly spicy taste that is just enough
to alert the senses to the freshly cooked vegetables and the
tender turmeric-flavoured chicken pieces. The soup is fresh
with a hint of lime juice and served with kerupuk chips that are
offered ‘free flow’ at Warung Desa. The soup can be served
alone as a starter, or accompanied with fragrant white rice for
a richer, heartier lunch. Next is the best selling, most talked-
about Nasi Bakar Isi Iga. The rice is flavoured and wrapped in
banana leaves then topped with tender grilled ribs, that have
been marinated for hours. the great thing about the banana
leaf infused rice is that it smells appetising and tastes soft, but
is not overcooked. their special vegetable is Spesial Oseng
Oseng Sayur Wardes; oseng oseng is a simple Indonesian stir-
fry cooking method for vegetables and meat. Warung Desa’s
version comes with vegetables , shrimps and chicken. So far, I
have nothing to complain about and the Bubur Injin leaves me
very content; a balinese black rice pudding made with creamy
pandan-flavoured coconut milk, served warm.

the drink, Blue Sky is refreshing and fresh, a clever mix of soft drink and soursop juice. Options for beverages here are
countless, especially if you like coffee. Drinks made with caffe Italia are listed from A to Z on the drinks menu and are

Who is charlie you might ask? Apparently he
is a suave, jet- setting, and rather illusive James
bond-type character – and this is his party pad.
Regardless of whether or not charlie actually exists,
his presence is certainly felt, and his mansion is a
great place to kick back!
the concept and funky interiors of this stylish town
house come courtesy of a collective of designers
and artists. A buzzing little bistro is set on the
ground floor, with a bakery tucked into the corner
proffering flaky Danish pastries, dainty cakes,
German- style breads, and some rather delicious
Almond Croissants. Pastry chef, Putu Sukanuaba,
is the former head baker for the ruling Monarch of
Dubai, and – if you pardon the cliché – his Almond
Croissants are certainly fit for a king.
the lounge bar upstairs has a dark and seductive allure that is
highly conducive to lingering. Relaxed seating arrangements
include plump upholstered corner suites and leather arm
chairs. Even the bar stools are comfortable! Which leads
me directly into the subject of cocktails. created especially
for charlie by renowned mixologist carson Quinn, (formerly
of Roka Zuma group,) tailor-made concoctions use natural
ingredients, including homemade sugar-free syrups and
infusions. I am instantly besotted by the Mountain Salted
Pommello a refreshing blend of gin, lemon and sorbet,
crammed with fresh citrusy pommello. the Naga Fizz is also
impressive, and makes an ideal aperitif, with dragon fruit-
infused gin, lime and fluffy egg white foam. Order a drink on
the rocks, and the bartender will carve cubes off a giant slab
of glistening ice crystal.

a gourmet twist, and there is a
discernable French influence in
presentation and technique. the
Carpaccio of Tasmanian Salmon
is pink and juicy, flavoured with
a tasty lemon vinaigrette and
sprinkle of crunchy fleur de sal. A
tantalising assortment of capers,
feta, shaved parmesan, black olives
and watercress are scattered across
the top. the Duck Three Ways is
well presented with tasty morsels
prepared as a hearty sous vide,
tender confit, and a tasty croquette
accompanied by mushroom ragout,
baby carrots, sliced shallots and
whole cloves of garlic. My dessert
is Arabic-inspired Um Ali, an exotic
bread pudding, unlike any bread
pudding you have ever tasted
before. Laced with pistachios, dried
apricots and raisins the taste is
wonderfully rich and creamy.
Quirky private dining rooms, a VIP
balcony and regular events, like
the Saturdaze bloody Mary brunch,
Jim Larkin playing the blues, and
international djs (there is a strict
policy of no electronica) are even
more reason to head to charlie.

