Mix cranberries and pineapple in a large bowl. Separately mix the jello using about half the amount of boiling water that the jello package calls for. Mix until dissolved, then pour into the cranberry/pineapple mixture. Stir well and refrigerate overnight.Note: Don’t add the cold water that the jello package calls for. You can add walnuts if desired.

Refrigerator Rolls
1 cup shortening 3/4 cup sugar 2 Tsp. salt 1 cup boiling water 2 eggs, beaten 2 pkgs. dry yeast 1 cup lukewarm water 6 cups unsifted, unbleached all purpose flour
Pour boiling water over sugar, salt and shortening. Blend and cool. Dissolve yeast in lukewarm water, then combine with beaten eggs and add to shortening mixture. Add flour, blending well. Cover and place in refrigerator for at least 4 hours. About 2 hours before using, add enough flour to roll into desired shape.Bake in 400-degree oven for 15-20 minutes. Dough will keep in refrigerator a week to 10 days and may be used as needed.

2 1/4 cups all purpose flour1/4 cup cornstarch6 Tbsp unsweetened cocoa powder1/2 tsp salt
1 cup white sugar1/2 cup butter (1 stick), room temperature1/3 cup milk 1/2 tsp vanilla extract3/4 tsp peppermint extract
In a bowl, whisk together flour, cornstarch, cocoa powder and salt, set aside.
In a large bowl, cream together butter and sugar; whisk in milk and the extracts. Gradually beat in flour mixture; blend together completely.
Shape dough into two logs, about 1 1/2 inches (or about 4 cm) in diameter, wrap in plastic wrap and freeze for a couple of hours, until dough is very firm.
Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
Slice dough into rounds not more than 1/4 inch thick (for a nice crispy cookie); place on prepared baking sheet about an inch or so apart, cookies will not spread very much. Bake for 13 to 15 minutes, until cookies are firm at the edges. Place on wire rack and cool cookies completely. Dip in chocolate.
Dark Chocolate Coating
10 oz dark or semisweet chocolate1/2 cup butter, room temperature
In saucepan over medium low heat, combine chocolate and butter. Melt until chocolate is smooth, the consistency somewhere between chocolate syrup and fudge for a thin coating.
Dip each cookie in melted chocolate, turn with a fork to coat; transfer to parchment paper or wax paper to set up for at least 30 minutes, or until chocolate is cool and firm. Reheat chocolate as needed to keep it smooth and easy to dip into.
Makes about 42 to 48 cookies.