Having a massive selection of Japanese cuisine, Sushi Tei is definitely a favourite amongst locals and visitors alike. We stop by for lunch and witness a sushi frenzy inside the white mansion on Sunset Road.
Sipping our refreshing green Sushi Tei Sunrise and
orange Sushi Tei Sunset, we are amazed by the efficiency
of the operation at this 2000 m² Japanese restaurant. A
well oiled conveyor belt, constantly offering delicious
sushi rolls and other delicacies, is making its rounds at
the centre island counter of the restaurant.
Since it’s opening on September 2007, this Singapore
based franchise restaurant is definitely a favourite
when it comes to Japanese cuisine. take a look at
their gigantic menu book and you will see why people
keep coming back for more. It offers a comprehensive
list of Japanese cuisine and is led by Executive chef
takeshi Ogino, who makes sure only the best quality of
ingredients are being cut and served to the guests.
“We are very careful about sourcing our products. to
be authentic, we import quite a lot of ingredients from
Japan although being located in bali, we are lucky to
always obtain very fresh seafood products delivered
straight from the sea into our kitchen,” explains the
manager to us.

He recommends Hiyayakko, four pieces of boxy soft tofu cuts, such a
perfect appetiser for a hot day. After the light cooling gulps of the tofu,
we go on to nibble the serious business of Salmon Cheese Roll, which
sounds odd but tastes perfectly wonderful with crab stick, tamago,
salmon, and of course, shredded cheese on top. We move on to the next
course, Rainbow Roll. Seven beautiful pieces of sushi rolls which have a
wonderful colour gradation, each with different ingredients, varying from
prawn to tuna.
From our table at the second floor, we witness the hustle and bustle
downstairs. It is past the normal lunch hour but the restaurant is full
and there are lots of families with their kids still in their school uniforms,
voraciously gulping down their rice bowls. We end our late lunch by
sharing a glass of Fruity Yuzu, a scoop of slightly sour lemon ice cream

Forget Pirates of the Carribean, this is pirates of Nusa Dua Bay, and while the
kids are off looking for treasure, parents can chill out in the Captain’s quarters
nestled in a tree house.
If you are looking for a fun family day out, (or harbour
childhood pirates fantasies) then head to Pirate’s bay
snuggled into a white sandy cove in Nusa Dua. the rustic
location includes wooden ship, picnic tables with logs for
seats, camp fire and safari tents. Pirate’s packages include
treasure hunts, rides on a flying fox, an obstacle course, and
floating in the tranquil bay on Vietnamese wooden boats. The
themed setting and range of activities also make it a popular
choice for corporate team building, outbound activities, private
events and parties, with fire dancers, acrobatic dancers and djs on
request.

bar is made from recycled timber, and serves up fresh fruit juice,
beer and cocktails. the menu is well suited to the casual beach
ambience, with snacks such as Calamari and Chips, and tasty Tempe
and Tahu Penyet served with fried eggplant and zesty tomato sambal.
A popular choice is the Pirate’s Basket, piled high with grilled lobster,
crab, prawns, squid and whole fish served with salad and rice. While
a hearty Club Sandwich layers bacon, chicken, cheese and salad and
comes with French fries. You could also try the Drunken Fish, or Extreme
Pirate’s wok, while kiddies can indulge in the Little Pirate’s menu that
includes Mini Kebab with Potato Wedges and Mash Potato with Sautee
Vegetables.

climbing down from the deck of the pirate’s ship, we sit around
the campfire where our Bamboo Ayam is cooking; a bamboo
stem packed with chicken pieces, and flavoured with chunks of
ginger, stalks of lemon grass and chilli peppers. Live acoustic music
provides a pleasant soundtrack to the dusk which sends powdery
pink swirls across the sky. We finish with a very tropical Banana
Foster – half a pineapple filled with vanilla, strawberry and chocolate
ice cream, flambé banana, cream, cashew nuts and chocolate.
Pirate’s bay is part of the bay bali, an eclectic assortment of
restaurants located on the beachfront in front of bali Luxury

Arriving at Kupu Kupu Barong, Ubud, we find the sky bathed
in the soft pink glow of dusk, and are greeted by the hum of
the fast flowing river, the gentle trickle of water fountains and
the welcoming smiles of balinese wait staff. A path of crimson
rose petals and golden frangipani leads across a tranquil pond
to a gazebo decorated with candelabras and flowers. Floating
candles and wreaths of frangipani glide serenely across the
water which offers the softest reflection of the sky and hills.
Dinner served here on the Lobby Pond is surely one of the
dreamiest dining experiences on the island.
Other romantic dining choices include the bird’s Nest – a
private table for two in a secluded forest setting, or the aptly
named La View restaurant. Reached by a footpath lined with
bougainvillea and red temple parasols the split-level restaurant
features sweeping views over the valley. the menu offers an a
la carte selection of European and balinese style cuisine, but
we happily opt for the five-course ‘Romantic Set Dinner.’
Our starter is a Carpacio di Salmon e Cape Sante all’oli e
limone, a dainty display of fresh finely sliced salmon and sea
scallops simply dressed in lemon and olive oil, accompanied
by bread and a selection of condiments.

Next, the Zuppa Dolce Red Pepper introduces vibrant
colour to the table, a zesty red soup swirled with
sour cream. the Amarena Coupe Gelati that follows
is a wonderful palate cleanser, combining fresh mint

with a petit carved strawberry, sprig of mint and dark
chocolate fan. Mains are a choice of Costata di Manza
Angus Americano alla Griglia con patate el rosmarino,
a tender char grilled prime steak with black pepper
and mash neatly served with vegetables and a bundle of
asparagus, or the equally hearty Aussie Media Agnetto
Rack, glazed with a rosemary and mint agar, presented
with soft potatoes fondant and finely sliced vegetables
barbecued on a skewer.
the Tiramisu provides a lovely finale, and is classically
rendered with layers of soft sponge and delicate
mousse deeply infused with rich coffee flavour and just
a hint of chocolate. the plate is beautifully decorated
with butterflies crafted in chocolate and coulis. A decent
selection of wines, including some good French reds
and a small range of champagne, can be chosen to
accompany dinner, while cocktails include Martinis –
Dirty, Green or Fruity and liqueur coffees, and mocktails
are earthy concoctions of fruit and herbs.
I suggest enhancing the romance factor by indulging
in a pre dinner Wings of Love treatment in the famed
on-site L’Occitane spa, where treatment rooms are set
in atmospheric tree houses. this lovers ritual combines
massage, body scrub and romantic Provencale bath
followed by a customised facial that will leave you

Born into an influential culinary family in Quebec,
you could say chef Frederic boulay started his
career as early as the age of 13 years, as he helped
out in his father’s kitchen. Later, he was the chef de
cuisine at Le Saint- Amour restaurant, before sailing
off to the caribbean to have a culinary adventure
on a luxurious small island in the Grenadines. “then
I said yes to bali, and moved here with my wife
in 2011 to build our lives around the city and the
beach,” says boulay who is passionate about giving
a modern twist to traditional French cuisine, and
fervently believe that a good chef is an artist.
“Pastry was my first love as a kid growing up
in belgium. So much so, I applied to become
a pastry chef in college but was accepted in
the kitchen instead,” explains chef Vermeulen,
on how his career started. Indonesia became
his home in 2002 and he worked in some of
Jakarta’s best restaurants such as Gran Melia
Hotel, before making the move to Grand Aston
in bali six months ago. “We revamped the whole
kitchen concept here, offering our guests a wide
selection of food from all around the globe in
one place.”

unobtrusive service. there should be lots of varieties,
taste and texture.
Q: Can you give us a glimpse into your future?cHEF bOULAY: Opening my own restaurant, a casual
French tapas bistro like something we’re going to open
here at Sakala soon.
cHEF VERMEULEN: It depends on my family but I would
love to have a casual restaurant here which the locals can
appreciate.
Q: What do you like doing when you escape the kitchen? cHEF bOULAY: travelling, swimming, watching movies
at the cinema.
cHEF VERMEULEN: biking, swimming and reading.
Q: How has your culture affected your style of cooking?cHEF bOULAY: Quebec is very connected to France,
so French technique and ingredients are definitely in
my palette. I believe a good chef is also a good artist,
constantly innovating, and creating beauty.
cHEF VERMEULEN: We have a really good belgian
waffle here, if I can say so!
Q: What do you suggest for a romantic dinner date at your restaurant.cHEF bOULAY: Sakala is the right choice for romance.
We have an eight-course dinner menu called the
Epicurean. It starts with luxurious caviar, has rabbit and
wagyu beef in the middle, and ends with a decadent
chocolate dessert!
cHEF VERMEULEN: Start with something light but
tasteful, like seared sea scallop, order a solid course in
the middle – like beef, and end with something sweet
but not too heavy like caramelised apple.

chatting with chef Feigl is like taking a
trip down memory lane. after working for more
than a decade in Bali, which ended on 2007,
the austrian chef finally returns to the island
for a short holiday and reminiscences on Bali
then, and now.
the insider
Q: How long ago did you live in Bali, and what do you think of the island now?
a: I arrived in bali in 1995
and worked here until 2007, as
the Executive chef in Kartika
Plaza Hotel. bali has changed
so much since then, I barely
recognise it. this is surely not
the bali I knew back then, when
often I was the only one driving
with my motorbike on the by
Pass at night! there are far too
many hotels now in bali but the
infrastructure has not changed
much. However, culinary-wise,
bali is now in a very interesting
period. balinese chefs are
working in international hotels
and restaurants all over the
world, and I’m just so happy to
witness that!
Q: Yes, more and more Balinese are working abroad. any advice for those brave chefs on how to make it in the industry?
a: It takes a lot of hard work,
time, and you have to be sure
that your heart is in it from the
start. Keep pushing the limit.
travel far and wide, taste all
kinds of food and learn from the
best. cooking nowadays is a
very cosmopolitan experience,
as a chef you should always be
prepared to cook something
that you are not familiar with.
Most importantly, have a good
network. It will help you in the
future.
Q: Speaking of which, when did you find out that you wanted to be chef?
a: I was around 13 years-old
and my parents owned a family
run café. I helped them out in the
kitchen and loved the experience.
Food has always been my passion
and I love to have good food on
my plate. the best thing about a
cooking career is that you get to
combine your experiences and
your hobby, although you will never
have a proper weekend because
you will be busy serving others!
Q: is there a particular kind of food that you really enjoy?
a: I love Asian and Arabic cuisine,
so I like to mix them up. Recently,
because I live in Myanmar, I learned
more about burmese cuisine and I
like it. It’s a mix of chinese, Indian
and Malay. Quite light and tasty,
and not as spicy as Indonesian
food. the world will learn more
about Myanmar and burmese
cuisine soon enough.
Q: How do you see yourself in the future?
a: I will still be cooking and
travelling, for sure. Hopefully, I will
have my own restaurant and bar.
For now, I’m happy enough living
in Yangon and watching how a
culture that was closed from the
rest of the world, slowly comes
forward to embrace modernism.

ChargrilledAustralian Ribeye

Ingredients: 2 Australian import rib eye steaks
250g baby potatoes
150g baby beans
5g rosemary picked and chopped
5g thyme picked and chopped
5g spring onion picked and chopped
1 garlic clove crushed
50 ml sunflower or vegetable oil
5g salt
Method:Prepare the steaks and set aside.
Wash the potatoes, place in a pan and cook until tender. Refresh in ice water then cut in half and
pat dry.top and tail the baby beans and blanch in salted boiling water for a few minutes and then
refresh in ice water.
to make the bernaise, put the white wine vinegar, shallots,tarragon stalks, bay leaf and
peppercorns in a pan, reduce by ¾ then cool.
In a stainless steel bowl, whisk the egg yolks and 3 tablespoons of the vinegar reduction until
starting to thicken, then cook over a bain marie continuously whisking until thick and pale in
colour, remove and slowly whisk in the clarified butter. The sauce should be thick and glossy. Mix
the chopped taragon into the sauce, reserving a little to garnish the top.
brush steaks with oil seasoned with salt. Place on the hottest part of your chargrill/bbQ and sear
nice criss cross lines into the steaks, then cook to your liking, I suggest Medium rare.
In a hot frying pan, saute the potatoes in oil and salt until golden and crispy, then finish with
crushed garlic, chopped rosemary, thyme and spring onion. In a small pan bring a little water to
the boil and add the blanched baby beans. When they are hot, add a small knob of butter and
season with a little salt, drain. Pop your steaks in the oven for a few minutes to bring back to
temperature. Add the sauce and garnish with the reserved taragon. Done!
For the Bernaise sauce:200ml white wine vinegar
3 white peppercorns
1 bay leaf
2 shallots sliced
5g tarragon. Leaves picked, stalks reserved
2 egg yolks
200g un-salted clarified butter

Among the many beachside venues on the south western coast of Bali, only a few are successful in delivering an experience quite like Vue Beach Club
Unique and luxurious yet somewhat modest in style,
Lv8’s Vue beach club boasts architecture reminiscent
of the Dutch colonial period and offers a beautiful
panoramic view over the glistening southern coast of
bali. With good service, a great international menu and a
beachside infinity pool, one can only imagine this to be
the perfect place to relax and forget life’s problems over
a drink and a view of the setting sun. Lv8 has already
hosted a number of regular events since its opening in
late June of this year.
Upon entering the grand building we are greeted with a
warm welcome. Sun chairs cover the deck surrounding
the pool, while cabanas offer a shady and comfortable
refuge from the sun. I was immediately impressed by the
staff, who seemed to be in constant rotation between
posts and never left any of the guests unattended. then
a man with a welcoming smile approaches us. “Good
afternoon, welcome to Lv8,” he says. Executive Sous
chef Muchamad Hilmi recently moved to bali from
bintan Island in West Indonesia, specially for this job.
He is personally responsible for the menu at Lv8 and
oversees the entire operation in the kitchen. We discuss
his experience in top-notch hotels around Indonesia and
the growing hospitality sector on bali.

Homemade cured Salmon and cucumber canapé
Ginger Mojito buttered Lemon
We wait for our orders with great anticipation and
are delighted with a speedy response. First up, is the
Homemade Cured Salmon and Cucumber Canapé, with
imported Salmon all the way from Norway, presented so
astoundingly it’s almost deceiving. A platter of Tomato-
Basil Bocconcini arrives shortly after, followed by an even
more impressive set of Caramelised Onion with Feta and
Green Olive Canapés.
the bartenders demonstrated their artistry with
the arrival of the Buttered Lemon, a cocktail with
super smooth vanilla macerated vodka, limoncello,
butterscotch and vanilla sugar, and finished off with
caramelised and buttered lemon to give it that perfect
piquant smack.
Perhaps the highlight of our visit was when the Ginger
Mojito arrived. A tangy combination of rum, ginger
liquer, fresh ginger, mint, fresh lime, and ginger ale
make for quite an exotic and harmonious cocktail. My
friends and I immediately agreed that this was mixed to
perfection. Not overwhelming as Ginger Mojito’s often
come, and a feeling of refreshment had me sold.
the Rujak Martini Style sparked our curiosity more
than anything else as it is the martini version of a
local fruit salad called rujak. It is comprised of chilli
macerated vodka mixed with Gomme, cucumber, apple
vinegar, lemon juice, buttered lemon garnished with a
fresh pineapple skewer. It is not an easy feat to make
something that is very good to begin with even better...
that is probably why they kept it for the end.
With the sounds of the surf and background of a
glimmering ocean, we say goodbye to Lv8 knowing we
will be back again soon.

An enthusiastic collaboration between canadian-born
chef Kevin cherkas, and his Spanish wife, Virginia
Entizne; cuca has the warmth and friendliness of your
favourite neighbourhood restaurant, while providing
a gourmet foodie experience that rivals anything you
would find in Melbourne, London or New York. Food is
the absolute focus, and the unadorned dining room is
resolutely intentional – there is nothing to distract from
the pure, sensory pleasure of indulging in wonderfully
light and playful comfort food. by this I don’t mean
pizza or chocolate mud cake, but rather, comforting
tastes and flavours that spark memories, or perhaps
evoke the childhood pleasure of enjoying great family
meals. As Cherkas says, “This is clever comfort food…
its like Grandma went to cooking school.”
One of the most impressive feats, is the use of 100%
Indonesian ingredients, from organic herbs, fruit and
vegetables that Kevin describes as “Exceptional,” to
hand crafted sea salt from Amed, virgin coconut oil,
balinese coffee and locally produced artisan wines.
Dessert is a feature, not an afterthought, with dishes
designed to share, and something for every mood.
the Bali Breakfast is fascinating, it looks like a fried
egg – with a bright orange yolk and a fluffy egg white
– but actually it’s a very clever and refreshing tropical
dessert. Sweet runny mango is encased in a glistening
thin coat of jelly, which you break and then mix with
fluffy whipped coconut cream. Slices of young coconut,
a sprinkle of shortbread crumbs and the crunch of fresh
passion fruit add texture and depth.
Who doesn’t remember After 8’s - those divine
dark chocolate mints served in crisp, crackly
wrappers, that would appear on the table at
christmas and special occasions. this is the
inspiration for the sublime Cocoa 8, a smooth
and velvety chocolate mousse (made with
Javanese dark chocolate,) scoops of perfumed
ice cream churned with bedugel mint (a taste
somewhere between peppermint and spearmint)
and crunchy chocolate croutons. While those
looking for a dark, rich and deliciously naughty
dessert will love The Monkey Business, infused
with strong flavours of sweet silky banana
pudding, rich butterscotch laced with whiskey,
and robust, bitter espresso gelato, with some
crunchy hazelnuts thrown in for added texture.

A small selection of locally produced artesinal wines
include some sweeter varietals such as Hatten Alexan-

accompanying dessert. Or perhaps opt for a frozen
Irish Kopi or a Moo, which tastes just like an alcoholic
chocolate milkshake and is playfully served in a bottle
with straw. As with all the cocktails here, this lovely
elixir is multi layered – each sip gives a pure choco-
late blast, then a hint of hazelnut, followed by smooth
notes of vanilla.

Far more than a spa and salon, Mulia Spa provides an
holistic escape into wellbeing, with aromas providing the
key. Pure essential oils extracted from food and plants are
powerful tools in physical and emotional healing and can
be inhaled, bathed in or applied as a massage oil.
Arriving at the spa my senses are immediately alerted
to the intoxicating scent of lemongrass that infuses
the air. this magical herb is a mood elevator and has
a wonderfully fresh and cleansing fragrance that calms
and freshens the mind. A refreshing chilled towel is also
perfumed with lemongrass, and a glass of chilled ginger
coolant provides a zesty ginger kick.
The sultry aroma steam room is fitted with emotional
showers, so when I start to feel hot I press the ‘breeze’
button and a light spray from the ceiling infuses me
with the heady perfume of peppermint. this cool icy
fragrance is fresh and invigorating, and chills both my
mind and my body. When I push a different button I
receive a refreshing and fruity passionfruit infused
shower. Next I am led to a gently heated Hammam
stone table, where I am scrubbed and sloughed with
